Okra (Lady'sfinger) Fried Rice

Okra, the extra ordinary vegetable, sticky vegetable usually prepared as side dishes... i tried it them as Indian style of Fried rice, can be lunch box menu r else a main dish with a choice of any side dishes..instead of preparing them as gravies r as side dishes, this recipes will be very easy n not need of preparing anyother side dish to goes along with..


10nos Lady'sfingers
2cups Basmati rice(cooked)
1no onion
2nos Greenchilly (slit opened)
10nos Cashew nut pieces
1tsp Garam masala powder
1/2tsp cumin seed powder
1tsp Ginger grated
5 nos Garlic pods( chopped)
1/2tsp pepper powder
1/2tsp Mustard seeds
1/2tsp Urad dal
2nos Dry Red chillies
5nos Curry leaves
3tsp oil
Salt

Cut the okras into circular small pieces, heat 2 tsp of oil in a kadai n fry the okra pieces with enough salt until they get well cooked.. keep aside...

Heat enough oil in a large pan r Wok..add the mustard n urad dal n let them splutters..add the dry red chillies n cashew nut pieces too n fry everything together...chop finely the onions n add them too...n stir them continously until they turns transculent, add the slit opened green chillies, grated ginger n finely chopped garlic pieces to the transculent onions...n cook them with all spice powders( garam masala powder, pepper powder, cumin seed powder), close the pan with a lid n cook them in simmer...once they get cooked well add the curry leaves n already cooked okra pieces to the masalas..let them cook again for few minutes..check for salt n for spices, can adjust ur spice level at this stage.

Add the cooked Basmati rice r left over rice to the veggies n toss them gently until they get well mixed..put off the stove..Serve them hot...
Simple n tasty dish can be served with any choice of side dish r else simply with fried papads...
