Egg n Vegetable Bhurjee/Muttai Kaaikari Poriyal

Very easy to prepare this dish..usually egg bhurjees r prepared simply with eggs n milk..here i tried it out them with hand full of grated vegetables to make the egg bhurjee more healthy and also colourful to eyes, this bhurjees goes well with chappathis, dosais, rice dishes....simple recipes even bachelors can cook these sorts of side dish...

2nos Eggs
2tbsp Milk
2tbsp Carrot grated
2tbsp Zucchini grated
2tbsp Cabbage grated
1no Onion chopped
1no Green chilly chopped
1tsp Ginger grated
2tsp Coriander leaves
1/4tsp Turmeric powder

Heat oil in a pan, add the chopped onions n chopped green chilly pieces n stir them continously until onion turns transculent, add the grated vegetables to the onion n cook for a while..meanwhile beat the eggs, milk, turmeric powder with enough salt..

Once the veggies r well cooked add the beaten egg mixture n stir them well... stir them until eggs get cooked well..add the chopped coriander leaves n put off the stove..

Serve them as side dish..
