Eggless Quick Oatmeal Cookies

Easy oatmeal cookies will be ready within 15-20 minutes and really quite simple to prepare and a prefect breakfast for a lazy sunday morning..I used quick cooking oats for this cookies, which turns out this cookies prefect and delicious...U doesnt need for cup measurement to make out this simple and quick oatmeal cookies, wat all u need is a tablespoon and the measurements for this cookies is really quite simple to remember..As usual this cookies also goes for all purpose flour, sugar, butter, salt and quick cooking oats thats it, u doesnt need baking soda, eggs, pureed fruits, water or baking powder to make out this scrumptious cookies, i used butter in this recipe if u want to prepare them as vegan version u can very well go for any vegetable oil or canola oil instead of butter..Very easy cookies, kids will love this..my lil ones had this cookies for their snacks, breakfast and as dessert after lunch, we just love it, i got 12 beautiful cookies with this quantity of ingredients and i have prepared again already twice this cookies at home..

3tbsp Sugar
3tbsp Butter(room temperature)
2tbsp All purpose flour
2/3cup Quick Cooking oats
pinch Salt

Preheat the oven to 350F..In a bowl, add the butter and sugar..mix them well with ur fingers until they turns slightly creamy, add the all purpose flour, oats and salt, turns everything as dough..dont add water at all.

Line a baking sheet over a baking tray, take a small ball from the dough and flatten them slightly in ur palms, place this cookie dough over the baking sheet, leave some space between each cookies.

Bake them for 15-20minutes (while baking, turn the tray after 10minutes, this helps the cookies to bake evenly)..

Put off the oven, let the cookies get cooled..Arrange them in air tightened box and enjoy!!

Hello Priya,

I followed your recipe but couldn't achieve the dough consistency. I had to add 1.5 teaspoon veg. oil and 1 teaspoon of milk to get into dough consistency. Anyways I have baked them and yet to test the final product. Thanks!

I've never ever thought of baking a cookie with just oats, minus the flour. These go straight to my to-try list.

Priya, if i replace butter with Veg. oil, will this cookie come out with the same taste and texture. If yes, let me know the replacement quantity for this cookie taste well.

Priya Suresh said... Reply To This Comment

U can definitely replace the butter with veg.oil, i usually use canola oil..if u dont have canola oil, do try with sunflower oil, hope this helps..

Made as directed + 1TBSP cocoa powder for my chocolate fix. Tastes Fabulous but dry crumbly "dough" makes them a pain to form. Might add a touch of oil to moisten it up next time?

really yum recipe! By the way, in the ingredients: 2/3rd cup oats =a teacup or a regular coffee cup?

Priya Suresh said... Reply To This Comment

Anonymous, its 2/3 of usual measuring cup,if you dont have measuring cup, then you use 3-4tablespoon of oats.

I have to say that these are the best cookies I have ever baked! I also had a difficult time achieving the dough consistency so I added an overripe banana, and wow! Super yummy. My kids and husband gobbled them up! Thanks so much, Lisa

Hey Priya, thanks for the recipe. This is the simplest healthy cookie recipe I've seen. In fact, as I type the comment, my cookies are in the oven and it took my hardly 10 minutes to prep.

The modifications I did are, replaced butter with Sunflower oil, replaced 2tbsp of Oats with dessicated coconut, added a handful of raisins. And like many others mentioned, the dough was very crumbly, hence added half a tbsp of Milk. And a pinch of soda (I have no idea why I added soda)

I'll let u know how it turns out though the dough tasted Yumm!

Unknown said... Reply To This Comment

Okay, they're done and taste quite good. Reminds me of Coconut biscuits we bought from Iyengar bakery. However, I shouldn't have used Sunflower oil. I can smell and it also leaves an after taste. I have used Olive oil in baking before, probably should have used that or even better, Butter!

Thanks!

Thanks Priya, Being a man who has never ever baked anything, it was very daring experience for me. The cookies came out awesome. I added cinnamon powder and almonds. I have been buying oatmeal cookie from department store here in Montreal and use them with my bed tea. They never tastes as good. So Priya ever morning from here on I will be remembering you. Watch for a bite on your tongue.... Best of luck
