Pumpkin Sprouted Lentils Soup

Pumpkins are a natural source of beneficial constituents such as carbohydrates, amino acids and unsaturated fatty acids. They contain most of the B vitamins, along with C, D, E, and K. They also have the minerals calcium, potassium, niacin, and phosphorous. Pumpkin seeds have mainly been used to treat prostate and bladder problems, but they have also been known to help with depression and learning disabilities.They are extremely popular protein choices, specifically for vegetarians and healthy eaters due to their high protein and fiber content and due to the fact that they are low in fat.Lentils are quick and easy to prepare due to their short cooking time and can be added to a variety of soups.One hundred grams of raw lentils contains around 350 calories, 60 grams of carbohydrates (31 grams of which is dietary fiber), 26 grams of protein and only 1 gram of fat, if they r sprouted needless to say how healthy they r!!!


2cups Pumpkin pieces
1cup Sprouted lentils
1/2cup Potatoes pieces
1no Onion chopped
2nos Vegetable stock cubes
1/2tsp Pepper powder
1/2tsp Dry Basil leaves
Salt
Oil


Heat oil in a pressure cooker, add the chopped onion to the hot oil, stir them for few minuted until they turn transculent, add the pumpkin pieces, sprouted lentils, potato pieces, vegetable stock cubes n cook them together for few minutes, add 2cups of water r as per ur need, add the salt n dry basil leaves n pepper powder...close the lid n pressure cook until 3 hisses...

Once the pressure get released, grind them with a hand blender r food processor..Serve hot this protein packed soup with toasted bread slices...

Lovely brown color, I would've thought that this soup would be more yellowish... It has enough stuff packed in to make it a complete meal!
