Banana Almond Vegan Cookies

Nowadays am baking as vegan version, i love to prepare them as though...really after starting my blog, i came to know more about the vegan bakings..before i always used to run after the eggs, now am using silken tofu, flax seed meal to replace the eggs, also using oil , vegetable shortenings instead of butter...At home none were able to find out the difference between the vegan n bakes with eggs..they were really surprised when i told them they r prepared without eggs..am happy that my cookies, cakes n muffins r turning out really delicious n awesome nowadays as vegan..here comes my another version of cookies with flax seed meal..


2cups All purpose flour
3/4cup Sugar
1tbsp Packed Brown sugar
4tbsp Oil
1tbsp Flax seed meal
1no Ripe Banana
20nos Almond pieces
4tbsp Vegetable Shortenings
1tsp Baking soda

Mix flax seed meal with 3tbsp of luke warm water n make them as thick paste...take a large bowl, add the flour, sugar, brown sugar,almond pieces, vegetable shortening , baking soda , thick flax seed paste n oil, mix everything well with ur fingers, blend the banana as fine paste..add the grounded paste to the flour n mix everything well, no need of water, turn them as dough, dont knead them for a long..


Preheat the oven at 300F for 5 minutes.. take a parchement sheet, arrange over a baking tray..grease slightly ur palms, take a small ball from the dough n flatten them..arrange them in the parchement paper, r else use spoons to flatten them as cookies over the parchement paper, leave some space between the cookies..bake them for 20-25 minutes in the middle rack..

Delicious Vegan Banana Almond Cookies r ready!!! store them in an air tightened container, will very good for a week...serve them with hot chocolate r coffee..

Love badam cookies and you have hit jackpot with making them vegan..;-).I too don't like adding eggs to the cookie dough(though I have no problem in adding them to cakes and such),but havent tried using egg substitutes..;-)

I tried this recipe because my son has a friend who is allergic to eggs. I have never cooked vegan and was amazed at how good these cookies are! Thank you for the recipe.
