Masala Kuzhi Paniyaram

If u heard Kuzhi paniyaram, the cuisine thats comes immediately to our mind is Chettinad..this is quite a tiffin item in all Chettiyar's Family... this kuzhi paniyaram can be both salty n sweet...kids will like the sweet version, as they ressembles like mini idlies n prefect for breakfast..kuzhi paniyarams r always my fav, but i never prepared them at home coz i didnt bought earlier the kuzhipaniyaram pan...recently i got this pan through my mom n immediately i prepared this delectable dish also the most famous chettinad tiffin...here is the recipe for salty version, coconut chutney goes awesome as side dish for this paniyaram...


For Paniyaram Batter:
1cup Idli rice
1cup Raw rice
1/4cup Urad dal
1tbsp Fenugreek seeds

For Masala:
1no Onion (chopped)
1no Green chillies( chopped)
1/2no Tomato (chopped)
2tbsp Grated coconut
1/4tsp Turmeric powder
4nos Curry leaves (chopped)
1/2tsp Mustard seeds + Urad dal
2nos Dry red chillies
1/4tsp Asafoetida powder

Soak rice n urad dal with fenugreek seed separately for 4 hours, grind them finely with enough salt..let them stand for fermentation for overnite..

Heat the oil in a kadai..add the mustard seeds ,urad dal, dry red chillies, asafoetida powder n curry leaves n let them splutters..add the chopped onion, chopped tomatoes, grated coconut, turmeric powder n curry leaves n stir them for a while,add this to kuzhipaniyaram's batter..mix everything well..

Heat the kuzhi paniyaram pan in medium heat, pour few drops of oil n pour a ladle of the batter, put the flame in simmer n cook slowly, turn on both sides until they get well cooked...dont cook in high flame...

Sounds and looks delicious. I make plain ones, this masala one is wonderful. Next RCI is Veg. Chettinad cuisine, this would be perfect. Mytheyree hasn't announced it yet, wait for it! :))
