Spicy Baked Chicken

Spicy Baked Chicken..a very simple dish, can be served with any rice dishes r else with a simple fresh salad..very easy to do..just to marinate n bake the chicken in oven nothing to do more than that..they will ressembles like Tandoori Chicken but not dry as they r..the chicken meat will be juicy n really very tender blended with spices..This baked chicken is one of our favourite..


1 no Whole Chicken
1/2 no Onion chopped
1/2 no Tomato chopped
3 no Green chilli
1 tsp Ginger(grated)
4 nos Garlic pods
1/2 tsp Nutmeg powder
1/2 tsp Pepper powder
1 tsp Cumin powder
2 tsp Olive oil
1 tsp Paprika powder
Salt as per taste
1 pinch Turmeric powder

Wash the chicken with turmeric powder n cut them horizontally..can remove the skin of the chicken, but i prefer with skin..cut onion into small pieces as well as tomato.

Grind onion pieces, tomato pieces,grated ginger,garlic pieces,green chillies,nutmeg powder,cumin powder,pepper powder,paprika powder n olive oil together slightly coarse. paprika will give a superb colour to the chicken also mild spiciness Dont add water to grind..

Marinate the chicken in this ground paste..keep them atleast for 6 to 8 hours..i did overnite n kept in refrigerator..


Preheat the oven to 300°F..place the marinated chicken in a tray covered with aluminum foil in the middle rack of the oven..bake the chicken for atleast 2 hours..

Every half an hour turn out the chicken to bake evenly..for the last 20 minutes remove the aluminium foil n let the chicken bake uncovered..so that they may get a nice brown crispy skin..


Spicy baked chicken is ready to serve...can omit the crispy skin..it will be delicious side for any rice dish, as well as with a salad..Can remove the skin before marination...slot the chicken pieces so that the spices may marinate well with them..

Question for you: Normally chicken takes 25-30 mins to cook in oven? Is there a reason why you bake for 2 hours at lower temperature?(300F)

Hi Jayaprathap..

Regarding ur question, slow cooking will turn out the chicken more juicy and bake them prefectly, as i used whole chicken, its goes prefectly for two hours if u bake them slowly..hope this helps..

1. Can use just chicken legs instead of whole chicken? If so, I assume I have to reduce the time(to say 1 hr )

U r welcome...Yep as u told, yeah u can go for 45_to one hour, depending upon the kg of chicken legs u r using for, if u using more than a kg, i'll go for more than an hour for the sure..Hope i cleared ur doubt..
