Microwave Mango Lemon Rice

Tangy rice are always my favourite, if u love mangoes in ur rice,this rice is for u guys...I simply prepared this rice using grated mangoes and freshly squeezed lemon juice and cooked everything through microwave for making this quick and easy rice for our sterday's lunch as i was bit busy with some stuffs, this rice goes for easy and simple preparation and gets ready really quickly,yeah not more than 30minutes in microwave oven,anyhow cooking time in microwave oven depends upon ur microwave oven power..This tangy rice goes for simple tempering and stay long like the usual lemon rice..Serve this rice with spicy potato fries or spicy prawn masala for our lunch and none will say no to this delicious rice..Needless to say that this wonderful looking rice suits prefect as a lunch box menu which can be carried for a picnic or a long journey...

Mango Lemon Rice

1cup Basmati rice
2cups Water
1no Mango (medium size & grated)
1/4tsp Turmeric powder
1tbsp Lemon juice
1tsp Mustard seeds+urad dal
1/2tsp Ginger(grated)
2nos Green Chillies (slit opened)
Few peanuts
Few curry leaves
2nos Dry red chillies
1/4tsp Asafoetida powder
Salt
Oil

Wash and soak basmati rice in two cups of water for 10minutes,cook the rice for 15minutes in microwave oven in high power until they get well cooked..keep aside and let them get cool..

Take enough oil in a microwave oven bowl,heat for a minute in high, now add the mustard seeds, urad dal,curry leaves,grated ginger,slit opened green chillies,peanuts,asafoetida powder to the hot oil and cook for 4-5minutes until they turn brown, now add the grated mango,salt and turmeric powder,stir well,cook in high power for 5 minutes..

Add the rice to the tempered mango-spice mixture,toss gently until everything get well mixed.Cook in microwave oven for a minute or two and take off from the oven..finally add the lemon juice,give a quick stir and keep aside.. Serve with spicy side dishes...

The rice is perfectly cooked..Lpve the hint of mango in it..Btw..just saw ur coconut milk pannacotta with kiwi..Looks stunning...Can we substitue kiwi with any other seasonal fruit or may be jelly?

I am rereading this post...at times I fail to get this kind of puffed rice while cooking in microwave. This is truly looking good and would have tasted delicious I bet!
