Zucchini N Potato Vadai

Zucchini squash is the favored jewel of the summer squashes. Summer squashes, as well as winter squashes, are native to the America and belong to the family of cucurbita.Zucchinis contain useful amounts of folate , potassium and vitamin A . Zucchinis are also an excellent source of vitamin C. Dark green zucchini also have some beta carotene and all types provide small quantities of minerals. Skin colours range from almost black, dark green, pale green, pale green with grey, and yellow. The darker the squash, the more the nutrients.With their high water content, zucchini squashes are very low in calories. There are only 13 calories in a half-cup of raw zucchini, with a slight increase to 18 calories in the same quantity cooked.I tried out this vadai with those low caloric vegetable,for my surprise it was too tasty n delicious....as Zucchini is a versatile vegetable, this vadai turns a huge hit at home..This crispy vadais goes to Cooking for Kids-Potato guest hosted by Deepa of Simple Home Cooking, event started by Sharmi...



1 cup Zucchini grated
1/4cup Potatoes grated
1/2cup Gram flour
1/4cup Rice flour
1/4cup Corn flour
1/4tsp Garam masala powder
1 tsp Red chilli powder
1 tsp Ginger garlic paste
1 no Onion medium size chopped finely
1/4tsp Baking soda
2tsp Coriander leaves (chopped)
Salt
Oil for deep fry

Mix grated Zucchini n grated potatoes together with salt n keep aside, after a while they will leave water, drain the water n keep aside, u may use them while preparing the batter...add all the ingredients except the oil n make them as batter, if water is needed add the zucchini water to the batter...Heat oil in a pan, once the oil is hot, make a thin vadais n fry them until they turns brownish...dont make them thick vadais, else they wont get well cooked inside if the vadais r thick...fry them in batches..dont overcrowd...

Serve hot...Crispy, tasty Zucchini Vadai is ready!!!!
