Loaded with good fat, fibres and potassium, with little sodium and completely free from cholestrol, avocados will be a good part for diet..I recently saw this chilled avocado soup in a Mexian cookery book, got hooked immediately..Once at home, i tried it out with ripened avocados..for my surprise we loved the chilled soup. 2 ripe medium avocados, halved
3/4 cup Soyamilk
2tbsp Silken tofu
1 1/2 tbsp chopped jalapeno chilli
1/2tsp chilli powder
1/2 cup Vegetable stock water
Scoop out the avocado flesh, add the scooped flesh in a blender with soyamilk, silken tofu, jalapeno chilli, chillipowder, blend everything with vegetable stock water until the soup turns creamy n soft, add enough salt n pepper powder..Chill the soup until cold...
Serve in bowls!!!
