Stir Fried Chicken Noodles

Noodles with anything as anything is one of my weakness, whenever we go to Chinese restaurants immediately  i used to order stir fried noodles either with chicken or prawns...Its like fried rice, i can makes this simple stir fried noodles when i have nothing planned, just throw some ingredients together and its comes out so good everytime i prepare and i can eat the whole pan myself....This dish usually prepared with chicken, beef or sometimes with prawns...i like to use egg noodles becoz of their chewier texture and have a pleasant yellow colour..U can use any sort of veggies you feel like and any sort of meats to enjoy this noodles...My veggies choice always goes for carrots, cabbages, bamboo shoots, mushrooms,green and red bellpepper and bean sprouts, while this time i used the wood ear mushrooms which is available dried in many supermarkets, this mushroom looks black on one side and on the other with velvet skin..this mushroom need to be soaked in warm or hot water for few minutes and this mushrooms is ready to cook with any veggies or meats and this mushroom tastes fantastic when served with any dishes...Even after they are soaked and cooked these mushrooms stay crunchy...Am sending this noodles to RV& Sudeshna's FF7SOL-Tiffin Box..


1packet  Egg Noodles (fresh)
2nos Carrots (julienned)
1cup Bean sprouts
10nos Wood ear mushrooms
1/2cup Snow peas
1no Green bell peppers (julienned)
1tbsp Ginger (crushed)
5nos Garlic cloves (minced)
4nos Green spring onions
2tbsp Oyster sauce
1tbsp Soya sauce
1/2tsp Sugar
Sesame Oil

To Marinate:
1/2kg Chicken breast (cut into strips)
2tbsp Soya sauce
1tbsp Rice vinegar
1/2tsp Sugar
1tbsp Sesame oil
1tbsp Corn starch
1/4tsp White pepper powder

Mix the chicken strips with all the ingredients given in the list 'To Marinate' until all the pieces get well coated, set aside for 15minutes..

Bring enough water to boil and cook the noodles according to the package instructions, drain and rinse the noodles with cold water and keep aside..soak the wood ear mushrooms in hot water for few minutes, drain the water and slice as thin strips..

Heat the sesame oil in a high heat, fry the crushed ginger and minced garlic until they turns golden brown, add the marinated chicken to the veggies and cook for few minutes,add immediately the veggies one by one, dont over cook..keep the veggies tender,  now add the stripped mushrooms along with the oyster sauce, soya sauce,sugar..once the meat gets well cooked add the cooked noodles and toss gently until the veggies and chicken strips get well mixed...add the green spring onions and put off the stove..

Enjoy warm...

I also like noodles. My mother prepares maggi noodles :)

Next time when I will go to a chineese restaurant then I will try stir fried chicken noodles or prawns noodles as suggested by you.

Your version of noodles appears delicious and even it is nicely served.

am also a noodle maniac the problem is hubby preferes fried rice. I mostly make it for myself with whatever veggies I like to add and some fried egg strips. lovely noodle dish Priya.
