No Maida, No Sugar, No Butter Christmas Fruit Cake

You may wonder how can one bake a rich looking Christmas fruit cake without Maida, sugar and butter. Trust me, even i was skeptical before baking this incredible cake. Its quite an interesting Frutis and nuts loaded Christmas friendly cake to carry with you if you are visiting friends or family. I have prepared fruits and nuts soaked in jaggery syrup before 20 days for baking this Xmassy cake. Yes you heard it rite, this cake is completely sweetened with jaggery. Varieties of dry fruits and nuts are soaked in a thick jaggery syrup is used to flavor up this fruits loaded rich looking cake. Actually my initial idea to make this rich fruit cake was with usual ingredients as much as every year. When i opened the fridge, i noticed that there was no butter, obviously i opted for Olive oil, then comes to idea to make this fruit cake without all purpose flour/maida. Finally i baked this cake with Spelt flour, jaggery syrup and olive oil.

I must confess that i enjoy baking with spelt flour in recent days and this flour works awesome for baking breads to cakes. Hence nowadays am replacing the all purpose flour with spelt flour and this works prefectly awesome. Coming to this fruit cake, you can bake and pack this incredible cake to carry for a Christmas dinner party or please anyone's tastebuds as this cake is loaded with some incredible ingredients in it. No refined sugar is needed now, if you have jaggery or palm jaggery,make use of them to bake this sort of ultimate cakes for festive seasons. Am running a baking event aka Bake-a-thon on every mondays, wednesdays and fridays during a whole month of december.

Whole Wheat, Jaggery Fruit Cake, Christmas Fruit Cake

2cups Spelt flour
1cup Raisins
1/4cup Cranberries
2tbsp Orange Zest
1/2cup Tutti Frutti
1/2cup Cashew nuts (chopped)
1/2cuo Almonds (chopped)
15nos Whole cherries
1cup Olive oil
1cup Jaggery syrup
3nos Eggs
1tsp Vanilla extract
1tbsp Baking powder
1/2tsp Cinnamon powder
1/4tsp Clove powder
1/4tsp Nutmeg powder

If you are planning your cake on Wednesday, prepare the fruit mixture on monday. However i soaked my fruits 20 days earlier.

Take the raisins, tutti frutti,chopped cashewnuts, cranberries,chopped almonds, cherries in a bowl, add the orange juice, orange zest,jaggery syrup, mix everything in a bowl and arrange in fridge for 20 days.

Sieve the spelt flour with cinnamon powder,clove powder,nutmeg powder with baking powder

Preheat the oven to 325F.

Grease well the baking pan with oil and sprinkle some flour to coat the pan well, keep aside.

Spelt flour Fruit Christmas Cake, No Butter XMas Fruit Cake

Beat together the olive oil and sugar in a bowl until they turns creamy, add one egg  at a time and blend well.

Add the vanilla extract and beat well, gradually add the flour little by little and blend well.

Finally add the fruit and nut mixture to the mixing bowl and gently mix it with a spoon.

Pour this cake batter to the greased baking pan and bake for 45-50 minutes or a skewer inserted comes out clean.

Remove the cake from the oven and allow it to cool completely.

Slice and enjoy.

@Vivian D'souzaI used jaggery is a kind of brown sugar which is prepared by evaporation of the sap of palm trees. Obviously no sugar cake is this. Hope this helps.
