Garlic Barley Sev/Poondu Barley Sev

Sev is an another Indian popular savoury snack which is widely prepared during festivals in India. These fried noodles are made easily at home with gram flour, rice flour which is flavored with couple of spices like crushed peppers, chilly powder,ajwain seeds etc. I have been making some savoury dishes with different grains and ingredients since ever i planned for  preparing my savoury list for Diwali. You might have noticed that few of my recent savouries are my own creations and am proud to post and share with my readers. After oats, barley is one among my favourite wholegrains and i have been using this grains often in my cooking. I have already dished out couple of dishes with this humble grain. And am adding one more savoury snacks with this incredible grain.

Garlic Barley Sev

Coming to my today's post, its quite an aromatic and very flavourful, absolutely addictive sev i have dished out few days back. Actually i was quite skeptical before frying out this crispy beauties. Kids enjoyed thoroughly munching these crispy Indian noodles for their snacks while we enjoying having these garlic flavored sev with our cup of tea. To make this sev, more flavourful i couldnt stop flavoring this crispy beauties with some ajwain water. Barley Garlic Sev

1cup Gramflour
1/4cup Rice flour
5 Garlic cloves
1cup Barley flour
1tbsp Ajwain seeds/Omam
1/4tsp Asafoetida powder
Salt
Oil for deepfrying

Soak the ajwain seeds in a cup of warm water, grind with garlic cloves as fine paste and strain the garlic-ajwain water.

Take the barley flour,gramflour, rice flour, asafoetida powder,salt in a large bowl, gradually add the ajwain-garlic water and knead as a soft and stiff dough..

Heat the oil for deepfrying.

Meanwhile take the murukku press with the sev nozzle, put a ball of this dough and press directly to the hot oil.

Fry the sev on both sides until they gets well cooked.

Drain the excess of oil with a paper towel and arrange in a an air tightened box.

Enjoy with your favourite drink for snacks.

Priya, I wish I could have this somehow now! After diwali the cravings for all the savouries actually begin. Kudos for using Barley flour and I can imagine how flavourful this would be with the garlic addition. Addictive!
