Nonnettes à la Fraise /French Strawberry Jam Filled Gingerbread Cake

Nonnettes are small French gingerbread cake which is quite popular in Dijon, a city in Eastern France.Usually filled with orange marmalade, this nonnettes de Dijon are christmas special baked treats. However many variations do exists. Though the traditional Nonnettes goes for Orange marmalade, many fillings like strawberry jam, mixed fruits jam etc are also used to make a different version of  Nonnettes. Since i dont have orange marmalade and none at home like this citrus preserve, i opted for our all time favourite strawberry jam. Spiced gingerbread cake filled with strawberry jam tastes absolutely fantastic with your favourite drink either for your evening snacks or else to enjoy simply to kick start your hectic day's breakfast.

Nonnettes are usually baked in a specific baking mould however muffin pans works awesome to bake these tiny gingerbread cake aka Nonnettes. Spiced with cinnamon powder, gingerbread spice powder, these tiny cakes smells too good to indulge especially when the climate is too chilled outside. If you love ginger bread like spiced cake then this tiny cakes will definitely makes you super happy. Personally i tasted this French Nonnettes few years back when we had a get together at a French friend's place. After tasting, i pestered my friend to get this recipe from her grandma who makes excellent Nonnettes de Dijon. Though her grandma suggested to bake this gingerbread cake with orange marmalade, i couldnt resist to bake these fantastic tiny cakes with strawberry jam. Nonnettes fourre à la fraise, Strawberry filled Gingerbread Cake

1cup All purpose flour
1 Egg (beaten)
1/2cup Honey
80grms Butter
1/4cup Sugar
2tsp Gingerbread spice powder
1tsp Cinnamon powder
1/2tsp Baking powder
Strawberry jam (as per need)
Confectioner's sugar for the glaze

Sieve the flour with baking powder and keep aside.

Take the butter, honey, sugar, cinnamon powder, ginger bread spice powder in a pan, heat until the butter gets melts and form a syrup, let it cool a bit.

Slowly add this syrup,beaten egg to the flour-baking powder mixture and whisk until the mixture turns as a batter.

Preheat the oven to 350F, grease the muffin pan or line with muffin liners.

French Gingerbread Cake, Nonnettes à la fraise

Pour enough nonnettes batter to the muffin pan, drop half a teaspoon of strawberry jam.

Bake for 20-25minutes. Meanwhile, make a glaze with confectioner's sugar and water.

Once the nonnettes are slightly cool, drizzle the glaze on the top of the nonnettes.

Enjoy the nonnettes with your favourite drink.

Wow honey as the sweetener in the batter, that's something new. I love the icing drizzling off the nonettes, absolutely drool worthy! Orange marmalade would be my choice of filling, I always have a bottle of it in my fridge. Yummy bake!

Drool drool drool....these little nonnettes look so tempting. Gingerbread and jam sound like a heavenly combination. And if I get such a tasty excuse to eat orange marmalade I am so going for it!
