No Bake N Eggless Strawberry Mascarpone Cheese Cake

I never ever tried out cheese cake at home, whenever i feel like having this delicious treats i'll have them in cafeteria which seems quite a better and neat way to taste cheesecake, after a long hesitation i want to try out cheesecakes at home but as eggless and also i dont want bake them in oven..i used mascarpone cheese for making this delicious easy version of cheese cake which hardly need few minutes to prepare,I have seen this no bake cheese cake in a cookery show here, the chef prepared cheesecake by using fruits and agar agar powder, he prepared his cheese cake with cream cheese while i went for mascarpone cheese, which i have fallen in love when i prepared my Eggless Tiramisu , i just loved the mascarpone cheese for the first time..now am completely fallen in love with this delicious creamy italian cheese which suits incredibly for making out this cheese cake...with strawberry puree and agar agar powder, i finished making out quite easily this cheesy cheese cake..

2cups Mascarpone cheese (500gms)
20nos Strawberries
3/4cup Sugar
2tbsp Agar Agar powder/gelatin powder
1/4cup Water
30nos Plain biscuits (for crust)
2tbsp Butter

Grind the plain biscuits as bread crumbs, keep aside...melt the butter in a heavy bottomed pan and add the grounded biscuits to the melted butter(biscuits which i used have enough sugar so i didnt add any sugar)..stir well until the butter get well mixed..press the mixture over a spring form pan..keep the crust in fridge for few minutes until they sets well...

Beat the mascarpone cheese and sugar in a large bowl until they get well mixed, meawhile chop finely the strawberries and grind them as smooth puree..add little by little the strawberry puree to the mascarpone cheese and mix again...now heat the 1/4cup of water and add the agar agar powder, stir until they get dissolved, keep aside until they get slightly cool...pour the agar agar water into the mascarpone and strawberry mixture, mix once again well... pour this cheese mixture over the already prepared biscuits crust and keep in fridge for atleast overnite r for 12 hours..



Serve chilled with fresh strawberries!
