Cauliflower & Green Beans Rice

Whenever i feel lazy to cook i immediately go for one pot meal that too along with veggies, coz personally i feel that making one pot meal with different veggies was quite one of the best and better way to feed my family with veggies, this time i prepared this simple and delicious quick rice with sauteed cauliflower and green beans with already cooked basmati rice..This rice is really very quick, easy and suits prefectly awesome as lunch box menu..This rice along with spicy potato fries tastes simply delicious and we enjoyed it for our today's lunch..Sending to Akila's The Dish Name Starts With C..

Cauliflower & green beans rice

2cups Basmati Rice (cooked)
2cups Cauliflower florets
1cup French green beans (chopped)
1no Onion (big & chopped)
2nos Green chillies (slit opened)
1tsp Lemon juice
1/4tsp Turmeric powder
1/2tsp Cumin seeds
1/2tsp Red chilly powder
Salt
Oil
1tsp Cumin seeds
2nos Bay leaves
Few curry leaves

Heat enough oil, fry the cumin seeds and bay leaves ..Add the chopped onions, slit opened green chillies, sauté until the onions turns transculent, add the cauliflower florets,curry leaves,turmeric powder,salt and green beans, sauté everything until  the veggies get half cooked..Now add the cumin powder,red chilly powder to the veggies, sauté for few minutes..finally add the cooked rice, toss everything gently until the rice and veggies get well mixed..

Enjoy with any spicy side dish or potato fry..

mouth watering!!! i have tried varied versions of this yummy one pot dish by adding soya nuggets or tofu pieces and yes they pack an awesome punch for lunch box menu!!! good one!!
