Eggplant Manchurian/Indo Chinese Style Eggplant Manchurian

Manchurian is an excellent starter or side dish to have with fried rice or with a bowl of cooked rice. I have been dishing out many varieties of manchurian and one of my recent trial is with Eggplants. I followed the same cooking way as much as we do with chicken or else vegetables. Eggplant manchurian makes an excellent starter to start a party with, i have made a dry version if you want a saucy style of manchurian you can still dish this eggplant manchurian as much as gravy style dish. Trust me this Eggplant manchurian is definitely a delicacy which is a must to try at home. And this is just prefect to dish out in less than 30 minutes. Its a restaurant style vegan manchurian which is a must to try. And this dish calls for easily available ingredients which is quite easy to find in your pantry.

Eggplant Manchurian, Indo Chinese Eggplant Manchurian

This eggplant manchurian can be served very much well with any sort of dishes.Yes this dish is definitely a prefect to dish out if you have some get together party at home as well. One of the interesting dish to give a try at home without any hesitation. Even my young one who dislikes eggplant, enjoyed this dish with a bowl of rice. And this Eggplant manchurian is going for this month's  A-Z Recipe Challenge with the Alphabet 'E'. This Facebook challenge group is started with a new concept, yes we are going to cook with two different themes. For this month's challenge, we are cooking a dish name starts with alphabets and next month's theme is going to be Recipe swap, and vice versa.
Vegan Eggplant Manchurian


1no Eggplant  (medium & cut lengthwise)
1/4cup Corn Flour
1/2cup Maida
1 Onion (diced)
2tbsp Ginger (chopped)
6nos Garlic (chopped)
2tbsp Green Chilly (chopped)
2tbsp Soy sauce
3tbsp Tomato sauce
1tbsp Chilly sauce
1/2tsp Sugar
Salt
Oil
Water as needed

Mix corn flour,maida and salt along with some water to make a batter.

Marinate eggplant  pieces in the batter and keep aside for half an hour.

Heat oil for deep frying in a pan. Fry eggplant pieces till turns crispy and brown.

Eggplant Manchurian, Kathirikkai Manchurian

Heat 2tbsp of oil and saute chopped garlic, ginger,green chilly and diced onions one by one until a nice aroma comes from.

Add soy sauce, tomato sauce,sugar,salt and stir well. Check for salt.

Add fried Eggplants pieces to it and cook until the eggplant pieces gets well coated with the sauce.

Serve with rice or as starter.

I love manchurian, but I have never though that we can make manchurian with eggplants. Such an interesting and delicious recipe. Love the blast of Chinese flavors and colors in your recipe and photos.
