Andhra Style Mint Rice/Pudhina Annam

I will always look for simple rice dishes to prepare whenever i feel bored to cook especially for our lunch on week days. And i have bookmarked some easy dishes to dish out quickly on those days. One among my bookmarked recipe is this Pudhina rice from Hari Chandana's Blend with Spices. Am an ardent fan of Andhra style dishes especially for their pickles. Whenever i cross a different and easy breezy dishes from this cuisine, i dont forget to bookmark them. I crossed this dish in Instagram when Hari chandana posted her video recipe. And the simplicity of this dish caught immediately my attention. Obviously i bookmarked it for later. I prepared this dish few days back for our Sunday meal along with a curry leaves spiced powder rice dish. Served along with some spicy chicken thighs, everyone at home enjoyed thoroughly this flavoursome rich rice dish without any fuss.

Andhra Style Pudhina Rice, Mint Rice

With simple cooking process and easily available ingredients, you can dish out this rice dish with an ease. Trust me if you have cooked rice in your fridge, this dish takes hardly very less time to get ready. You can prepare this same rice dish even earlier in the morning to pack in anyone's lunch box as this dish calls for simple ingredients. Flavoured with cumin seeds and coarsely grounded mint paste, this rice dish is a filling and satisfying lunch box friendly dish. Andhra Mint Rice

2cups Cooked rice
1cup Mint leaves
1cup Onion (chopped lengthwise)
2nos Tomatoes (chopped)
3nos Green chillies (slit opened)
Few cashews
1tsp Cumin seeds
1/4tsp Turmeric powder
Oil
Salt

Heat enough oil in a kadai, let crack the cumin seeds, add the cashew nuts and fry until they turns golden brown.

Add the chopped onions and saute until they turns trasnculent, add the chopped tomatoes and cook until they turns mushy.

Add the slit opened green chillies and cook. Meanwhile grind the mint leaves as coarse paste.

Vegan Mint Rice, Pudhina Annam

Now add the turmeric powder, salt to the cooking vegetables.

Add the coarse mint paste and saute everything for a while.

Finally add the cooked rice, toss everything gently until the rice gets well coated with the spices.

Serve hot with any sort of side dishes or simply with raita and papads.

I'm sure the mint must have added a refreshing taste to the rice dish. Being an Andhra dish, I'm surprised that it doesn't sound spicy at all. That's the way I like it less spicy.
