Eggless Checkerboard Cookies

Though am not satisfied with the checkerboard pattern of my today's post, i dont have any other option than posting them. Am in summer vacation, and thought to do so many stuffs for my blog, but life was bit busy. The first day of my vacation started with too much of stress, yes mom went a major operation and i was very much worried about her, fortunately everything went well and she was in hospital till wednesday. When you are stressed or worried,dont ever try to make things you cant manage to do. I did and lesson learned. Few days back when i was so much stressed and worried about my mom, i baked these cookies just to divert my mind. But unfortunately i went wrong with the pattern, though the cookie dough came out super prefect.

However i dont want to bake again, as this cookies are loaded with butter as am keeping myself away from butter and sugar. Everyone at home enjoyed thoroughly and none noticed the pattern, they just want to munch something as i didnt baked anything since a long. Happy that these cookies vanished very much quickly than i imagined. And this cookies are going to this week's blogging marathon as am running with Checkerboard theme as this week's theme.

Buttery Checkerboard Cookies (Eggless)

1cup Butter (softened)
1/2cup Confectioner's sugar
1/2tsp Vanilla extract
2+1/2cups All purpose flour
1tbsp Cocoa powder
Few whole almonds
1/2tsp Baking powder
1/4tsp Salt

Combine the butter,sugar,vanilla extract in a bowl and beat it until they turns soft and fluffy.

Sieve together the flour and baking powder,salt.

Gradually add the flour mixture and turn everything as a soft dough. Divide the dough into two equal balls.

Now add cocoa powder to a dough ball and knead well(if its hard to knead, just springle some milk and knead well)

Wrap it and keep in fridge for 30minutes. Line the baking sheet over a baking tray.

Eggless Checkerboard Sugar Cookies

I have cut each dough into four long sticks, and arranged them so there were two blocks that were Vanilla/Chocolate/Vanilla/Chocolate.

Then i cut half the way to make four smaller blocks of doughs which i simply stacked all together in alternating colors to form a huge block of cookie dough.

Slice it and bake for 15-20minutes.

Let them cool completely and enjoy.

Do you seriously mean to say you don't have a checkerboard cookie on your blog!!!..that's unbelievable priya..lol...anyway good that you finally addressed that issue. I don't find anything wrong in the pattern and it looks beautiful..don't stress too much on these things and hope all is fine in the homefront!

Good to know your mom is out of hospital and hope she is keeping in good health. Though the pattern is not perfect, we can still see the checker pattern.
