Cajun Cornbread

If you love spicy corn bread in your meal, then you should have a look to this Cajun Corn bread. This bread is almost like usual cornbread though hot sauce or jalapenos are added to this Cajun special. This bread makes an excellent meal when served along with many delicious Cajun stews or sauces. Its one of most favourite accompaniment and its quite a common staple on the Cajun dinner table. Obviously many versions of Cajun cornbread do exists if you search for this incredible quick bread. However i picked one of the easiest and loved it to the core. Some cajun corn breads calls for cheese to make this simple corn bread more flavourful and cheesy, however cheese is not a must and you can still make a fabulous Cajun corn bread with simple ingredients available in your pantry.

If you have went through my previous post, you might have noticed that am posting dishes from Cajun cuisine of Louisiana region as am running this week's theme with Regional cuisines either from Indian cuisine or American Cuisine. Though i want to give a try to Cuisine of New York city, this Cajun cuisine pulled me to make some delicious dishes as the dishes from this cuisine have Creole and French touch with spiciness. Obviously my tastebuds couldnt resist to this fabulous cuisine hence i prepared three fantastic dishes from this cuisine for this week's theme.

Cornbread-Cajun Style

Recipe Source: Tabasco
3/4cup Cornmeal
1/2cup All purpose flour
2tbsp Sugar
1tsp Baking powder
1/2tsp Baking soda
1tbsp Tabasco hot sauce
1no Egg (beaten)
1/4tsp Salt
3/4cup Milk
2tbsp Vegetable oil

Preheat the oven to 350F, grease a round baking mould and keep aside.

Take the cornmeal, all purpose flour, sugar, salt, baking powder, baking soda in a bowl.

Whisk the egg, milk, oil, tabasco hot sauce in an another mixing bowl.

Make a well in the center of the dry ingredients and stir in the wet ingredients, whisk until the mixture gets moistened.

Dont overmix, pour this batter to a round shaped greased baking mould.

Bake for 20-25 minutes, let it cool a bit, remove from the mould.

Slice it and serve hot.

I have had corn bread at restaurants but never made it myself. Yours looks exactly like the one they serve there! Going to try this soon :)
