Vegan Banana Cornmeal Cake with Chocolate chips

My baking experiments with palm jaggery syrup is just continuing and every time i bake with them, my bakes comes out extremely fabulous,obviously i opted again this method of using palm jaggery in this banana cornmeal cake instead of white sugar.Banana and palm jaggery syrup compliments very well in cake, and this cornmeal cake or bread watever you would like to call came out simply moist and delicious. As usual i have added some chocolate chips to attract my kids, yes chocolates is our weakness whenever i try something new i'll add definitely some chocolate to attract everyone.Most of my baking trials end up always with chocolates in it.

Coming to this cake, i simply prepared it with fine quality of cornmeal along with wheat flour, also skipped butter. This vegan cake goes for simple preparation, you doesnt need any fancy gadgets to prepare the batter, just a whisker is enough to take care of the preparation. One more beautiful vegan cake am adding into my Vegan Cakes Galore. If you dont have palm jaggery or cornmeal, just replace them simply with jaggery syrup and fine semolina aka fine rava. I used banana puree as egg replacer here, you can also replace it very well with apple sauce too. Vegan Banana Cornmeal Cake with chocolate chips, palm jaggery syrup,Vegan Cornmeal banana cake

1cup Fine yellow cornmeal
1cup Wheat flour
1cup Plam jaggery syrup
3/4cup Oil (any vegetable oil)
1/2cup Banana puree
1tsp Vanilla extract
2tsps Baking powder
1/2tsp Baking soda
1/4tsp Salt
1/4cup Chocolate chips

Preheat the oven to 350F, grease a loaf pan generously, keep aside.

Mix the banana puree, palm jaggery syrup, vanilla,oil in a bowl, keep aside.

Sieve the flour, cornmeal with baking powder and baking soda,salt.

Add the wet ingredients to the dry ingredients slowly, dont overmix.

Fold in the chocolate chips.

Pour the cake batter to the already prepared loaf mould and bake for 30-35minutes or a skewer inserted comes out clean.

Cool completely on a wire rack.

Enjoy with coffee or tea.

Chocolate chips do make everything taste better. I would never have guessed you used cornmeal in this cake. It looks really good.

Effectivement, un cake qui semble bien humide et qui doit être délicieux. Je n'ai encore jamais cuisiné avec du sirop de palme.
Il va falloir tenter l'expérience.
