Carrot Masala Rice

Carrot Masala Rice, a simple rice dish prepared with sauteed grated carrots,onion and tomatoes with a specially prepared spice powder mixed with cooked rice..its such a delicious dish, can be very well served hot for lunch, can carry them for picnic and y not as lunch box menu...kids will surely love this masala rice and its tastes delicious simply with potato chips, papads and also with any non vegetarian side dishes...i prepared a special spice powder to make out this masala rice and i named it as carrot rice masala powder, this spice powder just need few ingredients and they are simply roasted with few drops of oil and grounded as fine powder..personally i love the addition of this spice powder to this carrot rice, which gives a fantastic flavour to this rice...This delicious spicy carrot rice was one of my favourite also of my family, we just love anything been prepared simply with any vegetables, carrots dishes have a special place in our weekly menu of course our favourite is always carrot salad..this masala rice goes to Sanghi's FIL-Carrots...




2cups Grated carrots
2cups Cooked Rice
1cup Onions (chopped)
1/4cup Tomatoes (chopped)
2+1/2tbsp Carrot Rice Masala powder
1tsp Mustard seeds
5nos Curry leaves
1tbsp Coriander leaves
15nos Peanuts
3tsp Oil
Salt

 Masala Powder:
2tsp Uraddal
2tsp Channa dal
2tsp Coriander seeds
1/2tsp Cumin seeds
1/2tsp Peppercorns
1/2tsp Fennel seeds
1/2inch Cinnamom stick
2nos Cloves
3nos Dry red chillies
Few drops of oil

Heat the oil in a pan and add all the spices, fry them in medium heat and stir it frequently, until the dals turns golden brown, cool completely..Ground the roasted spices as fine powder, store this powder in an air tight jar and use this spice powder whenever u need for..

Carrot Masala Rice:
Heat a large sauce pan, add enough oil and add the mustard seeds, curry leaves and raw peanuts, stir until the peanuts turns golden brown, add immediately the chopped onion pieces and stir until its turns transculent, now add the tomato pieces and cook until they turn mushy..finally add the grated carrots and saute until everything are well mixed, springle the carrot rice masala powder, salt and cook it until they carrot pieces get slightly cooked..

Add the cooked rice and toss gently and add the chopped coriander rice..put off the stove..serve hot with any raitha, papads or chips!

carrot Masala rice looks delicious.
I have to try it with a bunch of carrots sitting in the fridge for a month. Good recipe.
