I love to cook with gluten free ingredients. And my today's post is completely vegan as well. Yes no dairy products is used and tapioca pearls are produced from a starch which is from cassava/manioc roots, hence its gluten free. Nowadays, i can see many of friends are allergic to gluten and many of their dishes are prepared with gluten free ingredients. Obviously they have to check the ingredients list of a product twice before buying them. Thank god, none at home have this gluten allergy, eventhough its quite interesting to dish out with gluten free ingredients.

Vegan Radish Greens Channadal Kootu
Radish greens are the green leaves on stalks on top of the root vegetable aka the radish . Radish is an extremely popular vegetable in the world. Different parts of the plant, including the seeds, sprouts, and leaves, can be used both in culinary applications and traditional medical treatments. In some parts of the world, radishes are actually cultivated specifically for their leaves, as they continue to grow while the root develops. These radish greens have a peppery, earthen taste, making them an interesting addition to any salad and they can also be added to sandwiches or even boiled down and salted for a great side dish. These leaves contain much higher concentrations of certain nutrients than the vegetable itself, so if you are one of the countless people who simply throw away radish greens, change your ways and add this nutritious new food to your diet.

Kashmiri Saag Haddar Yakhni /Kashmiri Style Mushroom in Spinach -Yogurt Sauce
Kashmiri cuisine is still quite a unknown cuisine for me. Actually i rarely cooked from this cuisine, however blogsphere pulled me to explore this cuisine. I have already two - three dishes from this cuisine. However for this month's Shh Cooking Secretly, a monthly event started by me, which is now hosted by Mayuri Patel we are cooking from Kashmiri Cuisine. Every month we are exploring different regional cuisine of India. After Himachali cuisine, this month's event goes for Kashmiri cuisine. You might know about the concept of this event, actually every month the members of this Facebook group get paired with an another member. Both discuss together secretly to get their two secret ingredients and cook with. Obviously we cook with those two ingredients and share our picture in the group, so that the other members pariticpate to guess the ingredients. Its quite an interesting play and this concept works awesome. We love to find out the ingredients though sometimes its quite a hard task.
