Rundstykker/Danish Breakfast Buns/Eggless Danish Bread Rolls

I cant imagine a breakfast without breads, that too freshly baked homemade breads are seriously a blessing when you prepare your brunch or breakfast especially on weekends. When i picked International breakfasts as theme for this week's Mega marathon, i immediately looked for a popular bread from European countries. And this Danish breakfast buns tempted me a lot to give a try as i love to bake breads at home. I grabbed this Rundstykker from My Danish Kitchen, seriously i love this blog as this space is full of Ultimate Danish dishes. I have already tried couple of Danish dishes from the space, hence i couldnt stop myself to bake this cuties to go under the theme am running for this whole week.

Havrebrød/Eggless Danish Oat Loaf

Bread baking is one of my favourite passtime especially when i dont have nothing to do apart from mobbing and cleaning. Havent baked bread since a long as i had a small health issue, now am doing much better. Obviously i gathered everything to bake some bread at home during the weekend. Hubby and kids were asking me to bake something as a loaf for their weekend breakfast. And i picked this Havrebrod to bake for our weekend breakfast. You might have noticed that i love baking and cooking with oats, and this Danish oat loaf tempted me to bake. Very easy to bake, you doesnt need anything special to bake out this bread.

Eggless Danish Pastry Pinwheels/Eggless Jam Pinwheels

Danish pastry, these pastries are prepared with flour, egg, sugar, butter and salt with milk, this pastry sheet need to be prepared /folded as much as we do for puff pastry sheets. Its better to start a day before if you are planning to make these dangerously addictive pastries at home. Since its a pastry, obviously butter is very much needed for making this elegant bakes. Yes butter is the most wanted ingredient for making this pastry if you feel that there is too much of butter, just forget this pastry. But however seriously its worth to give a try to these beauties. This eggless Danish pastry is our this month's Baking Eggless,a monthly event owned by Gayathri, the original recipe goes for an egg, i simply replaced the egg with yogurt.May be the lamination of the dough needs bit patience else its quite an easy pastry sheet to make at home.

Drommekage Fra Brovst/Eggless Danish Dream Cake

Our this month's Baking Eggless Challenge is this super soft and incredible cake from Brovst region of Denmark.This month's bake was suggested by Meena of Chettinad Fiesta and we truly enjoyed this cake,a big thanks to both Gayathri and Meena for challenging us with this beautiful,spongy cake. Baking eggless is a group of enthusiastic home bakers and every month we will be baking a bake without eggs, as the main motto of this baking group is to convert a usual bake or cake as eggless with egg subsitutes.As i told earlier, i love baking without eggs and much better as vegan, obviously nowadays i dont run behind the eggs. Even i dont worry if i ran out of the eggs as i learned many egg subsitutes to replace the eggs and i never miss eggs in my bakes.

Coming to this eggless version of Danish dream cake, this cake went for a vanilla flavoured sponge and topped with a coconut mixture with brown sugar and butter. While baking this cake, my home was completely filled with a wonderful aroma,i replaced the eggs with yogurt and we enjoyed thoroughly this cake for our snacks. An excellent pair to enjoy with a cup of warm masala chai.


2+1/2cups All purpose flour
1+1/3cup Sugar
2tsp Baking powder
1tsp Baking soda
1/4cup Melted butter
1cup Yogurt
1tsp Vanilla extract
1/4tsp Salt

For topping:
1/4cup Butter
1cup Dessicated coconut
1/4cup Milk
1cup Light brown sugar

Preheat the oven to 400F, grease a square pan and line a baking sheet.

Mix all the topping ingredients together in a bowl and keep aside.

Sift the flour,baking powder,baking soda and salt.

Beat together the melted butter, yogurt and sugar together until the sugar dissolves.

Gradually add the wet ingredients to the dry ingredients and stir the mixture together with a spatula. Dont overmix.

Pour the batter to the prepared pan and bake for 20minutes.

Increase the oven temperature to 425F,remove the cake from the oven and spread immediately the already prepared topping over the cake.

Bake the cake again for 6-10minutes. 

Cool the cake completely and cut as squares.

Serve with your favourite drink.
