Gluten Free Channadal Quinoa Dosa/Kadalaparuppu Quinoa Dosai

Quinoa, these tiny grains are becoming my recent favourite after Oats, as these grains are seriously very versatile to cook with. From any breakfast dish to desserts, you can just whisk some interesting dishes with this incredible grain. Quinoa is definitely an extra-ordinary grain to cook with, and my today's recipe is also one among my trial which turned into some super crispy healthy dosas. And trust me, this dosa batter calls for an easy preparation as well.Though channadal plays an important role in this dosa batter, i couldnt stop myself adding quarter cup of urad dal. Needless to say that this dosas are totally oil-less, definitely a protein rich crispy Indian crepes to enjoy with your favourite chutneys or sambar either for your breakfast or dinner.

Channadal quinoa Dosa, Dal Quinoa Dosa

Quinoa is definitely a high protein grain which is completely gluten-free. Its has low fat with good calorie content in it. Quinoa is an incredible grain to add in your diet. Since quinoa is easily available around the world, its not too late to make some delightful dishes with it. You can check even my space to get some ideas to cook quinao with it. Since quinoa and channadal are rich in protein, obviously this fantastic dosas goes to this month's blogging marathon as am running with Protein rich dishes as theme.

Kadalaparuppu Quinoa dosa, Channadal  Quinoa Dosa

1cup Quinoa
1/2cup Channadal
1/4cup Urad dal
1/4tsp Fenugreek seeds
Salt

Soak the quinoa, channadal, urad dal, fenugreek seeds together in a bowl and keep aside for atleast 3-4hours.

Grind this quinoa-dals as a bit coarse paste. Add enough salt, mix well and keep for fermentation.

This dosa batter wont double in volume as like usual dosa batter and this batter will be bit thick the next day.

Add some water to turn the batter as pouring consistency.

Heat a nonstick tawa or a pan for making dosas, once the pan is hot.

Channadal quinoa Dosa, Quinoa Dal Dosa

Grease the pan with a paper towel and drop a ladle of this channadal-quinoa dosa batter and spread as a thin dosa.

Drizzle oil (if needed) i didnt add oil as i used non stick pan, flip and cook on both sides until the dosa turns crispy.

Serve warm with chutneys or sambar.

The crisp quinoa dosa looks so well made , the concentric circles show how well you have made it , nice and crunchy , I don't mind having it for my breakfast.
