Gluten Free Cashew, Cranberries Cookies

Gluten is a protein presents in few wholegrains to which many peoples and kids are allergic now. Obviously it exists so many gluten free dishes, if you check your daily menu well am sure you may atleast a dish with is definitely a gluten free friendly dish. When i came to know about this gluten intolerance during my internship in creche , i was bit surprised as this intolerance is quite dangerous to a kid. If a kid have to intake gluten free dishes, we need to check every food  we are feeding him/her with. You have to read carefully every ingredients used in a store bought products before dishing out foods with it. Gluten intolerance is very much known nowadays in France and many organisations are doing wonderful job in creating awareness among the young moms or future moms.


You may wonder why am talking about gluten free, i have a reason for it.. Yes am running my second week of blogging marathon with gluten free indulgence. Needless to say this theme is very much close to my heart as my close friend's son have gluten intolerance and she have to double or triple her attention whenever she buys anything from supermarket. She actually taught me how to be vigilant if we have a kid with gluten intolerance.My today's post goes for a scrumptious healthy cookies i have baked for an online food competition and this cookies was selected one among the best.These cookies are one of my own creation and am very proud to say this.


1/2cup Ragi Flour (Finger Millet)
1cup Cashew (grounded as coarse powder)
1/8cup Cornflour
1/2cup sugar 
1/4cup Honey
1 Egg
1/2tsp Baking powder 
1/4cup Butter 
1tsp Vanilla extract
1/2cup Dried Cranberries

Dry roast the ragi flour in simmer for 2minutes, this step is important to get rid of the raw smell of ragi and keep aside.

In a bowl add the sugar,honey,butter and egg, whisk until the sugar gets dissolves.

Now add the coarse cashew powder, baking powder, vanilla extract,corn flour and ragi flour,cranberries one by one and mix everything to get a thick cookies dough.

Pre-heat the oven to 180 C/350F..

Line a baking tray with baking sheet and spoon the cookie dough giving space between each cookie.
Bake in center rack of the pre-heated oven for 15-20 mins. 

Let them cool completely on a wire rack.

Enjoy with a cup of coffee or tea.

Conserve them in an air-tightened box.

That's simply amazing....I have a huge stock of Ragi and all of us are bored with the usual recipes....this is perfect!
