Red Velvet Cream Cheese Brownies

My today's post was sitting in my draft since the month of february as i baked this brownies specially for Valentine's day. As per wiki, a brownie is a flat, baked dessert square that was developed in the United States at the end of the 19th century and popularized in both the U.S. and Canada during the first half of the 20th century. It is a cross between a cake and a soft cookie in texture and comes in a variety of forms. Depending on its density, it may be either fudgy or cakey and may include nuts, icing, chocolate chips, or other ingredients. A variation made with brown sugar and chocolate bits but without melted chocolate in the batter is called a blonde brownie.

Brownies are typically eaten by hand, often accompanied by milk or coffee. They are sometimes served warm with ice cream, topped with whipped cream, or sprinkled with powdered sugar. But my today's brownies is quite a different from the usual one, this brownie goes two layers, first layer goes for a red velvet brownie batter  which is then topped with  a second layer aka cream cheese batter.Sending to Srivalli's Anniversary Mela.

Red velvet cream cheese brownies

This brownie makes an ultimate dessert to enjoy after a meal or else simply to have for your snacks. Both red velvet brownie layer and cream cheese layer makes a tremendous pair together. If you have a slice of this brownies, trust me you cant just stop with a bite.My kids enjoyed thoroughly this brownies, they get vanished very much quickly.These alluring double layered brownies are going to be part of this month's April mega marathon as we are running with Baking as theme.

Double Layered Red Velvet & cream cheese brownies

Red Velvet Brownie Layer:
3 +1/4 cups All purpose flour
2 +1/4 cups Sugar
3 tbsp Cocoa powder
1tsp Salt
1/2tsp Baking powder
3 Eggs
1cup Vegetable oil
4tbsp Milk
1tbsp Vanilla extract
1tbsp Red food colouring
2tsps White vinegar

Cream cheese layer
360grms Cream cheese
3/4 cup Sugar
2 Eggs
2tsp Vanilla extract

Pre-heat oven to 180 degree C. Line up your baking tray with baking paper and grease with oil.

Sift together flour, cocoa powder, sugar, salt and baking powder. Make a well in the center. Keep aside.

Add eggs in a bowl and whisk well. Now add oil, 2 tablespoons of milk, vanilla extract, red food colouring and vinegar to the beaten eggs.

Whisk well until everything gets well combined.

Pour the wet ingredients into the well of the dry ingredients.

Mix gently using the spatula until everything combines together. It will be a thick, oily dough like consistency..

Remove 3/4 cup of the batter and transfer to another bowl and add the remaining 2 tablespoons of milk into it.

Mix well using spatula until it combines to a smooth batter. Keep aside.

Transfer the thick brownie batter into the prepared baking tray and evenly spread out the batter and smooth the top.

Red Velvet Creamcheese Brownies

Take the cream cheese into the bowl. Beat on medium speed until it becomes soft and fluffy

Add the sugar to cream cheese and beat on medium high speed for 3 to 5 minutes until the mixture becomes soft, pale and fluffy.

Add the eggs one by one and beat well after each egg. Now add vanilla and beat until combined.

Pour this cream cheese batter on top of the brownie batter. Spread out evenl.

Scoop out the thinned down brownie batter that was kept aside, on top of the cream cheese layer. Make sure to leave some gap between every spoon of the red velvet batter.

Using a knife, make some nice swirly pattern on the cream cheese and thin brownie batter layer.

Do not over do. Bake in pre-heated oven for 30 minutes until  the sides have started to become golden brown.

Cool on wire rack.

Use heart shaped cookie cutter to cut them out or else slice as squares.
