Eggless Cinnamon & Chilli Chocolate Muffins

Have you ever tried adding cayenne chilli powder in your bakes, do give a try..Recently i picked a packet full of cayenne chilli powder to spice up my dishes, but seriously i never thought of adding them in my muffins  a day..While brownsing, i saw few hot chilli and cinnamon spiced chocolate muffins, finally i decided myself to prepare my version of this eggless cinnamon,chilli chocolate muffins..I used ricotta cheese and oil, skipped completely butter and used baking soda as egg subsitute..These muffins turned out simply marvellous,extremely spongy and super moist, i thought that cayenne chilli powder will leaves a little spice while having but seriously the cheese,sugar and chocolate used in this muffins helps a lot to mask the spiciness of this chilly powder..Sending this yummy muffins to Kalyani's Magic Mingle-Cinnamon & Chilly,Bake Fest#3 guest hosted by Pradnya,event by Vardhini  & to Srivalli's Chocolate Mela..


2cups All purpose flour
1cup Sugar
1/2cup Ricotta cheese
1tsp Baking powder
1/2cup Cocoa powder
1tsp Baking soda
1/2cup Oil
1tsp Cinnamon powder
1/2tsp Cayenne chilly powder
1/2cup Milk

Preheat the oven to 350F..Mix together the flour,baking powder,cocoa powder and baking soda,keep aside..In an another bowl, beat together the sugar,ricotta cheese,oil,milk until the sugar gets well mixed, now add the cinnamon and cayenne chilly powder, give a quick mix, add gradually the dry ingredients and mix gently,dont overmix..

Pour enough batter to the greased silicon mould and bake for 15-20minutes in middle rack until a skewer inserted comes out clean..
