Mushroom,Carrot & Paneer Masala Rice

Needless to say i love one pot meals and i never stopped making variety of rice using most of the time with veggies just to feed my teddies easily, so that they can enjoy their rice dish without saying no, if i add few paneer cubes to the rice, i know very well they will definitely their whole plate without any hesitation..Whenever i prepare paneer at home i used to freeze them for further use just for making these sort of masala rice, as those frozen paneer cubes will be definitely handy while making these sort of quick fix meals..Coming to this masala rice, i just combined my daughter's favourite veggies carrots and mushrooms with paneer which i prepared using simply with cooked rice and spiced up with pav bhaji masala powder and garam masala powder..This rice gets ready really very quick which suits prefect even for lunch box menu..

Mushroom,carrot & Paneer masala rice

2cups Cooked rice
2nos Carrots (chopped)
1cup Mushrooms (chopped)
1cup Paneer (cubed)
1no Onion (large & chopped)
2nos Green chillies (slit opened)
1tsp Cumin seeds
1tsp Pav bhaji masala powder
1/4tsp Pepperpowder
1tsp Garam masala powder
Few curry leaves
Oil
Salt

Heat enough oil,fry the cumin seeds and curry leaves, add immediately the chopped onions, slit opened green chillies, saute until the onions turns transculent..Now add the chopped carrots, chopped mushrooms, saute everything for few seconds, add the pav bhaji masala, garam masala powder, salt and cook everything in high flame for few seconds, dont over cook the veggies..Meanwhile fry the cubed paneer with few drops of oil in a pan and keep aside..

Finally add the cooked rice, pepper powder, fried paneer cubes and toss everything gently and serve hot with chips or papads.
