Spicy Garlic & Curryleaves Chutney

Garlic (Allium Sativum) is a plant with a very strong and bitter flavour which has been used in both culinary and medical purposes since hundreds of years. The key medicinal ingredient in garlic is allicin, which is known to have wonderful anti-bacterial, anti-viral, anti-fungal and anti-oxidant properties.Garlic can be used to treat high cholestrol, parasites, respiratory problems, poor digestion, and low energy. Studies suggest that regularly eating garlic helps lower blood pressure, controls blood sugar and blood cholesterol, and boosts the immune system. Garlic's antibacterial properties make it a wonderful treatment for coughs and other throat irritations. Garlic may also reduce the severity of upper respiratory tract infections. I prepared this spicy chutney with roasted garlic and curry leaves for our dinner with crispy dosas, i felt like having something hot as am suffering with running nose and sore throat..I even loved this hot chutney with rasam, real comforting food both together helped a lot for my sore throat..This chutney suits prefectly as side dish for dosas,idlies...Simple chutney can stay even a week if they are conserved in fridge, really handy and even my lil ones liked it with dosas..



20nos Garlic cloves
5nos Red dry chillies
1tbsp Coriander seeds
15nos Curry leaves
Salt
2tbsp Gingelly oil

Heat few drops of gingelly oil, fry the garlic cloves until they turns golden brown,take off from the pan and keep aside, in the same pan add the red dry chillies, coriander seeds and curry leaves,fry everything in simmer until they get fried...Take the roasted garlic cloves, fried curry leaves, dry chillies, coriander seeds and salt in a mixie jar and grind as bit coarse paste..finally add the remaining gingelly oil, give a stir and serve as side dish..

Mouthwatering chutney. combo of chutney and rasam brings back the memories of hostel days. We were served this for Sunday lunch.

useful is a plant garlic in turkey, we use almost all the dishes and he's my taste wonderful natural antibiotic.
