Stir fry or curry, however okra aka bhindi and potatoes works wonder together, one of my recent trial with these both vegetables turned out absolutely yummy. This sabzi goes for simple ingredients with few spice powders, and i went for microwave oven cooking for making this fingerlicking curry. Microwave cooking needs patience but you doesnt need to stay next to your oven as we do if you are cooking in stove top. Once the cooking time gets finished,your dishes will be ready to have, actually i love preparing foods through microwave oven, i know some are using their microwave oven just for reheating but trust me you can make varieties of dishes with this kitchen gadget. I have prepared couple of dishes with my microwave oven and still i cook my basmati rice through it,since ever i have started cooking basmati rice through microwave oven i get prefectly cooked basmati rice. You know i can talk for hours about microwave cooking, actually you can prepare a Royal feast with it.

Vegan Hash Browns/Hashed Browns
You might have noticed that past two days am posting breakfast dishes, today is also an another easy breezy breakfast dish prepared simply by shredding the potatoes. This simple shredded potatoes when pan fried makes this addictive hash browns. Hash browns are staple breakfast food at diners in North America, and they are often fried on large quantity through stovetop or grill. In United states, hash browns are referred to shredded pan-fried potatoes and its considered as a breakfast dish, while potatoes diced or cubed, panfried are considered as country fried potatoes or home frieds. People says that hash browns are developed out of Swiss's farmer's breakfast Rosti, this dish is also hash browned potatoes with meats,vegetables or else cheese.

Karunkuruvai Arisi Podi Dosa/Organic Karunkuruvai Rice Dosa
Karunkuruvai, is an another variety of rice i got through Kalpana of Life with Spices, she pampered me with a huge bag of Organic stuffs when i met her during my stay in India. We had loads of fun together and you might have already noticed i prepared some spongy idlies with an another unknown (personally for me) rice called Kattuyanam rice, check my post of idlies i prepared using Kattuyanam rice to get a better idea about this traditional rice cultivated in Southern part of India especially in Tamilnadu.Today's post is going to be a breakfast or dinner dish aka dosas i prepared few days back with Karunkuruvai rice, this rice looks bit dark when compared to other rices and tastewise nothing different from the usual one, but healthwise they have many interesting facts, actually i loved making this dosas out of this wonderful organic rice.

Mattar Kachori/Mattar Ki Kachori - Rajasthan Special
Rajasthan is in Northwestern part of India, its one the largest states which is rich in culture, colourful traditions famous for its grand forts,majestic temples, amazing landscape,splendid costumes and obviously for its delicious cuisines.The cuisine of Rajasthan had its uniqueness and you cant find it anywhere. Rajasthan is a desert and coz of this reason, this states has always faced a scarcity of water, the dearth of water results in the growth of fresh vegetables and fruits. Due to this conditions, the Rajasthani peoples prefer foods that can be preserved easily for days and could be eaten without reheating.They use less water and used milk,buttermilk and calrified butter to cook their dishes which takes the taste of this cuisine to an another level.Rajasthani cuisine is primarily vegetarian in nature and different regions of Rajasthan is famous for different kinds of cuisine.This cuisine is developed under the influence of Rajputs and Brahmins. Bellpepper Peas Sundal
Sundal is one of the healthiest, easiest and definitely a nutritious snacks which i never forget to make at home. I usually soak large quantity of variety beans, later i'll conserve them in freezer for further use, its definitely handy and helpful to have already soaked beans in freezer for making sundals,gravies and why not curries with them. I have been following this method since a long and my freezer will always have sprouted beans and already soaked, ready to use beans like chickpeas,yellow peas, horsegram,kidney beans,butter beans etc.I'll advice you all to follow this method for easy cooking of beans, trust me you wont give up this method if you try once at home.

Senai Kizhangu Thogayal/Elephant Yam Chutney/Karunai Kizhangu Thuvaiyal
If you are searching for a different, an easy breezy and a vegan chutney, just you need to go through this post. This thogayal aka chutney goes for the most itching and most hated vegetable Elephant yam. I have seen people who never touched this vegetable in their life as they dont like peeling or cooking with this yam. But trust me, this thogayal will change their opinion about this vegetable, this dish goes for simple cooking and the tamarind used in this dish makes this dish more delicious and tangy. Betel Leaves Rasam/Vethallai Rasam/Vetrillai Rasam
After making some fingerlicking gravy with betel leaves, here comes an interesting Indian soup aka rasam.This betel leaves aka vethallai rasam goes for simple preparation, for this dish you doesnt need rasam powder we usually go for rasam. A grounded spice mixture is enough to make this flavourful,very delicious rasam. Actually i have tasted this rasam long back at one of my aunt's home, trust me i never want to make or taste this betel leaves rasam ever, but since ever i heard about the medicinal value of this incredible leaves, i seriously want to make this rasam. Finally i tried at home with my aunt's help and everyone at home had this fabulous dish with a simple spicy potato fry for their lunch two days back.

Gooseberry Lemon Rice
How about making a beautiful rice dish with both gooseberries and lemon?.Actually i prepared this rice coz of less quantity of gooseberries and lemon i had in my fridge. Since both goes awesome in rice, i thought of combining them both together for making this incredible, simple rice. Trust me this rice tastes absolutely fabulous and you can pack them easily for a lunch box. This tangy rice goes for an easy preparation as much as like lemon rice. The addition of grated gooseberries gives a fabulous taste and mild sweet tanginess to this simple rice.

Vegan Greek Simiti/Koulouri
The Greek Simit are the popular sesame crusted bread rings sold on the street corners and bakeries everywhere in Athens. This is one of famous bread which suits prefectly for a busy Athenian's breakfast. Just a cup of coffee and this sesame bread rings is quite enough to fill anyone's tummy.When i was searching something different and interesting for this month's Baking Eggless,a monthly event owned by Gayathri, i got hooked to these cute looking sesame bread rings, as the host of this month Eggless baking, i suggested this bread rings to Gayathri and she accepted immediately.
About the baking eggless group,every month a host will challenge the group members with a baked goodies with eggs, the member of this group should convert this baked goodies with eggs to an eggless bakes with available egg substitutes,obviously this bread rings are eggless, dairy free and completely vegan. The Original recipe used an egg and whole milk which i completely skipped and went for silken tofu.The addition of tofu turned this bread extremely spongy, if you serve them with jam or any spread for your breakfast am sure everyone at home will enjoy thoroughly this incredible sesame crusted bread rings.Also the original recipe went for grape-must syrup for coating this simiti which i completely skipped and used water for it.We loved having this fantastic nutty koulouri aka Simiti with our usual breakfast beverages, beware these simitis are quite filling and addictive too.Today is the last thursday of the month and its time to post for Vegan Thursdays, an vegan event running twice a month and this rasam goes to this event too.

Drumstick Pulp Rasam
Rasam is my favourite food, i can survive for many days with this Indian soup. My space shares varieties of rasams and you can find different and unique rasams here. To that incredible collection of rasams, am adding one more rasam which may become your regular dish to enjoy with some hot steaming rice. Yes this rasam is simply prepared with drumstick flesh aka drumstick pulp and toor dal. Actually i prepared this rasam intentionaly to know how tasty will be this Indian soup if i add the iron rich drumstick pulps in it. Am not wrong, this rasam is just simply delicious with a wonderful flavour and obviously drumstick pulp addition makes this rasam more healthier.
If you want to try a different rasam, you should give a try to this delicious,fingerlicking food. Whoever says 'no' to drumstick will definitely become an ardent fan of this rasam. I used drumstick pulps after cooking drumstick pods separately and went adding just like that, if you want to make them more interesting, just grind them as bit coarse paste and use it in this rasam. Vegan Challah
Challah, the popular Jewish bread is loaded with eggs and egg yolks, but if i say we can make beautiful challahs as vegan version, its unbelievable rite. Even i was bit skeptical when i saw this Vegan Challah from The Sweet Life, an another incredible bread challenged by Priya R of Cook Like Priya for this month's Home Baker's Challenge, a monthly baking event where we bake varieties of bakes every month.Since december is a month of Christmas celebration, Priya chosed many delicious christmas bakes from all around the world and am happy that finally i can make my favourite challah as vegan version. Seriously until i finished baking this challah am not sure about the texture and the taste,but trust me this vegan challah is just tremendous.
Crust and the texture of this bread came out extremely prefect as much as like the egg loaded challah. This Veganised challah goes for chickpea flour which may sounds weird but seriously the addition of chickpea flour makes this bread interesting and this flour gives the texture and that mild yellowish colour to the texture of this vegan bread. I enjoyed thoroughly baking this Christmas veganished Jewish bread at home and once again thanks to Priya for challenging us this incredible bread.Today is the last thursday of the month and its time to post for Vegan Thursdays, an vegan event running twice a month and this beautiful challah goes to this event too.

Sprouted Methi & Dal Powder/Mulaivita Vendhaya Paruppu Podi
My followers knows very well that i make quite often sprouts with beans and seeds at home itself. For sprouting we dont need any specific container. A small bottle container and a dark place can make some magic also you need patience for sprouting,coz sprouts may take more than two days while some may take three days to sprout. Recently i prepared few fenugreek sprouts at home, after making some instant pickles and spicy tamarind based gravies aka kaara kuzhambu finally i prepared this incredible dal powder using some leftover fenugreek sprouts and dals.
Actually this is the first time am trying a paruppu podi with sprouted fenugreek seeds,trust me this podi turned out extremely fabulous with a mild tolerable bitterness. Am having twice a week this podi mixed with rice topped with gingelly oil or ghee. Sprouted fenugreeks, we call in tamil as mulaivita or mulaikattiya vendhayam(à®®ுளைவிட்ட வெந்தயம்) tastes less bitter when compared to the fenugreek seeds. Anyhow this bitter better seeds are seriously very healthy and definitely a diabetic friendly dal powder which helps to reduce the sugar level in blood by frequent intake.Today is the first thursday of the month and its time to post for Vegan Thursdays, an vegan event running twice a month and this healthy dal powder goes to this event too.

Butter Beans Salna|Butter Beans Parotta Salna
Have you ever tasted parottas with fingerlicking salna when the weather is down, if not seriously you are missing something. Salna and parotta makes a prefect pair and one of most famous salna is chicken salna, the roadside shops serves this fingerlicking side dish with hot flaky parathas. Usually people prepare salna with mixed vegetables,eggs or chicken, for a change today i prepared this salna with some pressure cooked butter beans.We love parathas very much especially for the salna we get from the restaurants, coz this salna tastes extremely delicious with idlies or dosas. Obviously we buy less number of parottas and ask for more salna.

Pan Roasted Baby Potatoes
I love shallow fried foods than the deep fried ones, coz shallow frying goes for less oil when compared to deep frying.But sometimes instead of shallow frying or deepfrying, i'll go for pan roasting vegetables which goes awesome as side dish with a simple comforting dish like sambhar rice or rasam rice. One among those pan roasted vegetables, here comes an easy breezy,delicious and a very tasty side dish i quickly prepared for our lunch with baby potatoes few months back.
Baby potatoes gets cook easily that the usual potatoes,obviously these tiny potatoes tastes fabulous for making this kind of quick side dishes. You dont need to chop onion or grind any special masala for making this pan roasted baby potatoes, just chilly powder and coriander powder is enough to spice them. Badam Karasev/Almond Karasev
Murukkus/chaklis, sev and then karasev have their important place in our Diwali savouries,for a change i tried adding some grounded thick badam paste while making karasev this time,trust me these karasev are just simply out of the world. They were crunchy,very addictive with a melt in mouth texture. You can just stop with one, adding badam aka almonds to the karasev makes this savoury very interesting than the usual karasev, also i used coarse pepper powder to spice them instead of chilly powder. Instead of making the usual Karasev, try to almonds in your karasev and see the difference.
Hope you are all busy with Diwali preparation and shopping, i miss all those fun here, but am happy that kids and H will be at home this time coz Diwali falls on saturday.Obviously i'll start my diwali preparation only on thursday as i dont want to make everything earlier, also this time its not going to be big celebration here. A simple pooja with some savouries and sweets is quite enough to celebrate the Festivals of Lights, however this is how we are celebrating Diwali every year here. Soya Cigar Rolls
Cigar rolls are crispy fried tiny rolls stuffed usually with spicy fillings like vegetable, paneer or sometimes with meat kheemas like chicken or mutton. But my version of cigar rolls goes for spiced soya kheema, a vegan and nutritious filling. These cigar rolls are extremely super easy to make and definitely very addictive,needless to say these tiny finger food sounds as much as like spring rolls.These kid friendly rolls with interesting soya filling suits for any occasions.Serve the soya cigar rolls with any dips or chutneys, or simply with tomato ketchup and see how fast these cigar rolls gets vanished.

Sweet Potato Curry/Sakkaravalli Kizhangu Poriyal
Sweet potato are a major source of skin protecting beta carotene, they are as much as healthier like our carrots. This humble root vegetable is rarely cooked in our kitchen, you can dish out many different dishes to bakes with this sweet potatoes. The ladies from my family make different dishes from this root vegetable and one among their dishes, this curry is my all time favourite. This poriyal aka curry goes awesome as side dish with a simple rasam rice. You can also enjoy this vegan dish thoroughly with rotis, eventhough this dish may tastes bit sweet, the spices used in this poriyal will definitely give this poriyal enough spiciness.

Sweet Rava Pidi Kozhukattai/Sweet Semolina Dumplings
Ganesh Chathurthi is 9th september. Tempted by variety of modaks posted by fellow bloggers, i prepared this vegan sweet dumplings with rava today, this dumplings takes hardly less minute to get ready when compared to the usual rice dumpling. Roasted rava, sugar,cardamom powder,some grated coconut is just enough to make this quick dumplings.If you dont have rice flour or dont know how to make stuffed modaks, still you can make this quick,easy dumplings to please the God Ganesha.
This dumplings are vegan,if you have rava at home,just make this tiny dumplings even if you dont have enough time to make Kozhukattais. I will definitely try my hands to make the same sweet version with cornmeal to check whether this method works with yellow cornmeal.

Cantaloupe Lemonade~~Vegan Thursdays
Cantaloupe is a summer fruit and its a peak season here until september, they cost very cheaper during summer, we never forget to get them from the nearby farmer's market.We love this super flesh fruits as salads,juices or as icecreams.
Its hot here, when its too hot the first thing that comes immediately to our mind is to enjoy chilled fresh fruit or vegetable juices. Ragi Sago Fryums/Kezhvaragu Javvarisi Vathal~~Vegan Thursdays
Its been a year, i prepared vathals aka fryums at home, this time i dont want to miss the opportunity to make some homemade fryums since the weather in Paris is super hot since few days.Instead of making usual rice based fryums, i tried my hands in making a healthy version of fryums with ragi aka finger millet and sago. In fact i never tried this, but somehow i want to give a try to this combo, and tried with small quantity of sago and ragi. Trust me, these fryums turned out extremely tremendous and prefect as like the usual sago fryums.
These fried fryums looks cute with a different colour, everyone at home loved munching them, they tastes even more delicious when served along with some hot piping sambhar rice. Next time while making your fryums dont forget to give a try to this ragi sago fryums, am sure you guys will love it.
