Beets, Soyachunks & Methi Pulao

We are starting again blogging marathon today and i'll be running for next 7 days with Srivalli and my other blogger buddies with kid's delight - Colourful meals using fruits and veggies as theme, am really very happy to run again blogging marathon...

One more delicious one pot meal from my kitchen, which suits terribly prefect as a lunch box menu also a colourful and catchy rice dish for kids, serve it simply with chips none will never say no to this wonderful,flavourful,filling and this healthy pulao..Beets gives a wonderful colour and a mild sweetness to this pulao while soyachunks tastes exactly like meat and methi leaves gives a wonderful flavour,finally all together give more healthiness to this pulao..As i told before, i have picky eaters at home, thats why i usually mix and match many ingredients or veggies together to prepare our daily menu, my lil one loved this yummy pulao and enjoyed with chips for his lunch also he didnt noticed the addition of methi leaves..I enjoyed feeding my family with wonderful catchy pulao for our lunch and we all loved it..

Beets,Soyachunks & Methi Pulao

2cups Basmati Rice
1cup Coconut milk
2cups Beets (chopped)
1/2cup Methi leaves (chopped)
1cup Soya chunks
2nos Onions (chopped)
3nos Green chillies (slit opened)
1tsp Ginger garlic paste
1tsp Garam masala powder
1/2tsp Red chilly powder
1tsp Coriander powder
2nos Whole spices (bayleaves, cloves,cinnamon sticks,cardamoms)
Salt
Oil

Wash and soak basmati rice with coconut milk and 3cups of water for 10minutes, cook the rice in rice cooker with the soaked coconut milk-water...keep aside and let them cool completely..meanwhile cook the soyachunks with water and salt until they double their volume,drain the water and squeeze out the chunks and keep aside..

Heat oil in a tawa, fry the whole spices until they turns brown, add the chopped onions,slit opened green chillies and ginger garlic paste until the onions turns transculent, add now the chopped beets,chopped methi leaves, saute until the veggies gets half cooked..

Add the soya chunks, garam masala powder, red chilly powder and coriander powder and salt,cook everything in simmer,sprinkle water and cook until the veggies get well coated with the spices..Add the cooked rice to the cooked veggis and toss gently well until the rice gets well mixed..

Serve hot with chips or any side dish..
