Nothing can beat the aroma of freshly baked breads at home and obviously homemade breads are the best without any preservatives. Home made breads are very much tastier than the store bought one and they are damn cheaper and doesnt take much time to prepare at home. If you ask me to bake a bread everyday, i dont hesitate a second at all. Coz bread making are definitely a stress burster, if you want to get rid of your stress just bake a bread at home.Homemade breads are more nutritious when compared to store bought ones,needless to say that we can mix and match the ingredients according to our wish. And you might have noticed that am running a month of baking marathon which is known as Bake-a-thon, obviously i will be posting on Mondays, Wednesdays and Fridays during this whole month of december. Pastry Cream & Chocolate Chunks Brioche Wreath
Christmas is not complete without wreath, either its edible or decoration you can find wreath everywhere during this festive season. Its been quite a yearly tradition for me to bake as wreath and am trying to keep this since three years. However we dont forget to decorate our entrance door with a wreath as well. Coming to this brioche wreath, its quite a dangerously addictve bread swirls which is definitely easy to shape and bake. Apart from preparing pastry cream and brioche dough, this wreath is quite an easiest bread to give a try without any hesitation. Usually we wait for an hour to dig these sort of breads once they comes out of the oven but my kids went completely crazy when they smelled the aroma of this bread. Best part of this wreath is just to pull a bread and enjoy it immediately.

Vegan Mixed Seeds & Spelt Flour Dinner Rolls
Spelt flour is my recent favourite, i accidently picked a packet of spelt flour instead of gluten free flour. But trust me, though i did a mistake, i seriously enjoy baking out some incredible bakes with this very ancient grains. Spelt is known as hulled wheat which is a species of wheat cultivated since a long. Spelt flour breads are important staple in few parts of Europe since bronze age. As much as like Wheat, barley and rye, Spelt is also a gluten grain. You might have know about gluten, its a protein that gives breads and other baked goodies their texture. Obviously spelt flour replace very well whole wheat or whole grain flour in most of the breads. Spelt is an excellent healthy whole grain, eating spelt in your diet gives the fiber content. Fibre is essential for healthy digestive system. Hence spelt flour may be very much helpful as a part of weight loss diet. Spelt flour contains little more protein than the usual wheat. Keep in your mind, that spelt flour is not suitable for a gluten free dieting people.

Brioche Christmas Tree
Last year with a couple of friends i baked for a month for Champa's Bake-a-thon, this year am again gonna run but this time just 3 days per week. For the first day of bake a thon, am posting my lil one's latest favourite, brioche christmas tree.Since christmas is approaching quickly, my kids started asking to bake something christmassy. As i planned to bake bread, my daughter suggested to bake a brioche as christmas tree. I simply loved her brilliant idea and quickly prepared my brioche dough.
This cute looking brioche christmas tree was prepared with usual brioche dough and goes for eggs. I have already prepared a light version of brioche,this time i went for almost the same dough preparation apart from butter, i went adding more butter this time and these cute brioche christmas tree came out extremely spongy,buttery and delicious.I baked three medium sized brioche christmas tree from the measurement i have given here and went for some black poppy seeds and sesame seeds for the crust.Do check Champa, Srivalli, Sumana Deepak,Veena and Preeti Deo wat they baked for the first day of bake-a-thon.Sending to 60days of Christmas hosted by Priya and Divya.
3cups Bread flour or all purpose flour
1tbsp Active dry yeast
1/2cup Milk (luke warm)
3nos Egg yolks
1/4cup Sugar +1tsp Sugar
1tsp Salt
150grms Butter
1no Egg yolk+1tsp Milk (for brushing)
Black poppy seeds(as per need)
Sesame seeds (as per need)
Mix the yeast,a teaspoon of sugar and salt to the luke warm milk, keep aside until the yeast turns foamy.
Meanwhile take the flour,egg yolks,sugar in a large bowl, add gradually the foamy yeast and turn everything as a soft dough, now add the butter and knead everything for 10minutes.
Arrange the dough in a bowl covered with a towel,keep aside for atleast for 2hours until they double their volume.
Knead the dough again for few minutes, divide the dough as three equal balls.
Divide 16 tiny balls from the already divided dough. Roll them as round balls and place it over a baking sheet, one by one without any space as christmas tree.
Keep it in warm place for half an hour.
Preheat the oven at 350F. Mix the egg yolk with milk for brushing together, now brush the uncooked brioche christmas tree generously.
Springle the poppy seeds and sesame seeds on the top and bake them for 20-25minutes until the crust turns golden brown.

Santa Claus Shaped Brioche Bread
Christmas eve kick starts tonite, obviously i want to share some Xmas friendly baked goodies for this week's Bake-a-Thon event am running for this whole month. Though am bit late in posting some delightful Xmas bakes, its better late than never na. Am kicking starting this week with an ultimate brioche bread shaped as Santa claus, yea you heard it rite. I baked a beautiful brioche bread as Santa claus. I have bookmarked this bread long back and this bread was in my to do list for more than three years, finally i baked this bread for this year's Xmas. Since i want this shaped bread more rich and delicious, i couldnt stop myself baking with a super rich bread dough aka brioche dough. Brioche dough calls for eggs, butter and milk along with usual ingredients. The addition of eggs and butter makes this dough more rich than the usual bread dough.

Eggless Semolina Pav Buns/Semolina Bread Rolls
I have been baking with fine semolina since few weeks as am able to make some incredible breads with them. Working with semolina is not a tough job as they tends to work as much as like bread or all purpose flour. Fine quality semolina are just prefect to bake many tremendous breads out of them. Moroccan, Tunisian and Algerian uses Semolina as the main ingredients in most of their flatbreads or leavened breads. Since my family members like the texture and the flavor of semolina breads or bread rolls, i couldnt stop myself to make some simple bread rolls at home just to please some hungry tummies either for breakfast or for evening snacks after a hectic day at school. These bread rolls came out extremely spongy and ultimately delicious eventhough this bread rolls are completely eggfree.

Eggless Orange & Poppy Seeds Bread Rolls
Once winter starts here, one can see varieties of citrus fruits in our farmer's market. I love to bake with citrus fruits, especially with dark chocolate. However i want to bake a simple bread rolls flavoured with orange and its was in my to do list since a long. Once oranges showed their heads in our nearby farmers, i couldnt stop myself gathering all the ingredients to bake out some spongy and soft bread rolls with them. Black poppyseeds is added to this bread rolls to bring some nuttiness and flavour as well. Obviously these bread rolls are super aromatic which can be enjoyed with jam, nutella or else simply with honey. However one can have this bread rolls with any sort of spreads or drinks for their breakfast to snacks.

Eggless Coconut & Cashew Cookies
Dunno why, i just love coconut flavor in cakes,muffins and in breads. Whenever i feel like munching coconut flavored baked goodies, i dont think twice to bake something coconuty. Few weeks back, i couldnt stop myself baking out some dangerously delicious cookies with both coconut and cashew nuts. Cashew nuts is one among my favourite nuts which i never fail to cook with often. Obviously i combined both coconut and cashew nuts together for baking some cheat version of the popular Good day biscuits. I still remember how delicious those cashew nuts loaded good day biscuits will be. I can never forget the taste of this biscuits as much as like the popular bourbon biscuits. Even now, whenever i go to India, i dont forget to grab a packet of these biscuits. Few biscuits are seriously very close of our hearts na.

Eggless Chocolate Chunks & Whole Wheat Butter Biscuits
Kids were asking for something buttery and chocolatey since few days as the weather in Paris is seriously nasty. If kids requests for chocolates loaded bakes, i cant say 'no' hence i baked this ultimate buttery wheat biscuits. Why i used whole wheat flour, coz i have already baked butter biscuits with all purpose flour. Since i want to bake them much healthier than the usual butter biscuits, i opted for whole wheat flour which works awesome to bake out some scrumptious biscuits out of it. Also i baked this cookies with roughly chopped chocolate chunks instead of chocolate chips which gives an excellent texture to this ultimate cookies. Everyone at home went crazy when i finished baking this wheat butter biscuits.

No Maida, No Sugar, No Butter Christmas Fruit Cake
You may wonder how can one bake a rich looking Christmas fruit cake without Maida, sugar and butter. Trust me, even i was skeptical before baking this incredible cake. Its quite an interesting Frutis and nuts loaded Christmas friendly cake to carry with you if you are visiting friends or family. I have prepared fruits and nuts soaked in jaggery syrup before 20 days for baking this Xmassy cake. Yes you heard it rite, this cake is completely sweetened with jaggery. Varieties of dry fruits and nuts are soaked in a thick jaggery syrup is used to flavor up this fruits loaded rich looking cake. Actually my initial idea to make this rich fruit cake was with usual ingredients as much as every year. When i opened the fridge, i noticed that there was no butter, obviously i opted for Olive oil, then comes to idea to make this fruit cake without all purpose flour/maida. Finally i baked this cake with Spelt flour, jaggery syrup and olive oil.

Eggless Chocolate Chips Milk Buns
Breads or buns, these baked goodies are must for us to kick start our day. Since ever i started working, i couldnt make our usual south Indian style breakfast on week days coz of my super duper busy schedule. Obviously i cant think more than baking breads during weekends for our weekly breakfast or else we stick with store bought breads. Most of our breakfast goes for bread toast with butter and jam along with a cup of tea or black coffee. You might have guessed now why i have been baking quite often at home. Neeldess to say that i just love baking breads at home as they calls mostly for basic ingredients with no preservatives. Homemade breads are always the best though their shell life is very lesser than compared to the store bought breads. Coming to today's chocolate buns, i baked these buns few months back for our weekend brunch and its was sitting in my draft since a long.

Eggless Chocolate Persimmon Muffins
Once the cold weather starts, we can get this persimmon fruits everywhere here with cheap rates. Love this fruit and i never failed to bake with them if i get them abundant. Today am starting my first week of blogging marathon and this is my 2nd day of Bake-a thon,so obviously am posting an eggless muffins. For this week's blogging marathon, i choose eggless muffins or cupcakes with chocolate in it. If its chocolate based bakes, definitely am in. As everyone at home love chocolates in any form, i can feed them easily with anything.
Coming to this persimmon muffins, i prepared this muffins last week for our breakfast and went for homemade persimmon puree with whole wheat flour and usual baking ingredients. If you are in hurry and dont have enough time to make your breakfast, prepare this muffins a day before and just enjoy to kick start your day. 1cup Whole wheat flour
1/2cup All purpose flour
1cup Persimmon puree
1/2cup Sugar
1tsp Baking powder
1tsp Baking soda
1/4cup Butter
1/4cup Canola oil
1/2cup Dark chocolate (chopped roughly)
1tbsp Lemon juice
1/2tsp Nutmeg powder
1/4tsp Cinnamon powder
Beat together the butter and sugar for few minutes, add now the persimmon puree,canola oil,lemon juice,nutmeg powder,cinnamon powder and keep aside.
Meanwhile melt the chocolate with few spoons of water in microwave oven and mix it until you get a ganache.Add this melted chocolate to the wet ingredients and beat for few seconds.
Preheat the oven to 350F.
Mix together the whole wheat flour,all purpose flour,baking powder and baking soda in a bowl.
Gradually add the dry ingredients to the wet ingredients until the flour get mixed,but dont overmix.
Pour the batter in a greased muffin moulds and arrange over a baking tray..
Bake for 20-25minutes until a skewer inserted comes out clean.
Cool it completely and enjoy with a cup of coffee or tea.

Cornflakes Chocolate Brownies/Cereals Choco Brownies
You might already tried cornflakes cookies, but today's recipe is completely a different one.Cornflakes chocolate brownies is definitely a must to try if you have leftover cornflakes sitting sadly in your pantry to get finished. Yes i used leftover cornflakes for baking out some chocolate loaded brownies instead of trashing them. I grounded cornflakes as coarse powder and used them in a brownie batter to bake out some incredible brownie out of it. I hate trashing, obviously i will think twice to make use of anything which is leftover aside for many days before their expiry date. Even my H used to blame me that i dont trash anything easily than giving them a second life.

Eggless Spelt Flour Chocolate Chips Cookies
Life is full of experiments and experiences, obviously we learn tips and tricks ourselves either by fail or by succeeding those trials. Culinary experiments are one among those. Experiments in cooking or in baking makes you to come up with some creative dishes or bakes. Trust me, few culinary experiments will definitely pull you to learn and correct your mistakes. To be honest i have been baking since few years especially once i started blogging and am a self learned baker. Never went to cooking classes or baking classes, however blogsphere teach you every nooks of baking. I love baking, i wont hesitate a second to try bakes with different ingredients. Eggless Homemade Subway Sandwich Bread
Have you ever enjoyed having subway sandwich bread with your favourite filling, do you know those spongy sandwich bread can be made easily at home with simple ingredients. I would have went twice to Subway that too long back, yet i still remember their sandwich bread which are oblong in shape with spongy crust. While i was googling for a simple loaf bread recipe i crossed this site. Obviously i have bookmarked it and baked those soft crusty loaves for this year's Bake-a-thon. A baking event i will running during this whole month of december only on Mondays, wednesdays and fridays. Coming to this subway bread, this recipe calls for basic ingredients which we usually go for baking bread at home. And trust me its one of the easiest bread i have baked till now.

Herbed Pumpkin Whole Wheat Bread
When Champa announced her interesting event Bake-A-Thon calling food bloggers to bake anything as eggtarian or vegetarian for this whole month of December..Immediately i mailed her as i want to be a part of this amazing event, for me baking and cooking is a kind of therapy to get ride out of my stresses,obviously how can i miss this event, so this month is gonna be a baking month for me..I already started baking some variety of breads,cookies,savouries and cakes..Anything baked can be part of this baking marathon,thanks to champa for accepting me to be a part of this event.
Few days back my neighbour gave a big pumpkin which she brought from her garden, after making few soups and curries,i turned the leftover pumpkin chunks as puree by pressure cooking them..I used those pumpkin puree and few spices to make out this beautiful looking bread along with whole wheat flour,they turned super prefect,serve it with a bowl of soup or as a sandwich, am damn sure you will have a satisfying dinner or a meal..These healthy slices of breads suits prefectly even when they are served along with grilled meats,omlettes or simply as a toast.
2cups Whole Wheat flour
1/4cup Pumpkin Puree
1tsp Cumin seeds
1tbsp Active dry yeast
1/4cup Luke warm water
3tbsp Olive oil
1tsp Salt
1/2tsp Sugar
1/2tsp Red chilly flakes
1tbsp Dry parsley leaves
1tbsp Chopped coriander leaves
Few sesame seeds
Add the active dry yeast to the luke warm water with sugar and salt, let them sit in a warm place for 5minutes, until the yeast turns foamy.
Meanwhile mix together the whole wheat flour,red chilly flakes, cumin seeds, chopped coriander leaves, dry parsley leaves in a large bowl, add gradually the foamy yeast,pumpkin puree,warm water (if needed) with olive oil and turn everything as soft and stiff dough.
Grease a bowl and place the dough, let it sit for two hour in a warm place..
Preheat the oven to 350F,line a baking sheet over a baking tray, grease loaf mould with olive oil..punch the dough down,knead well and form as a loaf,brush the top with oil and sprinkle the sesame seeds..bake for 20-25minutes until the crust turns golden brown..Let it cool completely..
Serve with any spreads,soups or simply with cheese..

Jam Swiss Roll
Kids are in vacation, obviously am bit busy with them.Even my oven is quite busy now, we are in baking mood. Two days back, my lil one asked me to bake a cake with jam, i know he was asking to make a roulade aka swiss roll, he helped me and we baked the simple vanilla roll with green and rose food colour as something christmassy. This roll is really very quite easy to prepare and you can also prepare them with your favourite flavour or favourite spread eventhough my choice went for strawberry jam. You can serve this super spongy swiss roll as dessert with a scoop of icecream or with a simple chocolate sauce.

Separate the eggs whites and egg yolks.Sieve together the flours,baking powder and keep aside.
Beat the egg yolks and sugar in a bowl until they turns smooth and pale yellow creamy mixture, add slowly the sieved flours,vanilla essence and mix everything well.
Meannwhile beat the egg whites separately with a pinch of salt until stiff peaks form, gently fold the egg whites to the already prepared flour mixture and mix everything well.
Divide the batter into three equal parts and take them in a bowl, colour one with rose food colour while the another with green colour.
Pour the batter side by side in a 10x15inch jelly roll pan lined with greased baking paper..
With a tooth pick, make some swirls in the batter and bake for 15minutes and immediately roll the baked cake in a slightly wet towel and let it get cool.
Spread generously the strawberry jam and roll it tightly, cover the roll with a cling wrap and let it sit for an hour in fridge.
Dust generously with the confectioner's sugar.
Slice it and enjoy.

Challah Bread
Am starting again my three days of blogging marathon today, my theme for this week is Christmas special. Christmas, love this festival and we never failed to celebrate it every year with loads of foods,chocolates and gifts.I cant imagine my christmas dinner table without a bread obviously my first recipe goes for a celebration bread. Challah bread is a celebration bread in Jewish tradition, this bread goes for a rich dough with a mild sweet. Challah bread sounds almost like brioche bread, eggs are added to enrich the dough and milk or butter is not used in this bread dough as this bread may be eaten with meat.This bread goes for a fabulous texture,excellent flavour and beautiful braid.
Nothing will beat the smell of the freshly baked challah,you can go for three,four and six braids for making this challah bread. Mine is a 4 braided challah bread, thanks to youtube, i simply went through this video to make easily my 4 braids.I really enjoyed making this challah bread and my kids loved it with nutella spread.You can easily finish up this challah bread as french toast to whip up on christmas morning if you have served this challah bread with meats for a christmas evening.Do check Champa, Srivalli, Sumana Deepak,Veena,Jayasri and Preeti Deo wat they baked for the 8th day of bake-a-thon. 4cups All purpose flour
2tsp Instant yeast
1/4cup Sugar
1tsp Salt
2nos Large eggs
1no Egg Yolk
1/4cup Oil
1/2cup Water
Few Sugar pearls
Egg wash:
1no Egg yolk
1tbsp Water
In a lare bowl, combine the eggs,egg yolk,oil and water, stir well.
Mix in the flour,yeast,sugar,salt and knead everything together to form a stiff dough,knead well for few more minutes until the dough turns soft and smooth dough.
Transfer the dough to a greased large bowl and cover it with plastic wrap,let it sit in a warm place until its doubled in size for about 2hours.Gently press down the dough,reflate it and cover it again, let it sit again for about an another hour.
Take the dough in a lightly floured surdace, divide into two large balls and again divide each balls into two more medium balls again.
Roll each balls as a long rope,line them side by side, pinch the pieces together at one end and start braiding.

Transfer it to the baking sheet lined over a baking tray, let it sit again in a warm place for half an hour.
Meanwhile mix the egg yolk and water for egg wash.Preheat the oven to 350F.
Brush generously the rised braided bread with the egg wash,springle the sugar pearls generously.
Bake the bread for 30-35minutes or until the crust turns golden bread.
Transfer to a wire rack and cool completely before slicing.

Candied Orange Peel Sweet Bread
We get easily oranges during winter in every corner of the street, yep here its a peak season and we never fail to get them. I tried my hands in making candied orange peels recently at home and they came out extremely fabulous. Its quite easy to make homemade candied orange peels which i used them in making a sweet bread recently with it. With a wonderful orange flavour, this bread will definitely suits prefectly for a breakfast,brunch or else for a quick snack. My kids just enjoyed having this bread, with nutella spread or a simple fruit jam this bread will definitely satisfy your sweet tooth.
If you dont have candied orange peel, you can go very well with freshly grated orange zest for making this bread. I used an egg in this sweet bread, you can skip them very well with silken tofu or with cream chesse as egg subsitute in this bread. Dont forget to make this bread,if you get easily and cheaply oranges. You can conserve very well candied orange peels in an air tightened box for more than three months even in room temperature.Do check Champa, Srivalli, Sumana Deepak,Veena,Jayasri and Preeti Deo wat they baked for the 13th day of bake-a-thon.
3cups All purpose flour
1no Egg (beaten)
1/4cup Melted Butter
1/3cup Sugar
1/4cup Luke warm water
1tsp Salt
1/4cup Candied orange peels (chopped)
1/4cup Orange juice
1tbsp Active dry yeast
Egg yolk or Milk for brushing before baking
Few sugar pearls
Mix the warm water,sugar, yeast together,keep aside until its turns frothy.
In a large bowl mix the beaten eggs,salt,melted butter,candied orange peels and flour together, add the foamy yeast mixture and knead along with orange juice as soft and smooth dough.
Arrange the dough in a greased bowl and keep in warm place for an hour until the dough gets doubled..
Punch down the doubled dough and knead well.
Divide the dough as 8-10 medium sized balls or else if you have loads of patience you can make your bread as i did.
Place them in a greased round pan,cover the pan with a towel and keep again in a warm place, let it double again atleast for an hour.
Once the dough doubled the volume, preheat the oven to 375F,brush the dough with egg yolk,springle the sugar pearls and bake for 15minutes.
Turn down the oven to 325F and bake for 10-12minutes until the crust turns golden brown and the bread sounds hollow when tapped in the bottom.
Keep aside and let them cool completely..
Enjoy for snacks or breakfast with any sort of spreads.

Brioche Bouclettes
Brioche is one of our favourite bread, everyone at home love to enjoy brioche for their breakfast with strawberry jam or simply with nutella. This time when i planned to make some brioche, i want to make them different from the usual one. I simply googled and finally i landed to a french blog, seriously i got hooked to this brioche bouclettes here,i love this curled brioche and prepared them last weekend for our sunday's brunch.
This brioche turned out simply fabulous, as this brioche goes for a syrup with butter,sugar and honey you dont even need any spread to while having them. Even though mine is not prefectly rolled as like the original recipe,tastewise they were simply prefect. Next time if you want to make some brioche,do give a try friends. 3cups Bread flour or all purpose flour
1tbsp Active dry yeast
1/2cup Milk (luke warm)
3nos Egg yolks
1/4cup Sugar +1tsp Sugar
1tsp Salt
100grms Butter
Black poppy seeds (for topping)
For Syrup:
2tablespoon Butter (melted)
2tbsp Packed brown sugar
3tbsp Honey
Mix the yeast,a teaspoon of sugar and salt to the luke warm milk, keep aside until the yeast turns foamy.
Meanwhile take the flour,egg yolks,sugar in a large bowl, add gradually the foamy yeast and turn everything as a soft dough, now add the butter and knead everything for 10minutes.
Arrange the dough in a bowl covered with a towel,keep aside for atleast for 2hours until they double their volume.
Knead the dough again for few minutes, divide the dough as two equal balls.
Roll the dough as a large disc, with a round cookie cutter cut the rolled dough as small circles. Continue the process until the dough gets finished.
Take three small circles and arrange them side by side, roll them to form a curled rolls.
