Looking for a quick, easy breezy munchies for your sudden cravings or to have for mid-day hunger pangs, dont forget to check this incredibly delicious puffed rice chivda. With your favourite nuts and spices, you can dish out this chivda quickly with less efforts. Since this dish call for less oil, one can munch these murmura chivda with any sort of the beverages of their choice for an evening snacks or around 11 o'clock in the morning. Yes this chivda is a prefect munchies to enjoy if you want to have something light and spicy before your lunch. However puffed rice is very much used in Indian cuisine and puffed rice can be munch even without any spices. But i simply love this chivda as it will be bit spicy and nutty at the same.

Anooshaboor/Anoushabour/Armenian Christmas Pudding

                                      Happy New Year Wishes to You All

Am kick starting this year with a sweet note, and this healthy and delicious pudding is from Armenia which is also known as Armenian Christmas Pudding aka Anoush Abour/Anooshaboor. Anoushabour means Sweet soup in Armenian. This dish is a must in every new year's and christmas tables in Armenia for many centuries. This Armenian pudding is a delightful pudding which calls for pearled wheat berries or pearled barley. However if you dont get pearled wheat berries you can replace them very well with white wheat berries and pearled barley. Traditionally a couple of dry fruits like apricots,raisins and almonds are usually used for making this pudding more fruity and nutty. And not to forget that this pudding is flavored with cinnamon powder and sweetened with honey.

No Maida, No Sugar, No Butter Christmas Fruit Cake

You may wonder how can one bake a rich looking Christmas fruit cake without Maida, sugar and butter. Trust me, even i was skeptical before baking this incredible cake. Its quite an interesting Frutis and nuts loaded Christmas friendly cake to carry with you if you are visiting friends or family. I have prepared fruits and nuts soaked in jaggery syrup before 20 days for baking this Xmassy cake. Yes you heard it rite, this cake is completely sweetened with jaggery. Varieties of dry fruits and nuts are soaked in a thick jaggery syrup is used to flavor up this fruits loaded rich looking cake. Actually my initial idea to make this rich fruit cake was with usual ingredients as much as every year. When i opened the fridge, i noticed that there was no butter, obviously i opted for Olive oil, then comes to idea to make this fruit cake without all purpose flour/maida. Finally i baked this cake with Spelt flour, jaggery syrup and olive oil.

Eggless Coconut & Cashew Cookies

Dunno why, i just love coconut flavor in cakes,muffins and in breads. Whenever i feel like munching  coconut flavored baked goodies, i dont think twice to bake something coconuty. Few weeks back, i couldnt stop myself baking out some dangerously delicious cookies with both coconut and cashew nuts. Cashew nuts is one among my favourite nuts which i never fail to cook with often. Obviously i combined both coconut and cashew nuts together for baking some cheat version of the popular Good day biscuits. I still remember how delicious those cashew nuts loaded good day biscuits will be. I can never forget the taste of this biscuits as much as like the popular bourbon biscuits. Even now, whenever i go to India, i dont forget to grab a packet of these biscuits. Few biscuits are seriously very close of our hearts na.

Ragi Halbai/Fingermillet & Coconut Halwa

Halubai or Halubai, this sweet is quite popular in Udupi,Mangalore and Malnad regions of Karnataka for festivals or celebrations. Often made with rice, jaggery and coconut, this sweet can be prepared well with Semolina aka Rava and Fingermillet aka Ragi. I have already tried making this Halubai with Semolina and you can find here for an another event. And my today's post is going to an another version of Halubai cooked with a millet which is quite interesting and healthy to add in our diet. I have been cooking with ragi flour aka fingermillet flour for a while. I do add them in my parathas, in most of my bakes and not to forget that this millets have their own place in my pantry. Healthy and definitely a nutritious millet to add often in our weekly diet, this millets are one of my favourite. However this millets are used for making many traditional village style sweet dishes like ragi jaggery adai, simli etc.. Coming to my today's Halubai, its a must to try as this sweet is definitely a delicious one.

Cashew Coconut Milk Pulao

We love briyani during anytime of the day, obviously i will definitely make biriyani atleast twice a month especially on week-ends. Most of our Sunday lunch will be either biriyani or pulao. Served along with a rich, creamy curry or side dish, one can finish their lunch or dinner happily without any fuss. I have already dished out couple of pulao and my space have varieties of pulao cooked either with vegetables, seafoods or meats. However my today's recipe is one of easiest pulao one can dish out quickly without any hassle. Even if you ran out of vegetables or meats, this dish will make everyone happy as this dish is full of flavors. With a handful of cashewnuts, garam masala and homemade coconut milk is quite enough to prepare this pulao.

Badam Murukku/Spicy Almond Chakli

If you have already tried your hands with Cashew murukku like me, you will definitely love making this almond murukku. And here comes my own version of almond murukku with a spicy almond paste. Usually murukkus are prepared easily  at home with less efforts. And this almond murukku is prepared with store bought rice flour, roasted gram flour which i simply spiced and flavored with a grounded paste of soaked almonds and dry red chillies. Though i used almond paste for making this incredible murukkus, you can still replace the almond paste with almond powder which suits prefect to make this dangerously addictive murukkus. With Diwali in a week, dont forget to check this incredibly delicious chaklis to celebrate this year's festivals of lights.

Coconut Mawa Burfi/Khoya Coconut Barfi

Burfi is definitely a tasty Indian sweet recipe which is very much often cooked during many festivals and occasions. Though burfi can be prepared with different combination of flours or ingredients, its quite an easy sweet dish which can be prepared with an ease. Mawa or khoya which is a popular milk solids quite often used in many Indian sweets. Mawa is easily available in India though its quite an hard task for me to get them fresh as much as like we get in India. Obviously i will prepare mawa at home with full fat milk or else an another popular cheat version prepared with full fat milk powder and heavy cream. Trust me, this full fat homemade mawa works amazingly awesome for many delicious milk based sweets at home easily and quickly.

Besan Badam Laddoo/ Gluten Free Gramflour Almonds Laddoos

Diwali is around the corner and everytime i will keep on looking for this festivals of lights to celebrate at home with my family. Again this year Diwali falls on a week day, but fortunately we are in fall break here. Hence this year's Diwali is going to be more fun than last year. Actually am planning to make couple of sweets and savouries for this occasion. I usually make laddoos with besan boondis which is quite a popular diwali sweet. Boondi laddoo calls for deep frying and sugar syrup to dish out these ultimate cuties. However easy version of Besan laddoos do exists and one among those easy laddoos is my today's Besan Badam Laddoos. One of the easiest laddoo i have prepared till today and quite a delicious one to share with your family and loved ones.

Nuts & Fruits Oats Breakfast Bars

If i pick 'Wholegrains' as theme for this week's Mega marathon, how can i keep myself away from Oats. Yes oats, this fibre rich grains are my most favourite wholegrain which i never fail to grab them whenever i go to the grocery. Oats is an another versatile wholegrain which works awesome to cook any sort dishes with. I have already dished out many delicious with this incredible grains. Oats makes an excellent breakfast, yes it a great way to start you day with this incredible grain. Add your favourite nuts and fruits to a bowl of your oatmeal. You can add oats in your daily menu, yes use oatmeal while baking some cookies which is quite a favourite evening snacks for kids of all ages. Dont forget to add oats flour or whole oats while baking muffins or breads. And also sprinkle oat bran in your hot or cold cereal. Oats are an excellent source of manganese, they are also very good in phosphorus and a good source of copper, vitamin B l, dietary fiber, zinc and protein.

If you love sesame seeds and jaggery poli, then you will seriously enjoy this peanut poli. Its one of the easiest sweet paratha aka poli to prepare for any special occasions to serve and enjoy with your loved ones. No need of making syrup or stirring the filling. Just grind the roasted peanuts with grated jaggery  along with whole cardamom pods, your filling is ready to make some dangerously addictive protein rich holige. This poli is also from Northern Karnataka where this kind of interesting holige are quite famous, and these sort of sweet parathas have their own place especially in Diwali feast platter.

Mewa Burfi/Mixed Nuts Burfi/Meva Barfi

If you are bored of preparing badam halwa, kaju katli or else coconut burfi for the upcoming Diwali festival, check my today's post. Mewa burfi is prepared with a combination of different nuts and coconut flakes. Mewa means Mixed nuts in Hindi and not to get confused with Mawa or Khoya the popular dairy product used in making many delicious Indian sweets. I crossed this Ultimate Mewa burfi while googling for a different Diwali special sweets. And the best part of this burfi is you can use any sort of nuts you have on your hand. Ricotta cheese plays an important role to whisk up this sweet quickly. Obviously if you want to prepare this nuts burfi with unsweetened khoya, just go on. And trust me, this burfi is definitely an easy breezy sweet to prepare especially for festivals or for a special occasion.

Obviously you can prepare this fantastic slice and bake cookie dough earlier a day, and they are just ready to slice and bake as much as you want or whenever you feel like baking. Looking for a cardamom flavored munchies, then check this different nuts loaded cookies. An extremely delicious and dangerously addictive snack box friendly cookies to munch with your different drinks. I have already tried couple of cookies with nuts as butter cookies. Since i want to make some cookies with a mix of nuts, i tried my hands in baking these cuties. I prepared myself a mixture of grounded nuts meal with Cashewnuts, Almonds, Walnuts. And this mixture of nuts gives a super nutty texture to this easy buttery cookies. Kesar Kalakand/Easy Saffron Ricotta Cheese Milk Burfi

Ricotta cheese, this cheese is definitely a must if you want to try some easy versions of traditional milk based recipes. Trust me ricotta cheese makes excellent milk sweets with less efforts than compared to traditionally prepared milk sweets which calls for few hours of stirring and cooking. Ricotta cheese makes excellent Kalakand aka Milk burfi, it tooks hardly less than 20 minutes. You can prepare this lipsmacking sweets either in microwave oven or else in stove top. And my today's recipe calls for stove top cooking. Obviously you need to stir until the cheese mass comes out of the vessel. Since i want a rich looking milk burfi, i couldnt resist to add a generous pinch of Saffron and trust me this kalakand makes a rich sweet to serve after a meal.

Chestnut Chocolate Smoothie Bowl

Once the autumn starts here in Paris, you wont miss street vendors selling freshly roasted chestnuts which is quite common in every street corners. Freshly roasted chestnuts are our favourite street food obviously we never miss to get them. Then later i came to know how to roast and steam cook chestnuts at home which is quite similar to roasting/steam cooking peanuts but it will take more time to get roast/steam cook. Roasted chestnuts tastes fabulous while the weather is too nasty. When i picked Seasonal Special as theme for this week's blogging marathon, i seriously want to give a try to a different dish with chestnuts. Hence i want to give a trial with a smoothie bowl with steam cooked chestnuts and this smoothie came out extremely delicious. Trust me, we enjoyed thoroughly our smoothie bowl for our sunday brunch.

Eggless Crispy Almond Cookies With Chocolate Chips/Thin Almond Cookies

Crispy Almond Cookies, trust me these scrumptious cookies are dangerously addictive. Usually i love to indulge chewy cookies, while googling few days back i accidently saw these crispy cookies.Though i was bit intrigued by these crispies, i gathered all the ingredients to give a try to these nutty cookies. Almost like butter cookies, these crispy almond cookies calls for butter, obviously this cookies are loaded with butter and chocolate chips. This cookie dough gets ready very much quickly though this dough sits for half an hour in freezer or for an hour in fridge. However apart from this, these cookies gets completely baked within 15 minutes.

Vegan Saffron Cashew Pilaf

Pilaf is a rice dish which is prepared or cooked in a seasoned broth. Though this rice ressembles as much as like Indian pulaos or briyanis, pilaf calls for easy breezy preparation. Depending upon the local cuisine, meat, vegetables, nuts, pasta or else dry fruits are added to the pilaf. Pilaf is a staple food and a national dish in most countries. Pilaf makes an excellent lunch or else a Royal feast when served along with rich side dishes or else with grilled meats. Eggless Chocolate Walnut Rolls

I have been baking often now as am in summer vacation. After an exciting trip to Sicily we came back home with full enthu. Everyone at home just missed my homemade breads and hence i kick started baking by baking out this alluring eggless, chocolate walnut rolls which tastes more delicious than the usual cinnamon rolls. Since none at home want cinnamon rolls for their snacks, i simply went with a chocolate based walnut rolls. This rolls are completely eggless and not vegan. Yes butter and milk plays an important role for preparing this bread dough. Am running this month's blogging marathon with Go nuts as this week's theme. Obviously i will be posting three different nuts based dishes for this week's theme.
