Spiced Clementine Marmalade

Its almost going to be spring season here, obviously citrus fruits like oranges, celementines or manadrins have to leave their place in fruit stalls for spring seasonal fruits and vegetables. What you will do if you have sour clementines at home, actually the last batch of clementines i bought before the season ends turned out super sour.Obviously we dont even want to touch them. Since i dont want to trash them , i cant think anything rather than making some marmalade with those clementines. Needless to say anything sour when cooked with sugar will definitely become sweet na, hence this spiced marmalade. Actually i used cinnamon stick to spice this ultimate marmalade, and trust me this marmalade is a super easy recipe. Yes a simple cooking process, if you love citrus marmalade, am sure you will definitely love this fantastic marmalade.

Galettes des Rois à la Confiture de Lait/ French King's Cake with Milk Jam

Galettes de Rois is well known as King's cake in France, this cake can be called as three kings cake,king cake, king's cake and its easily available during the festival of Epiphany at the end of the Christmas season. Traditional King's cakes are made of sweet brioche dough in the shape of a hollow circle with a glazed topping sprinkled with coloured sugar. Though this yeasted brioche bread style of king cake do exists, king cakes are also made with puff pastry sheets, filled with a delicious fillings along with a small figurine hidden inside. The most well known filling of this King's cake is frangipane filling which is prepared usually with almond powder, however now many King's cake with different fillings are easily available in stores. Every year, these King's cake have their important place in every home especially after New year.Many people says that the small figurine hidden inside the cake represents Baby Jesus, but now the figurine changes from Bakery to bakery and often represents a hit movie or other cultural icon.

Mini Jam Crescent Rolls

Its been a while i posted crescent rolls with homemade bread dough. Crescent rolls makes a prefect dinner rolls to serve along with a bowl of soup or else with grilled meat. But for a change i stuffed the usual crescent rolls with strawberry jam, obviously this cute crescent rolls makes an excellent evening snacks or breakfast. But trust me, this crescent rolls gets disappears once they comes out of the oven. Whenever i have some leftover bread dough at fridge, i wont forget to make crescent rolls, most of the time i do stuff with nutella but this time i couldnt resist to make the usual chocolate dinner rolls to jam crescent rolls. Trust me, these cuties are very quick  and very simple to prepare.

Eggless Blueberry Jam Muffins

Am an ardent fan of blueberries but its not season for blueberries here, obviously if you are craving for blueberries loaded bakes, you can either go for frozen ones or else blueberry jam. My today's post goes for this simple eggless muffins just baked with blueberry jam, just to satisfy my cravings for blueberries. As usual, this muffins goes for simple ingredients and definitely an excellent baked goodies to enjoy as breakfast muffins if you are in hurry or simply for your evening snacks, obviously the choice is yours.This muffins are my last post of this week's theme cakes and muffins, as am running a whole month of blogging marathon with Baking as theme.Sending to Srivalli's Anniversary Mela.

I dont want to bore again by saying again and again that baking is one of my most favourite passion and i love to make varieties of bakes at home. Baking have became a part of my life and i love to challenge myself by participating in few of the baking challenges.Today my small group of friends are celebrating one among our friend, enthuastic blogger, a sister Shama Nagarajan who blog's about Easy 2 Cook Recipes. I know Shama since a long as a blogger, but before a year we got very closer by chitchatting through the famous social network. Now we talk to each other whenever time permits and the bond between us is growning on day by day.

Jam Puffs

Evening snacks are very important for me especially for my kids,kids will always come back home after a long busy day at school obviously they will expect to have something filling and satisfying as evening snacks.Evening snacks are more challenging than main dishes for me, usually i'll try to give healthy and hassle free evening snacks but sometime i do go for fatty evening snacks depending upon my mood and the ingredients available in fridge. One of my recent trial is this just 2 ingredients evening snacks. Yes this Jam puffs goes for store bought puff pastry sheet and few teaspoons of strawberry jam. Once baked,you will get some flaky,fruity,jammy puffs to enjoy with your cup of coffee or tea or else simply with some warm milk.

Puffs, this flaky snacks goes obviously for puff pastry sheet which is easily available here and i'll always stock them in my fridge as they are handy and very useful to make many evening snacks out of it.Coming to this jam puffs, they are just prefect for an evening snacks which gets ready easily,trust these jammy puffs are seriously very addictive and kids will go crazy if they saw this flaky puffs. I prepared this puffs just with strawberry jam, but still you can replace it simply with different jams or else with nutella.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#40.

Eggless Jam Swirled Muffins

Have you ever tried jam swirled muffins?? if not dont forget to make some if you are planning to bake muffins. Seriously these tiny cakes aka muffins are just divine, and while baking needless to say how the home smells. This eggless jam swirled muffins are our this month's challenge for Baking Eggless, owned by Gayathri and the host of the month is none other than me, yep i suggested this easy breezy but yet a delicious muffins to my fellow partners of this challenge from Patricia's space.I love jam tarts or cookies with jams,obviously if you love jam in your baking, am sure you will definitely enjoy this wonderful bake.

Since the original recipe went for 2 eggs and butter, i replaced both egg and butter with a cup of yogurt,quarter cup of milk along with half cup of oil  and used store bought strawberry jam. Seriously you wont miss eggs in this muffins and they turned out extremely super spongy, when served with masala chai these muffins tastes extremely divine and we loved it.Sending this cuppies to Guru's Giveaway - Kid's Special.


2cups All purpose flour
1/2cup Sugar
2tsp Baking powder
1/2tsp Baking soda
1cup Yogurt
1/2cup Oil
1/4cup Milk
1tsp Vanilla extract
1/4cup Strawberry jam

Preheat the oven to 350F, line the muffin tray with muffin papers.

In a bowl, sift the flour,baking powder,baking soda and salt.

Add the sugar and mix, meanwhile in a small bowl whisk the yogurt,milk,oil,vanilla extract.

Pour the wet ingredients to the dry ingredients, whisk lightly. Dont overmix the batter.

Add the jam and whisk lightly, to keep the marble effect.

Spoon the batter evenly to the already prepared pan and bake for 15-20minutes until a skewer inserted comes out clean.

Transfer to wire rack and cool it.

Carefully remove the muffins from the pan, cool completely and enjoy.

Brioche Rolls with Strawberry Jam

Brioche, an incredible spongy bread highly light and super puffy with a rich and tender crumb. These bread are loaded with eggs and butter. Since ever i tried brioche with less butter, am making my brioche quite often at home with different filling. Recently i prepared this damn cute looking brioche rolls and we had this jam filled brioche rolls for our sunday's brunch.

With a cup of coffee these rolls are simply filling and an excellent breakfast rolls to enjoy without any hesitation. As brioche is often cooked with fruits or chocolate chips, i went for strawberry jam for the filling. A big hit among my kids and they simply love it, you can go for any other filling as you desire,my next brioche rolls is going to be filled either with nutella or cinnamon-chocolate chips. As jam filled brioche rolls are bit hit at home,do i need to say how everyone at home will love the nutella filled brioche rolls.Sending to 60days of Christmas hosted by Priya and Divya


3cups Bread flour or all purpose flour
1tbsp Active dry yeast
1/2cup Milk (luke warm)
3nos Egg yolks
1/4cup Sugar +1tsp Sugar
1tsp Salt
70grms Butter
1no egg yolk+1tsp Milk (for brushing)
Strawberry jam as per need

Mix the yeast,a teaspoon of sugar and salt to the luke warm milk, keep aside until the yeast turns foamy.

Meanwhile take the flour,egg yolks,sugar in a large bowl, add gradually the foamy yeast and turn everything as a soft dough, now add the butter and knead everything for 10minutes.

Arrange the dough in a bowl covered with a towel,keep aside for atleast for 2hours until they double their volume.

Knead the dough again for few minutes and divide the dough as 8-10medium sized balls.

Dust a ball with enough flour, roll it as a medium sized  rectangle disc, place a teaspoon of the jam and cut the bottom part of the dough as small strips.

Roll the jam placed part gently and place the strips one by one over the rolled part of the disc.

Repeat the same process with the dough and keep the rolls over a baking sheet and let them sit in a warm place for an hour.

 Preheat the oven to 350F.

Mix the egg yolk with milk for brushing together, now brush the uncooked brioche rolls generously and bake them for 20-25minutes until the crust turns brown.

Cool it completely on a wire rack.

Eggless Custard Thumbprint Jam Cookies

Making out cookies with custard powder is in my to do list since a long, finally i prepared some custard thumbprint cookies as eggless version last weekend. This cookies goes for simple ingredients and seriously very addictive, i baked almost two dozen of this cookies and i just had a chance to taste two cookies only. Yep they just vanished quickly,especially among the lil ones.

These cookies are super delicious and buttery, with strawberry jam i dont have words to say how yummy these cookies are.You can use any kind of preserves or else nutella spread to fill this easy breezy thumbprint cookies. My next try is gonna be surely a nutella filled thumbprint cookies, as these cookies are super duper hit among my kids.Sending to my own event Healthy Diet- Healthy Finger Food guest hosted by Preeti of Isingcakes.


2cups All purpose flour
1/2cup Custard powder
1cup Butter
1/2cup Confectioner's sugar
1tsp Vanilla extract
Strawberry jam (as per need)

Prheat the oven to 350F, line baking sheet over a baking tray and keep aside.

Sift together the all purpose flour and custard powder, add in the vanilla extract,keep aside.

Whisk the butter,confectioner's sugar together until they turns creamy, add immediately the flour-custard powder mixture and gently mix until they forms as a soft dough.

Shape the dough into small walnut sized balls and flatten them gently. Place them on the lined baking tray.

Make an indentation in the middle of the each cookie and bake for 15-20minutes.

Meanwhile heat enough strawberry jam in microwave oven for few seconds.

Once the cookies gets cooled, fill the cookies with the melted jam.

Enjoy with a cup of tea.

Buttery Jam Tarts~~Sweet Punch

Our this month"s Sweet Punch challenge was this simple,addictive and extremely irresistible jam tarts..Thanks a ton to Ria for choosing and sharing this yummy tarts with simple ingredients which goes for quick preparing process, this tarts are completely eggfree i really want to mention this, coz for me tart cannot be prepared without eggs, but Ria proved we can make super delicious tarts even without eggs..I prepared 8 individual tarts with the ingredients given by Ria eventhough she prepared 12 with them, i used my muffin silicon mould for making them, its doesnt helped me very much for making prefect shape,yep i was quite disappointed by the shape but tastewise these tarts turned stunning and super fabulous..Am planning to get some mini tart moulds to make out again this delicious jam tarts..


115grms Flour
60grms Butter (chilled)
1/2tsp Baking powder
4drops Chilled water
Jam as per need

Mix and sieve the flour and baking powder together, add the butter and rub it with your fingers until they turns as bread crumbs, add the water drops and mix them well...

Fill the tart moulds with this dough,spread them equally by rotating the mould, fill the tart with jam,(fill 2/3 of the dough with the jam) bake at 350F for 15mins..Let them cool completely,remove from the moulds once it gets cool completely..

Enjoy this buttery jam tarts with a cup of tea..

Spiced Apple Jam

Am bored of making applesauce and pies with apples, i really wanted to make apple jam along with some spices..I tried making this flavourful delicious apple jam at home with grated apples,cloves and cinnamon stick with less sugar and honey, this jam turned out simply awesome,quick to make also at the same time this jam goes for a simple and easy preparation...This jam tastes fabulous when served along with brioche, yep with a mild cinnamon and cloves flavour, this jam suits prefectly to serve along with pancakes and bread slices..Needless to say that this jam is our recent family favourite..


3cups Apples (finely grated)
3nos Cloves
1no Cinnamon stick
1/2cup Honey
1/2cup Sugar
2tbsp Lemon juice

Take the grated apples,honey and sugar in a heavy bottomed pan, bring boil and cook in simmer with cloves and cinnamon stick until it gets thickens..Discard the spices and finally add the lemon juice and cook for few minutes..

Keep aside and let them cool completely..Enjoy with breads or pancakes...

Peach Jam

I love to prepare preserves and pickles anytime at home also i never stopped making them..Yesterday i prepared this delicious peach jam at home with my mini chefs..They peeled the skin of peaches,chopped them and helped a lot for stirring and all...They were very much proud of their first homemade jam and they enjoyed having with bread slices for their snacks and for their today's brunch...Delicious jam goes for quick preparation,it took half an hour for us to get ready,i didnt used any preservatives in this jam coz am avoiding those things in our foods..If you conserve this jam correctly,they can stay prefectly for a month in fridge..


2cups Peaches
1tbsp Lemon juice
1cup Sugar

Blend the peaches as puree, take the peach puree, sugar together in a large pan and cook in medium flame until its gets thickens, add the lemon juice and cook for few minutes..

Keep aside and let them cool completely..enjoy with toasted breads or with pancakes...

Strawberry Jam & Coconut Fudge-My 1,500th Post

My blog baby is only two years and 5months old,but today i reached my 1,500th post am soo excited and i have no words to explain how happy i am...Nothing is possible without my blogger buddies non stop encouraging comments and continous supports by visiting my blog baby...I can say so many beautiful things happened to me after coming to this wonderful blogsphere..I won so many beautiful events, obviously my first cookbook i got for my book shelf is from this fabulous blogsphere..Even two days back, i won a contest by great Indian chef Sanjeev Kapoor, have no words to explain how happy i am..Coming to this strawberry jam and coconut fudge, i tried out making this easy breezy fudge few days back for my friend's kid's birthday party as the theme for the party is sweets with fruits..Initially i wanted to make some pannacotta which was completely easy and quick for me, finally my friend proposed me to make some Indian sweets which coconut..After a discussion and hesitation, i tried adding some strawberry jam to our usual coconut fudge...This fudge was a big hit among kids, obviously it was one of the best dessert,all the kids loved at the birthday party..

Strawberry Jam & Coconut Fudge

3cups Dessicated coconut
1cup Milk
1+1/2cup Sugar
1tbsp Cardamom powder
1tsp Ghee
4tbsp Strawberry jam
3tbsp Almond powder

Cook the dessicated coconut and milk until the milk get absorbed completely by dessicated coconut and keep aside...Take the sugar in a pan, add enough water to cover the sugar, bring to boil and cook until the sugar syrup gets two string consistency, add the dessicated coconut, strawberry jam, almond powder and cardamom powder and cook until the mixture turns thick,transfer the mixture to the greased bowl..keep aside until the fudge gets cool..

Slice the fudge as desire and enjoy!!

Microwave Plum Jam

Am tried making out jam through microwave oven for the first time, for my surprise they turned out really tremendous and we enjoyed having these glossy and delicious plum jam with toasted bread for our breakfast and along with pancakes for our snacks..We loved this glossy plum jam and this jam takes out less than 40minutes in microwave to get ready and this jam tastes fantastic, even i dont believe my eyes when i saw this glossy plum jam..Within three days, we already finished half of the bottle, hope u would have guess how tasty this jam was...Sending this eye catching plum jam to MEC-Fruits guest by Nivi, event by Srivalli...

MW Plum Jam

2cups Plum(without skin and seed)
1cup Sugar
1tbsp Lemon juice

Chop roughly the plums..Take the chopped plums, sugar in a microwave safe bowl and cook in high for 30minutes (stir twice in between)..now add the lemon juice and cook again for 10minutes until the jam turns glossy but bit watery..

Keep aside and let them get cool completely..fill the jam in a sterile bottles and enjoy with toasted bread or either pancakes..

Strawberry Jam Badam Milk

Last week, i had sudden guests at home..i really want to prepare something but quite easy for dessert as some drinks, while preparing the lunch, i went through my pantry n saw a bottle full of whole blanched almonds..immediately i thought of making badam milk, to give a twist i have added few tsp of strawberry jam to the milk, i served to my guests as luke warm strawberry jam badam milk..they enjoyed having this milk and i was very happy to see that they liked much...Few tsp of strawberry jam turned out my usual badam milk as very much tastier n flavourful drink..This is my entry to Lets Go Nuts - Almonds guest hosted by JZ of Tasty Treats, event started by Aquadaze....


30nos Almond pieces
2cups Hot milk
3tsp Strawberry jam
1tbsp Strawberry syrup
Sugar r honey (if needed)

Soak the almond pieces in hot milk for atleast 1 hour, grind them as fine paste with half a cup of milk along with strawberry jam n strawberry syrup, honey r sugar (if needed), i didnt add sugar r honey coz the jam n syrup i used are quite enough to turn the badam milk sugary...

Add the remaining milk and stir everything well..

Serve them as luke warm badam milk!!!

Crêpes With Strawberry Jam - Famous French Pancakes

Crêpes are thin pancakes that can be filled either with vegetables fillings r with jams, nutella n fruits...If u would have visited Paris, u might have saw the roadside shops n their famous crêpes..each n every historical places surely would have these crêpes vendeurs, who prepare this pancakes in front of u n serve hot with chocolate fillings , jams r just with sugar..Last tuesday, French people celebrated the festival of crêpes..these pancakes will ressemble similar to our maida dosas...we love this pancakes and i prepared them saturday..


1cup All purpose flour
1no egg
1+1/2cup Milk
1tsp Vanilla essence
2tsp Butter (melted)
1/4cup Sugar (optional)
Oil r butter for making crêpes

Whisk everything together until they turn smooth, the batter should be bit watery...heat a skillet r pan, drizzle few drops of oil r melted butter, pour a ladle full of batter in the center of the pan , move the pan in clockwise until the batter cover the entire bottom..cook until they turns lightly golden n cook another side for few minutes..

Transfer to a plate n fill the crêpes with strawberry jam r anything else as u desire, roll them either as triangles r as cylinderic.. can conserve them in fridge for 3 days n heat in microwave whenever u need for.

Beetroot Jam

Never i realized that its very easy to make jams at home until i tried this beets jam..its really simply easy also i was happy of my preparation..i bought some fresh beets, finely i prepared them as jam..personally i would like say that this jam is really a delish...i loved them with baguettes n with hot chocolate..


3nos Fresh Beetroots
1cup Sugar
1tbsp Lemon juice

Peel the skin of the beetroots, pressure cook them without water upto 5 hisses...keep aside n let them cool..
Grind them as fine paste in a blender r food processor..take a heavy bottomed vessel, add the sugar, grounded beets paste n bring them to boil...now put the flame in simmer, close the vessel with lid, stir them occasionally...


While opening the lid, take away the vessel from the flame n stir them, else they may splutter...keep on checking n stirring occasionally until they get thickens..add the lemon juice to the jam n put off the stove...keep aside n let them..

Conserve them in a air tightened box n arrange them in fridge after a day..serve them with bread slices, even with idlies r with dosas..
