White Bean Soup & Oats N Coconut Milk Pudding - Tried & Tasted From Madhuram's Eggless Cooking


I just love Madhuram's Eggless Cooking site, before starting this blogsphere i dont even know how to bake cakes as eggless version, i always run behind eggs for making out cakes,even i doesnt know wat to subsitute for eggs while baking, i can definitely say that Madhu was my inspiration for all my eggless version of bakes, really i learned through her blog so many eggless baking and i bake now without eggs and with healthy egg substitute, she is such a wonderful and creative cook and baker, i learned so many variety of dishes using many healthy ingredients like replacing the all purpose flour with white whole wheat flour, rolled oats etc..I really want to appreciate Madhu's kindness towards me by offering cook books which i never had or bought before, i got my first cookbook through her coz of my continous participation to her events, really so nice of her na!!...I came to know through her blog about flax seed meal, energ powder etc, which i never ever crossed my life before learning through her blog..She have a beautiful collections of healthy and eggless bakes with awesome clicks, if u go through her blog u will definitely get confused wat to choose and wat to cook, i have bookmarked so many of her dishes to try and Poornima of Tasty Treats choosed Madhuram's blog for this month Tried & Tasted Event..Needless to say how happy i am, its really a great opportunity to try and taste many of delicious dishes from Madhu's blog..here i start with a delicious healthy white bean soup and delectable oats and coconut milk pudding, yet to come more..Obviously am sending both this dishes to T&T-Madhuram's Eggless Cooking guest hosted by Poornima of Tasty Treats, event started by Zlamushka..


White Bean Soup:  U can find the original recipe here


2cups White beans (canned and drained)
1no Onion (chopped)
3nos Tomatoes (chopped)
2nos Garlic cloves (minced)
1no Carrot (chopped)
2no Celeri rib (chopped)
1/2tsp Dry thyme leaves
1no Bay leaves
2cups Vegetable Stock water
1/2tsp Pepper powder
Salt
Olive oil

Heat the olive oil and sauté the onions with bay leaves, add the chopped carrots, chopped celeri and cook until they turns tender, add now the chopped tomatoes, garlic cloves and thyme leaves and cook everything for a while, meanwhile grind a cup of white beans as fine puree and keep aside...add now the remaining white beans, vegetable stock water, pepper powder, white bean puree to the vegetables and cook in medium high flame, keep stirring for few minutes..once the soup get thickens, put off the stove..

Serve hot with toasted bread slices..Am sending this white bean soup to Sireesha's Soups N Juices Event..


Oats N Coconut Milk Pudding: U can find the original recipe here
1/4cup Quick cooking oats
1/4cup Jaggery
1cup Coconut milk
1/2cup Water
Few cashew nuts
1/4tsp Cardamom powder
1tsp Ghee

Make a thin syrup with water and jaggery, strain this jaggery syrup and heat again in a pan, add the oats and stir for 2-3minutes,now add the coconut milk to the oats-jaggery mixture, once its starts boiling put off the stove..heat a tsp of ghee and fry the cashewnuts until they turns brown..finally add the fried cashew nuts and cardamom powder, give a stir..

Serve hot or warm or cold!!
