Eggless Whole Wheat Garlic Rolls

Since ever i saw this flavourful garlic rolls at Suhaina's space, i was planning to prepare them as healthy garlic rolls with whole wheat flour,eventhough i prepared twice the same garlic rolls with all purpose flour..But this time i simply prepared the same garlic rolls with whole wheat flour and homemade garlic-coriander leaves spread..These rolls are quite addictive and can enjoy having them anytime of the day,eventhough we had them warm with a cup of tea for our yesterday's evening snacks..With a super garlic flavour this rolls tastes absolutely marvellous and definitely super healthy coz of the whole wheat flour i used for..This month's Sweet Punch Challenge was to choose and bake something of our choice, as i choosed to bake our favourite garlic rolls with whole wheat flour and sending this incredible addictive garlic rolls to sweet punch team.


2cups Whole wheat flour
1tbsp Active dry yeast
1tsp Sugar
1tsp Salt
1/2cup Luke warm water
2tbsp Olive oil
Few sesame seeds

Garlic-Coriander Leaves Spread:
50grms Butter (room temperature)
3nos Garlic (grated)
2tbsp Coriander leaves (chopped)

Add the yeast,sugar and salt to the luke warm water and keep aside until the yeast turns foamy..Meanwhile make the garlic-coriander leaves spread, by adding the grated garlic and coriander leaves to the butter,mix well and keep aside..

Take the wholewheat flour in a bowl,add gradually the foamy yeast,olive oil and water (if needed) and knead as a soft and smooth dough,cover the bowl and keep the dough in a warm place for two hours..

Once they doubled their size,punch down the dough,dust the dough with flour and roll them as a thick rectangle disc.

Spread enough garlic spread and roll them as a loaf, cut the rolled loaf as 8-10 pieces, arrange them over a greased round baking pan,sprinkle the sesame seeds as per need also brush the remaining garlic spread over those unbaked rolls if needed,let them sit again for few minutes in warm place..

Preheat the oven to 350F, arrange the baking pan in middle rack of the oven and bake for 25-30minutes until the crust turns golden brown..

Serve warm with a cup of tea..

Mollete/Spanish Antequera Bread Rolls

After some soft pancakes from Somali and a bowl of comforting soup from Sudan, my today's post is from Spain. Yes my theme for this week's blogging marathon is Pick a Alphabet,3 Countries as theme, and i picked 'S'. Hence i grabbed a popular Antequera bread rolls aka Molletes for this theme.This Molletes are super soft and delicious bread rolls which is typically served for breakfast or for a afternoon tea. And this bread is originally from Antequera which is just 30kms from Spain. Mollete is also a typical food of Mexico as well, and its consumed as a open sandwich. However this Spanish Mollete is a piece of a soft crumb bread which is quite known as an Andalusian breakfast bread which is quite like a star product of this region after Olive oil. The typical way of having this bread is to serve with olive oil, salt, tomato and garlic. Usually they are eaten as split, drizzled with olive oil, salt. If you want to make more filling, dont forget to add some sliced tomatoes and chopped garlic cloves to tickle your tastebuds.

Pudachi Wadi/Coriander Rolls~~IC Challenge

Usually i post my  Indian Cooking Challenge post everytime earlier but this time i was bit late..Shall i blame the blogger for being down for almost a whole day, may be am was bit lazy to post it earlier, watever i enjoyed very much this month's challeng...Srivalli choosed this wonderful looking coriander rolls from Archana's Tried & Tasted Recipes, we guys have to a say a big thanks to Archana for sharing this coriander rolls,which i never heard or had..I couldnt stop munching this crispy beauties and we loved it...Pudachi wadi is quite famous Maharashtrian typical recipe which goes for a wonderful filling with fresh coriander leaves..Once i fried these rolls, these rolls vanished very quickly and easily when served along with tomato ketchup, needless to say that am gonna make quite often in future for the sure..

Pudachi Wadi

For Covering:
1cup Besan flour
1cup Wheat flour
1/2tsp Chilly powder
1/4tsp Turmeric powder
2tbsp Hot oil
Salt
Oil for deepfrying

For stuffing:
2cups Coriander leaves
2tbsp Coconut (grated)
1tbsp Poppyseeds
1tbsp Sesame seeds
Salt
1tsp Ginger-green chilly paste
3nos Garlic cloves (chopped finely)
1no Onion (chopped)
1/2tsp Chilly powder
1tsp Lemon juice
Sugar
Oil

For paste mixture:
1tsp Garam masala
2tsp Tamarind pulp (thick)
Oil

Make a soft dough with all the ingredients given under list for covering except the oil for deepfrying, keep aside..

Meanwhile make the paste mixture, by mixing the ingredients given as a paste and keep aside..
Roast the poppyseeds, sesame seeds and coconut one by one and grind them coarsely together, heat enough oil, saute the onions until they turns soft, add the ginger chilly paste and garlic,fry for few minutes..now add the grounded coconut-seeds mixture, coriander leaves, salt ,sugar,lime juice and chilly powder, cook for few seconds and put off the stove...

Make small balls from the dough and roll them as medium size discs,brush the rolled disc with the paste mixture, place enough the coriander leaves masala, bring the both edges of the rolled discs together, seal well the edges..repeat the same process until the dough get finished..

Cook the prepared rolls slightly in a hot tawa and deep fry them until they turns golden brown in hot oil..drain the excess of oil and serve warm with ketchup..

Chickpeas Potato Kathi Roll/Channa Aloo Chappathi Wraps

Chickpeas, this beans are available all time of the year and its often found in grocery stores either as dried ones, tinned or else packed. Chickpeas are high in proteins, fiber with vitamins and minerals. The most common type of chickpeas are white/beige, but other varieties do exists. You can also find chickpeas as black, green and red variety. Originally cultivated in Mediterranean and in Middle East, this beans is also known as Garbanzo beans. Chickpeas are very much used in Indian cuisine, vegetarians add this beans often in their cooking and the most popular Indian dish with this beans is the famous Punjabi Pindi Chole. Served along with Bhature, a puffy fried beauty, this pindi chole is definitely a favourite dish of many Indians. Not to forget, this beans are cooked very much in many International cuisines. However being an Indian, i dont forget to add this ultimate beans in most of my dishes just to feed my small familly easily as this beans are loaded with proteins.

Paneer Soya Mini Frankies

After a long we, a bunch of food bloggers are going to run a whole month of blogging marathon. So this month is going to be bit hectic for me as i have few more challenges and many more household stuffs to to. Srivalli,the brain child of this blogging marathon proposed this four weeks of blogging with four themes for a week. Thats sounds truly very interesting na, for this first week its going to be occasional.. Anything that goes under this category is going to be showcased during this whole week and i'll posting from today onwards my special occasional dishes, which suits prefectly for a birthday party.

For the first day, i want to share a kid's friendly starter, a starter is a must for a party and i cant imagine mine without a starter. Kids love to have finger foods very much as their starters, frankies works wonder among kids, if its with paneer am sure they will just love it.I tried adding minced soya to make the stuffing more interesting and healthy at the same time along with paneer. Kids will rarely say no to frankies, frankies are quite easy to prepare,if in case you make mini frankies the preparation time goes seriously less time when compared to the usual frankies.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#27.



For the dough:
1/2cup All purpose flour
1/2cup Wheat flour
2tbsp Oil
Salt
1/4tsp Baking powder

Combine all the ingredients in a bowl,mix well and knead as a stiff dough with enough water, keep aside for half an hour.

Roll out thin large chappathis from the prepared dough.

Heat a non stick tawa, put the chappathi, drizzle some oil and cook until they get well cooked on both sides.

For stuffing:
1cup Paneer (crumbled)
1/4cup Minced soya granules (cooked)
1/2cup Green capsicum (chopped)
2nos Onions (large & chopped finely)
1tsp Ginger garlic paste
2nos Green chillies (chopped)
1/2tsp Red chilly powder
1/2tsp Garam masala powder
1tsp Coriander powder
Few chopped coriander leaves
1/2tsp Fennel seeds (crushed)
Salt
Oil

Heat enough oil in a pan, fry the crushed fennel seeds, add immediately the chopped onions,chopped green chillies and ginger garlic paste,saute until the raw smell goes away..

Add the cooked soya granules, crumbled paneer,chopped green capsicum,salt,red chilly powder,garam masala powder and coriander powder,cook everything in simmer until everything gets well cooked..

Finally add the chopped coriander leaves and put off the stove.

Keep aside.

Assembling:

Put enough stuffing in the centre of the prepared chappathis, fold it tightly..

Cut the rolled rolls as two equal rolls, wrap it with a aluminium foil. Finish the remaining chappathis.

Serve with ketchup.
