Chickpeas Quinoa Tabbouleh/Vegan Chickpeas Quinoa Tabbouleh Salad

Am kickstarting 4th week of Mega marathon with my family's favourite beans aka chickpeas as am showcasing a Dry bean a week with 5 ingredients for 5 weeks as theme under Cooking Carnival as title.Chickpeas/Channa/Garbanzo beans is one the healthiest food which can be cooked as many delicious foods.This Garbanzo beans are included in everyday's diet around the world and many traditional dishes from Middle East, Mediterranean region and few countries in Africa is prepared with this incredible legume. The nutritional benefits of this beans includes Protein, vitamins, minerals which is often included in many nourishing foods. This beans offer many health benefits such as boosting digestion, helping to keep the blood sugar levels stable,helps a lot in weight loss, increasing protection again some disease and many more. Do you know that chickpeas is the most widely grown and eaten bean in the world after Soyabean.

Even Indian cuisine shares many varieties of delicious dishes out of the nutritious chickpeas aka channa. Who can forget channa with Bhatura, our most favourite combo food from our own Indian cuisine. When i picked Dry beans as main ingredients for this Mega marathon, i decided to pick Chickpeas for a week as this beans are our family favourite. My pantry will always have this legume as i include this beans often in our weekly menu. Everyone at home love anything cooked with Chickpeas and watever cooked with beans is definitely a big hit among my kids.I always have a bag of already soaked chickpeas in my freezer as they are really handy to cook up when you dont have enough time to soak this beans. Coming to my today's post, its a summer friendly salad with Quinoa and chickpeas. Actually Tabbouleh is a Middle Eastern dish often prepared with Bulgur with tomatoes, mint, parsley and onions, which is seasoned simply with olive oil,lemon juice and salt. Chickpeas and quinoa works awesome for making tabbouleh and its quite a complete meal to enjoy while its too hot outside. Tabbouleh calls for chilling hence i make this salad quite often during summer.

Vegan Chickpeas Quinoa Tabbouleh, Chickpeas Tabbouleh

2cups Quinoa (cooked as per package instructions)
1cup Cooked Chickpeas
1/4cup Chopped white onions
1cup Chopped tomatoes
1cup Chopped cucumbers
1/4cup Chopped mint leaves
1/4cup Chopped Parsley leaves
3tbsp Olive oil
2tbsp Lemon juice
Salt
Pepper powder

In a large bowl, take the cooked chickpeas,chopped onions,chopped tomatoes, chopped cucumbers, chopped mint leaves, chopped parsley leaves and toss them gently with olive oil, lemon juice,salt and pepper powder.

Once the cooked quinoa gets cool completely, add the quinoa to this vegetable mixture and toss again gently.

Arrange in fridge atleast for half an hour.

Serve and enjoy with your favourite meats or grilled vegetables.

I made something similar to this priya, a filling salad, quinoa makes it more healthy!!!
