Boxty - Irish Potato Pancakes

As per wiki,Boxty is a traditional Irish potato pancake. The dish is mostly associated with the north midlands, north Connacht and southern Ulster, in particular the counties of Mayo, Sligo, Donegal Fermanagh, Longford, Leitrim and Cavan. There are many recipes but all contain finely grated, raw potatoes and all are served fried.The most popular version of the dish consists of finely grated, raw potato and mashed potato with flour, baking soda, buttermilk and sometimes egg. The grated potato may be strained to remove most of the starch and water but this is not necessary. The mixture is fried on a griddle pan for a few minutes on each side, similar to a normal pancake. Traditional alternatives include using only raw potatoes, boiling it as a dumpling or baking it as a loaf. The most noticeable difference between boxty and other fried potato dishes is its smooth, fine grained consistency.

I picked boxty for this week's theme of a month long blogging marathon, after posting two breakfast dishes from International cuisine, today i want to showcase this Irish traditional breakfast pancakes prepared simply with both cooked and grated potatoes. Served with some cream cheese, these pancakes makes a filling and satisfying breakfast or brunch. Actually this Irish boxty sounds very much like both pancakes and hash brown. Served with Sauteed swiss chard and Irish sausage, this boxty makes a complete meal for St. Patrick's day. However i liked mine simply with a cream cheese topping.Very easy pancakes to make, am sure you will definitely enjoy this boxty for your late sunday brunch.

Irish Boxty,Potato pancakes

Recipe Source: Chow
5 Potatoes
1/2cup Milk
1 Egg
1/3cup All purpose flour
1/4tsp Pepper powder
2tbsp Butter

Cook three potatoes in enough water with salt in medium flame until they gets cooked well.

Meanwhile peel the remaining potatoes and grate them finely, strain this grated potatoes completely with a cheese cloth.

Peel and mash the cooked potatoes well in a bowl, add the grated potatoes, egg, all purpose flour, pepper powder, salt, gradually add the milk and until everything as thick batter.

Heat a pan, grease with butter, drop enough pancake batter, cook the pancake until they turns brown on both sides.

Serve warm.
