Lagan Nu Custard / Parsi Custard

Do you know Parsi's have their own custard, i never knew this until i searched Parsi desserts for this week's blogging marathon. When i saw this Lagan nu Custard i was bit surprised to see how easy this dessert is to make.Lagan nu custard is an irresistible dessert from Parsi cuisine, usually served with loads of nuts and raisins this dessert makes a rich wedding dessert.Not only for wedding, this Lagan nu custard can be served as a dessert after a meal especially for Sunday lunch.This parsi custard can be served hot or cold, with icecream or without depending upon your tastebuds. I served mine chilled and we loved it to the core.

As i told earlier, i will be sharing three different Parsi dishes during this week's blogging marathon as i picked Parsi cuisine as theme. Trust me their cuisine is definitely one among the delicious regional cuisine we have in India. Parsi cuisine is definitely a delightful feast for Non vegetarians, as they cook different and many varieties of food with meats,fish and eggs. Anyhow you can still make Vegetarian Parsi dishes, as they do cook many varieties of vegetarian dishes too, however they cook loads of non vegetarian foods than the vegetarian ones. I enjoyed thoroughly making this Parsi style custard and everyone at home just relished this incredible dessert.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#52.

3nos Eggs
1litre Milk
1/2cup Condensed milk
1/4cup Sugar
1/4tsp Cardamom powder
1/2tsp Vanilla essence

Bring boil the milk, put the flame in simmer.

Add the sweetened condensed milk, sugar and stir for a while until the sugar gets dissolves. Remove from the flame and keep aside,let it cool.

In an another bowl, beat the eggs, cardamom powder, vanilla essence until they turns frothy.

Stir this mixture to the cooled milk, avoid adding eggs when the milk is hot.

Preheat the oven to 350F/180C.

Now divide this mixture into 5-6 ramequins and bake it for an hour until the top turns golden brown.

Remove and let it cool completely.

You can even arrange them in fridge and serve the next day.

Lagan nu custard is a wonderful recipe but loaded with eggs. Somehow my friends tell me that egg is a must to get that perfect one, and here you are with a perfect delicious custard.
