Soup, this dish have their own place in our daily meal once the weather starts too cold or rainy. We are in fall season and obviously the weather keeps on changing everyday drastically. Recently we had a super chilled morning with a super hot sunny evening. Yes you heard me rite, we dont even know how to dress ourselves. Obviously i couldnt keep my summer dresses away as Sun god is showing his head once a while. However the weather will get chilled progessively as we are in Autumn. Soups are definitely a satisfying and comforting meal to keep ourselves warm. I love dishing out soups as they are quick, nutritious, healthy and just prefect to please anyone's tastebuds quickly. And my today's post is definitely a fabulous soup to give a try without any fail. This gluten free, vegan Red lentils soup is a hearty and healthy soup to prepare at home without any hesitation as this soup calls for simple and easily available ingredients.

Tomato Bisque/Indo-French Tomato Bisque
I simply love this week's theme of blogging marathon, do you want to know about the theme. Its 'Adapted cuisine in different Country'. When i picked this theme, i know very well that i will be showcasing one of my favourite cuisine. Obviously i cant think more than Pondicherry. Been born and brought up in Pondicherry, this old French territory in South east coastal region of India is very much known for its French influences in everything. And this Franco-Pondicherrian/Indo French cuisine pulled me to come up with three marvellous dishes which gets its Indian touch eventhough these dishes are quite popular in typical French cuisine.

Vichyssoise/Chilled Leek & Potato Soup
Vichyssoise, is a thick soup made of leeks, onions, potatoes, cream with vegetable stock or chicken stock. This creamy soup is traditionally served cooled though it can be eaten hot. Though this soup is well known in United States, the origin of this soup is still a big question mark, yes this soup is quite an American invention. Trust me, though this soup is a reinvention of a French chef who worked at Ritz Carlton in New york city, you can never find this soup in France. If you want to have this soup in France, you have no other option than making yourself at home.

Thukpa/Vegetarian Noodle Soup
Arunachal Pradesh is in Northeastern part of India and its known for its tribal community. Obviously their food consists mainly of non vegetarian foods. However my today's post is a vegetable soup which is called Thukpa, actually Thukpa is a Tibetan noodle soup which have its origins in eastern part of Tibet . But this dish is quite popular in Nepal, Bhutan and in states like Sikkim, Assam and Arunachal Pradesh in Northeast India. Usually prepared with meats, you can still prepare this quite filling soup as vegetarian version just by skipping the meat part. Loaded with various vegetables and noodles, one can finish their lunch or dinner happily with a bowl of thukpa. And this post goes to this month's Shhh Cooking Secretly event started by me, which is now hosted by Mayuri Patel.

Revithosoupa/Vegan Greek Chickpeas Soup
Last month was Mega marathon and from today onwards we, blogging marathoners are kick starting the usual three days of blogging marathon. You might have noticed that i have been blogging for a whole month with many interesting and traditional dishes from various parts of the world. If you have missed them, dont worry, just check my recap of those delicious 26 baked treats here. And this week's blogging marathon is going to be all about Greek recipes. Yes this week's theme is 'Flavorsof Greece' and am gonna share three different delicious dishes from this incredible cuisine. Sichuan Red Oil Wonton/Vegetarian Wonton in Chilly Oil
Sichuan style of foods calls for spiciness, my today's post goes for an incredible dish which calls for wontons. I have been posting fantastic dishes under a super interesting theme for this week's blogging marathon, yes my theme for this week is Chinese foods you can make at home. After some deep fried Chinese bread sticks and a lipsmacking popular Kung Pao stir fry with tofu, am here today with an another interesting dish. Yes my today's dish calls for wontons, these chinese dumplings are very much known around the world, especially the wonton soup and fried wontons. The wonton soups in Sichuan cuisine is very much different from the Shanghai version or Cantonese version. If you get a chance to visit small street food stalls in Sichuan region of China, you will definitely find this super spicy Red oil wontons and Red oil dumplings.

Halabessa/Halabisa/Egyptian Chickpeas Spicy Soup
Halabessa/Halabisa is a well known Egyptian Chickpeas soup which calls for chickpeas with some simple ingredients. This soup is served with lemon, mostly hot during winter as this soup is very warming,wholesome, nutritious, hearty and comforting while the weather is down. People call this soup as snack soup, since this soup is a savoury drink which is served in glass cup with a spoon and lemon wedge. Actually Egyptian drink this soup and enjoy eating the cooked chickpeas with the spoon given along with the soup. Actually every food stall in Egypt sells this mildly spicy Halabisa during winter as a street food and this soup is also quite popular in Gulf countries especially in Iraq but Iraqian version of this chickpeas soup is cooked without tomatoes. Yes Egyptian version calls for some tomato pieces and tomato paste which gives a pleasant colour to this simple soup.

Cheesy Black Bean Soup
Soups keep you warm when the climate is really down and chilled. Soups are our favourite dish and i have already shared varieties of soups. However i have couple of soups to dish and post in my space. One among those soups is this fantastic, healthy, nutritious, wholesome soup with black beans, vegetables and cheese. Adding black beans to a simple vegetable soup makes this soup more healthy and satisfying. A warm bowl of this soup with some bread slices as accompaniment will definitely makes a super filling dinner or meal.Since am posting different dishes with black beans, i couldnt stop myself posting this hearty soup which i dished out few days back for our dinner.

Vegetable & Chicken Enchilada Soup
I have many versions of some incredible enchilada soup with chicken, however i couldnt resist to add some vegetables to make this simple soup more nourishing and filling. With sweet corns and cooked black beans add the crunchy texture and protein to this incredible soup. Though some Enchilada soup calls for cheese and cream i opted for a simple version of this soup. If you love spicy soups for your lunch or dinner, am sure this soup will definitely tickle your tastebuds. Trust me, this soup is full of flavors with shredded chicken, black beans, sweet corn kernels and a handful of vegetables, you will thoroughly enjoy this soup. Though many versions of this Enchilada soup calls for crockpot/slow cooker, i opted for an easy breezy cooking. I went for pressure cooking method, however if you have crockpot, this soup calls for less time to prepare, and crockpot will take care of the rest.

Velouté de Tomates/Creamy Tomato Soup
Velouté means creamy, silky like texture, most of the French soups are known for their silky and smooth texture as most of this kind of soups calls for creams. Today's post goes for a creamy tomato soup which is quite simple to prepare. You can simply finish your dinner or lunch with a bowl of this ultimate soup as this soup will definitely please your tastebuds and fill the hungry tummies easily. Soups prepared with vegetables can be made simply with a double cooking method, while this velouté versions are created to save time, to deduce the expense in professional kitchens where velouté is often kept aside to serve along with various dishes. Also to say the biggest difference between the Velouté and regular vegetable loaded soups is flour which is replaced very much with potatoes as main thickening agent. However the final product tastes as much as like the soup.

Southwestern Creamy Corn Chowder
After some deep fried snickers bars, i could resist to post a spicy South western corn chowder. I just love corn in anything and i really mean it. Actually i was looking for a spicy version of corn chowder, and finally here i am with a spicy yet a creamy corn chowder. This corn chowder makes an excellent filling, hearty and very satisfying soup to serve with a simple sandwich either for your chilled evening dinner or for a quick lunch. This Corn chowder is gluten free and trust me this Southwestern corn chowder asks for simple ingredients. You doesnt need to grind the cooked corn mix usually corn chowder goes for and potatoes are used in this spicy corn chowder. Obviously a super filling soup to enjoy without any fuss.Though this corn chowder asks for chilly powder to spice, its a mildly spicy dish for an Indian like me, however if you like corn kernels then give a try to this incredible dish.

Cheese, Butternut Squash Soup
Soup is most of our dinner while the weather is either chilled or rainy, obviously i often make them as they are easy to dish out. As i told earlier, cheese have their important place in our daily menu. Cheese is rich in calcium and its a good for kids. Obviously its advised to feed kids quite often with cheese. My kids love laughing cow cheese in their soup, the addition of cheese gives an excellent smoothy and creamy texture to this simple soup. Actually i want to name this soup as Velouté as this soup came out extremely silky and creamy.

Chilly Bean Soup
Soup makes an excellent meal during winter day, i love a quick, simple and easy breezy soup to have for my dinner especially after an hectic day. Obviously my space will have many varieties of soup and i do variety of soups atleast thrice a week. When i picked menu card for this week's blogging marathon, i know i'll be making a soup as my first post of this last week of blogging marathon of this year. Srivalli, the brain child of this monthly blogging marathon suggested couple of online restaurant menu cards and picked All Menus as my restaurant menu card. I cooked three dishes from this menu card and for my first day i simply dished out this chilly bean soup from the list of SOUPS.

Watermelon Gazpacho/Vegan Spanish Watermelon Soup ~~ Spanish Cuisine
Spanish cuisine, this cuisine is vast as much as like few European cuisine. I learned many Spanish special dishes only after coming here. Our most favourite is always their Seafood Paella and Gazpacho.Its not easy to explain Spanish cuisine in few words, but however writing an intro about this cuisine is much needed to kick start this post. If you are my follower, you would have noticed that am running a month of blogging marathon since almost three weeks with Around the World in 30days as theme in alphabetical order. After the Rwandan cuisine, today am taking you all to Spanish cuisine as i need to post a dish from the country name starts with 'S'. The basis of the history of Spanish food of course has to do with its geographical situation. First of all, the country is located on the Iberian peninsula and is therefore almost entirely surrounded by the waters. Naturally, due to this fortunate location, seafood forms one of the pillars of Spain's gastronomy and categorizes the country as having a Mediterranean diet. The rest of Spain is a diverse terrain made up of mountain ranges, lush pastures, fertile farmgrounds, extensive coastlines and more, which together provide quite the variety of fresh products. For example, Spain's famous hams are cured high in the mountains, vineyards and olive groves sprawl across expanses of land, and fresh fruits and vegetables hail from throughout the country.
Endless cultures, as they passed through or settled in Spain, have influenced the history of Spanish food. The Phoenicians left their sauces, the Greeks introduced Spain to the wonders of olive oil, and Romans, Carthaginians, and Jews integrated elements of their own cooking into that of Spain. However it was the Moors who, during their centuries of reign, most impacted Spanish gastronomy. They introduced fruits and light seasonings into the Iberian diet, as well as combinations of fruits and nuts with meats and fish. Rice, a staple of Spanish gastronomy and therefore Spain's vast array of rice dishes, come straight from the Moors, as does the use of saffron, cinnamon, and nutmeg. As you eat gazpacho on a hot summer day, thank this clearly gastronomically talented Moorish culture, as it too comes straight from them.

Shorba Adas/Egyptian Lentil Soup ~~ Egyptian Cuisine
Egyptian cuisine cuisine makes heavy use of legumes and vegetables, since Egypt's rich Nile valley and delta produce large quantities of these crops in high quality.Bread made from a simple recipe forms the backbone of Egyptian cuisine. It is consumed at almost all Egyptian meals; a working-class or rural Egyptian meal might consist of little more than bread and beans.The local bread is a form of hearty, thick, glutenous pita bread called Eish Masri. Egyptian cuisine is notably conducive to vegetarian diets, as it relies heavily on vegetable dishes. Although food in Alexandria and on the Egyptian coast tends to use a great deal of fish and other seafood, for the most part Egyptian cuisine is based on foods that grow out of the ground. Meat has been very expensive for most Egyptians throughout history, and many vegetarian dishes have developed to work around this economic reality.Egyptian cuisine is characterized by dishes such as Ful Medames, mashed fava beans; Koshari, a mixture of lentils, rice, pasta, and other ingredients; 'Molokheyya, a green plant chopped and cooked with garlic and coriander sauce; and Fetir Meshaltet. Egyptian cuisine shares similarities with food of the Eastern Mediterranean region, such as rice-stuffed vegetables, grape leaves, Shawerma, Kebab, Falafel, Baba Ghannoug, and baklava.Some consider Koshari - a mixture of rice, lentils, and macaroni - to be the national dish. Ful Medames is also one of the most popular dishes. Fava bean is also used in making falafel (also known as ta`meyya), which originated in Egypt and spread to other parts of the Middle East.

Vegan Red Capsicum & Moongdal Soup
Soup is an excellent meal for dieting people, a bowl of warm soup is definitely very filling and satisfying while the weather is down outside.Soups and salads have their important place in our daily menu,yes i couldnt stop myself saying this phrase again and again. I do often soups for our dinner.My today's soup goes under the list low-carb meals, yes this soup goes for one of the low carb vegetable Red capsicum and its completely potato free, cream free. I replaced the potato and cream with yellow moongdal in this soup, usually i'll add potatoes to make my soups thick but trust me moongdal works wonder for making this delicious soup. Obviously this soup is completely vegan and definitely a satisfying meal for people dieting under low-carb diet .

Green Gazpacho/Gazpacho Verde
Gazpacho is a Spanish soup made with raw vegetables and served cold, usually prepared with tomato,this soup belongs to the Spanish region of Andalusia. Gazpacho verde is prepared simply with green apples, green capsicum,cucumber, mint, avocado and sometimes with spinach. My version went to green apples, cucumber, mint which makes a prefect marriage together. This green gazpacho can be enjoyed thoroughly while the weather is too hot, a prefect to enjoy during summer. Actually this raw vegetable soup goes under Low carb/No carb recipes. Whoever want to take low carb diets, can enjoy thoroughly this Spanish soup.Usually bread slices are used for making this soup, which helps to thicken the soup, but my today's green gazpacho goes green apple, low fat milk,green capsicum, cucumber, mint, obviously a low carb dish.

Creamy Broccoli Dal Soup
Soups,the most comforting foods are prefect to enjoy without any guilt while the weather is too down, the weather in Paris is just unimaginable, one day its too hot and suddenly the next day its too chilled. Obviously we are having hard time to decide how to dress up ourselves. Since yesterday, the weather is too cold and our dinner goes obviously to a warm bowl of comforting soup. I usually add potatoes to my soup to make them thick but for a change i tried adding dals in a simple broccoli soup.The addition of the dals in the soup makes this bowl of creamy broccoli soup more interesting and simply delicious.
To make this simple broccoli dal soup even more delicious, i have added some low fat cream to give a creamy texture to this soup. Oven Roasted Vegetable Soup
Soup, our almost everyday's dinner needless to say that i make varieties of soups atleast thrice a week, one among our favourite is oven roasted vegetable soup. Just throw watever vegetables you have in your fridge into the oven with some herbs,just drizzle generously with olive oil and roast them. Once they gets roasted, just cook it with vegetable stock and spice it with your favourite spice powder or else simply with pepper powder and salt. Blend everything and enjoy your bowl of soup.You may wonder why am talking about soup today, i have reason to talk about it.

Vegetarian Wonton Noodle Soup & Chinese Scallion Pancakes
Sundays are always special for us,sunday means late wake up, a filling brunch,late lunch and outings. Sometimes, i would love to make a elaborated lunch for us coz twice a month during weekends my H go for work, so obviously if he is at home definitely i'll make a royal feast. Have you noticed before a week, myself and Veena announced an interesting event to give a push to your sleeping blog, we named our event as Let's Brunch On Sundays. The main motto of this event is to blog on sundays coz most of the bloggers couldnt able to feed their blog babies during weekdays coz of their busy schedules, so we both planned to create an event to cook and post a dish which goes under Sunday brunch,lunch or dinner.
Today is the first day of our event, am posting wonderful Cantonese dishes i dished out for an another event International Food Challenge , a monthly event started by two wonderful food bloggers. Seriously i love this International food challenge, its a wonderful platform to learn various cuisine which is not that much familiar for many of us. Thanks to Sara and Shobana, the brain childs of this event for inviting me to this food challenge. They challenged us with 4 different dishes,i cooked three out of four. I have already posted Spiral Moon Cake and here comes my vegetarian wonton noodle soup and Chinese scallion pancakes as their accompaniment i prepared for this challenge. I served this vegetarian wonton soup with Chinese scallion pancakes for our sunday lunch before few days back. Both were super filling and we enjoyed thoroughly this Chinese foods for our lunch.
