Cooking With Whole Foods - Oats Roundup

First of all, am very sorry for posting this CWF roundup very much late..Since this event went for two months, i got numerous contributions from our blogger buddies and a non blogger buddy, i have to say a big thanks for all ur contributions..Now u can make breakfast to lunch and dinner to snacks also loads of bakes with healthy oats as & main ingredient, yep our blogger buddies have loads of creativity and they came up with beautiful dishes using Oats, i can surely say that u have no excuses from now to say that u doesnt know wat to cook up with oats, am damn sure that this roundup will be definitely helpful to many of us for adding oats in our daily menu..I have to a big thanks to Kiran for giving me this wonderful opportunity to host this beautiful event..

Non blogger Krithika send us her five beautiful recipes with oats..

Oats Badam Cake:
One measure Oats Flour
One measure Milk
One measure Almond meal or powder
One measure ghee
Two measure Sugar

I used a standard 1/2 cup measure for the above recipe.  For the one measure of Almond powder, I used half almonds and half finely shredded coconut.  Combine all the ingredients in a pan and make sure there are no lumps in the mixture.  Start cooking at medium high heat.  Keep stirring the mixture to ensure that it does not get burnt at the bottom.  The mixture is ready once it all comes together leaving the sides of the pan.  Have a greased plate ready to pour the mixture.  For the quantity I tried it took about 12-15 mts.  Once it is ready, quickly transfer the dough to the greased plate.  Let it cool slightly before you cut into desired shape.

Oats Payasam:
One measure of Oats Flour
One measure of Almond powder
Sugar according to taste
Cardamom Powder
Roasted cashews and raisins for garnish

Cook the oats and almond flour together in the cooker with water and milk combined in the ratio desired.  The total liquid to powder ratio can be 3:1.  Once cooked and while it is still hot remove any lumps if any.  Bring it the stove top and add the required amount of sugar and let it come to a boil at medium heat remembering to stir the mixture.  Add some well boiled milk or evaporated milk and let it again come to a boil.  Turn off the stove and add cardamom and the roasted cashew and raising for garnish.

Oats Paniyaram:
 Quick Oats - 1/4 cup(ground to a coarse consistency)
Rice Flour and Fine Sooji combined - 1/4 cup
Baking Powder - 1/2 tsp
Baking Soda - 1/4 tsp
Salt - little less than 1/2 tsp
Finely chopped onion - 1/3 cup
Green chillies - 1 to 2 finely chopped
Ginger - finely chopped small piece
Coriander leaves chopped - 1 tbsp

Mix all the dry ingredients thoroughly.  Add the onions, green chillies, ginger and coriander leaves.  Give a good stir.  Add about 1/3 cup of water and mix it well.  Leave this mixture aside for 30 mts.  Have the kuzhi paniyaram pan ready with about a tsp of oil in each hole.  Drop a spoonful batter into each hole after the oil is heated up.  Once it is cooked on one side, turn them over and add more oil if needed.  They can be served with coconut or green chutney.

Oats & Sprouts Patties:
Medium size potato about 200 gms boiled, peeled and mashed
50 gms each of carrot and beans processed to a coarse consistency.  Microwave this with a pinch of salt for 2minutes.
Quarter cup of coarsely ground oats powder
Half cup of green moong sprouts processed to a coarse consistency without adding water
Salt to taste
Garlic 2to3  cloves
Green chillies 2 medium size grated
1 tsp of ajwain seeds
Chopped coriander leaves

Combine all the ingredients to make a smooth dough.  Shape them into balls and flatten it out into round patties. Heat up the pan with two tsp of oil and place as many patties that would fit.  Once cooked on one side, flip them over and continue cooking with little more oil.  If you are baking the patties, add about 2-3 tsps of oil while combining all the ingredients.  Brush both sides of the patties with oil and arrange them on a foil lined baking sheet.  Bake them for 8-10 mts each side at 400 degrees.  Spice and salt can be adjusted to ones individual taste.PS: The patties can be shaped as big as your palm and prepared in the above manner.  This can be used as a patty for a burger sandwich with Lettuce, tomatoes and cucumbers.

Oats Paratha with Bajra & ajwain:
1/3 cup Oats Flour
2/3 cup Wheat Flour
pinch of salt
1tsp of ajwain seed
1 to 2tsp oil

Combine all the above ingredients and knead well with needed water to make a smooth dough.  Leave it aside for an hour before you roll them out into parathas.  This would make about 5-6 parathas.  Cook both sides on a hot tawa with about a spoon of oil for each paratha.  I had my wheat flour mixed with bajra flour in the ratio of 5:1.  That is the one I used to make the above recipe.
