Ftira/Maltese Vegan Ftira Flatbread

Malta is known as Republic of Malta which is a Southern European island country situated in Mediterranean Sea. Malta is one of the world's smallest and most densely populated country with Valleta as capital.Malta is a popular tourist destination with its own warm climate, numerous recreational area with three UNESCO world heritage sites. Maltese cuisine have both Sicilian and English influences as well as with Spanish, Provencal cuisine influences in it.Maltese cuisine is completely unknown for me though i know a little bit about Sicilian cuisine. While looking for a flatbread around the world, Google master guided me towards Ftira, the maltese flatbread in its lists of flatbreads. Immediately i checked for Ftira recipe and got few posts about this bread which is prepared with a starter. Obviously this bread calls for two days preparation. You have to kick start the starter the day before you want to bake this flatbread.

Ftira is a ring shaped bread which is usually eaten with filling. And the filling goes for sardines, tuna fish, potato, tomatoes, onions, capers and olives. Ftira is a leavened bread which calls for a starter. However if you dont have enough time or dunno how to handle a starter, dont worry you can still bake this leavened bread easily with an easy breezy starter. Gozo ftira from a region of Malta serve Ftira more like a pizza than a sandwich. Am running a month of blogging marathon aka Mega marathon with A-Z International Flatbreads. After some interesting flatbreads, my today's post goes to Maltese flatbread aka Ftira. Ftira is completely eggfree and vegan as well. We had this bread for our breakfast with butter and jam. However this vegan Maltese flatbread makes an excellent sandwich as well. If you are looking for a different bread to prepare your sandwich dont forget to give a try this excellent bread.

Ftira, Malta Ftira

Starter:
1/2cup All purpose flour
1tsp Gluten
1/2tsp Instant yeast
1/4cup Water (luke warm)

Mix flour and gluten together, add the yeast, add water in a bowl, with a spoon mix everything until its turns as a sticky dough.

Wrap the bowl and let rise for more than 6 hours. Dont add salt.

Dough:
4cups All purpose flour
1/8cup Gluten
1tbsp Instant yeast
1tbsp salt

Take the starter in a bowl, add the flour, gluten, instant yeast, salt.

Add the luke warm water and knead everything well. Dust the kitchen top, drop the dough and knead for few minutes until the dough turns soft and elastic.

Cover the bowl and let rise for 2 hours.

Ftira, Maltese Ftira

Divide the dough into 5-6 pieces, and flatten the dough as big as you desire. Let it sit for half an hour.

Preheat the oven to 400F, drop the shaped dough on a baking sheet lined on a baking tray.

Bake for 15-20minutes.

This bread stays prefect for a day in room temperature. You can freeze this breads very well, and reheat this bread in a preheated oven for 5minutes.

Enjoy with your favourite spread or make your sandwich with your favourite vegetables or meats.

I have never tried adding so much gluten in recipes. Need to try this bread as it sounds so interesting. I would like to know how the bread's crumb turns out. The ring shaped bread looks so cute and perfect for sandwiches.

Surely with extra added gluten, it will be more structured from inside. This ring shape of the bread really came out great. Look is very tempting and inviting. Love this bread for my trail with extra gluten.

That is a very attractive bread for breakfast and I love the shape of the bread. The starter for the dough is pretty interesting with gluten in it. I am bookmaking to make after few days.
