Gluten Free Chinese Peanut Cookies

Third post of this week's blogging marathon is dangerously addictive Chinese peanut cookies, this cookies is definitely a must for Chinese New year as well. This cookies is a melt in mouth kind of baked goodies and these cookies have their own place in every Chinese New year sweet platter. For chinese peoples, peanuts symbolize the happiness.Obviously most of Chinese New year friendly dishes have peanuts in them. Traditionally this Chinese peanut cookies is prepared with roasted peanuts, all purpose flour and pork lard, but now lighter version of cookies do exists.

Now all purpose flour is replaced by rice flour and pork lard is skipped by any sort of oils. Obviously i opted for a gluten free version and egg free as well. Yes egg is used in this cookies for a final touch, egg wash is done before baking these cookies. And these cookies are very simple to bake, i picked these beautiful gluten free cookies again from Singapore Chinese Kitchen.As i told earlier, i carried these gluten free peanut cookies to my Chinese neighbour on their new year.

Peanut cookies

2 cups Roasted peanuts
1+1/4 cup Rice flour
3c/4up Icing sugar
1tsp salt
2/3 cup vegetable oil
White egg wash (i skipped)

Grind peanuts in a food processor to as fine as possible.

Take the peanut powder into a large bowl, add in the rice flour, powdered sugar, and salt.

Pour in oil and mix well until the mixture turns as a dough.

Now take a small ball from the dough and roll them as ball. Place a peanut on the top, arrange the cookies on a baking sheet lined over a baking tray.

Brush top of cookie with egg wash. (which i skipped).

Peanut Cookies, Chinese Peanut Cookies

Bake in 350F for 15-20minutes until the cookies turns slight brown.

Let the cookies gets cool completely.

Arrange them in an air tightened box.

I made the vegan almond cookies for a theme and loved it. The cookie with oil was so different and I was almost scared to try it. Looks so beautiful Priya!
