Jewish Apple Christmas Cake

When winter comes, apples shows their head in every fruit stall. And we get varieties of apples during this super chilled weather. Obviously i dont forget to bake some delicious bakes out this fantastic fruits. When i get a chance to bake with apples, i dont hesitate a second to bake with. I have couple of cakes to give a try and am trying to cook from my bookmark recipes.This Jewish apple cake was suggested as a christmas special recipes by Priya of Cook Like Priya long back for a baking event. Since i couldnt able to bake this cake for the baking event i have been looking for a chance to bake this cake and finally i baked this fabulous cake as i was running this week's blogging marathon with 'Christmas Special' as theme.

This Jewish apple cake calls for simple ingredients but the final result will be absolutely tremendous as this cake turns out extremely spongy with chopped apple layers in between. A slice of this cake with a cup of hot coffee will definitely makes you happy. Yes this is one of the easiest cake with a fabulous cinnamon flavor and loads of apple chunks. If you dont know how to bake traditional christmas cakes or dont like dry fruits in your cakes then dont forget to give a try to this ultimate Jewish apple cake. Recipe Source: All Recipes
3cups All purpose flour/ maida
2cups Sugar
2tsp Baking powder
1/4tsp Salt
1cup Vegetable oil
4 Eggs (beaten)
1/4cup Orange juice
1tsp Vanilla extract
3 nos Apples (peeled, cored and chopped)
1tbsp Cinnamon powder
5 tbsp Brown Sugar

Preheat oven to 350F, grease a bundt cake pan or else a loaf pan.

Mix the cinnamon powder and brown sugar together in a bowl and keep aside.

In a large mixing bowl, combine the flour, salt, baking powder and  sugar.

Stir in the vegetable oil, beaten eggs, orange juice and vanilla and mix well.

Pour half of the batter into the prepared pan. Top the batter with half of the sliced apples and sprinkle with half of the cinnamon sugar mixture.

Pour the remaining batter over the top of the fruit mixture and layer the remaining sliced apples and cinnamon sugar.

Bake in middle rack for 40-45 minutes until a skewer inserted comes out clean.

Slice and serve once the cake gets cool completely.

The Apple cake sounds very interesting . I like the idea of layering the cake and more than that sprinkling salt , awesome ! It is 4 eggs that will be difficult to substitute 😞. People using eggs must try , fantastic recipe .
