Watermelon & Mascarpone Parfait

Layered desserts are always my favourite, obviously if am planning to make some special desserts for special occasions, i wont hesitate a second to make layered desserts just to please everyone's tastebuds. Its peak season of watermelon here, i seriously want to give a try to a simple and refreshing layered dessert with this summer fruit since a while. Before we left to summer vacation, we had a small get together with our close friends, obviously i prepared this watermelon and mascarpone parfait to serve as a dessert after our meal. Trust me, this refreshing parfait makes an elegant dessert after a heavy or a special meal. Very easy to make, we simply loved this refreshing dessert and got many appreciation from my friends for this catchy dessert.


When served chilled, this easy breezy parfait makes an excellent dessert to relish with your loved ones. If you want to go with other summer fruits, just go with any available fruits in your place and you can replace very well mascarpone cheese with whipped cream as well. If you are preparing this parfait dont forget to make a big batch as these desserts are seriously very addictive to indulge. Mascarpone & Watermelon parfait,Watermelon Parfait with Mascarpone Cheese

5cups Watermelon (diced or scooped as small balls)
1+1/4cups Mascarpone cheese
1/2cup Heavy cream
3tbsp Sugar
1/2tsp Vanilla extract
1tbsp Lime juice
Chopped mint leaves
1tsp Lime zest

Take the watermelon, lime juice and chopped mint leaves in a bowl, mix and keep aside.

Meanwhile beat the mascarpone cheese, sugar,heave cream,lime zest, vanilla extract in a bowl.

Spoon enough watermelon pieces to a glass and top it with the mascarpone mixture, follow it with watermelon pieces and top again with mascarpone mixture.

Top the final layer with watermelon pieces and some mint leaves.

Continue the same process with the remaining fruits and mascarpone mixture.

Arrange in fridge for few minutes and enjoy.
