Christmas Tree Patterned Swiss Roll Cake

Swiss roll or cream roll is a kind of sponge cake roll stuffed with either whipped cream,fruits or buttercream or sometimes simply with jam. A thin layer of batter prepared with flour,eggs and sugar baked in a sheet pan, spread with jam or buttercream, rolled up and served as round slices makes this roll. I have prepared this roll with usual measurements as christmas tree Patterned Swiss roll, filled with chocolate mascarpone cheese cream. This delicious vanilla swiss roll filled with a chocolate loaded mascarpone cream makes an excellent dessert after a meal. I carried this swiss roll cake to our Xmas dinner party and all our friends enjoyed thoroughly this incredible cake. I got so many appreciations for this cake, watelse we need na.

Christmas Meringue Trees

                                       Merry Christmas Wishes to All !!!

Meringue, i came to know about this kind of desserts or confections once i landed France, actually while my H took me to a walk, i was intrigued to see some whitish fluffy cuties sitting in our street corner Bakery. Immediately  i asked for it and H bought it for me,instantly i have completely fallen in love with this egg whites based crispy meringue. They just melt in mouth, later i came to know that we can make them easily at home. I tried my hands in making meringues at home and failed twice. Obviously i never want to give a try when its comes to meringue, days goes on and as a blogger i learned so many techniques regarding baking. Again i tried meringues at home, its was big success, you can take a look at my Meringue Mushrooms which is used for decorating this Yule log cake. But my today's post is quite a different from this meringue mushrooms, i followed Swiss meringue which makes some beautiful meringue.

I always want to clear my drafts but unfortunately my days are busy since few months. Obviously am taking my time to clear my drafts now, however my drafts have loads of baked goodies and this month's baking mega marathon came in secure to clear few of my baked goodies sitting in my draft. One among those drafted post is this meringue mushrooms, i baked this cuties during the month of december for decorating this Vanilla Yule log cake. This sweet mushrooms goes for egg whites and sugar. Yes just with two ingredients you can make these cuties.

Baked Herbed Mini Rosti~~Vegan Thursdays

Rosti is a Swiss dish prepared mainly with potatoes, this dish is a common breakfast eaten by farmers in a region of Swiss and today this dish is eaten all over Switzerland and many restaurants serve this dish with many sides. This rosti is consider as a Nation dish by swiss people,coming to this dish its simply prepared with grated potatoes,oil and grated onions with salt and pepper powder. Usually rosti are prepared as thick patties and they are cooked in frying pan, but for my today's post i baked them in oven coz my theme of this week's blogging marathon is savoury baked dishes and they came out extremely amazing.

These Rostis sounds like Hash brown and Latke, a Jewish pancake, but this rosti are completely different from the both dishes.With loads of parsley leaves,this herbed baked mini rosti tastes fantastic when served with a simple vegetable salad. Kids will love these cuties and am sure this dish will definitely become their favourite among their most favourite dish.Trust me these cute rostis are completely vegan and quite addictive too.Am posting this vegan baked herbed mini rostis today as am a member of Vegan Thursdays, an vegan event running twice a month started by me.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#30.Sending this baked dish to SYS-W Series - Potato & Brinjal.


5nos Potatoes (medium sized & peeled)
2tbsp Parsley leaves (chopped)
1no Onion (medium  & finely grated)
2tbsp Oil
Salt
Pepper powder

Preheat the oven to 350F, grease a muffin tray with oil and keep aside.

Cook the peeled potatoes in boiling water until they turn tender, dont cook too much and cool it completely.

Grate the potatoes and mix with grated onion, now add the olive oil,salt and pepper powder and mix well with a fork.

With a fork, divide the potato mixture into the already greased muffin tray and bake for 30-35minutes until they turns golden brown.

Chocolate Swiss Roll Icecream Cake

A celebration do need an excellent cake else its wont be much fun, today my son is celebrating his birthday to change our routine vanilla cake frosted with chocolate ganache birthday cake i prepared this elegant icecream cake. Since the weather is too hot, its better to make something refreshing than usual cake na, while bloghopping i was amazed by the swiss roll icecream cake by Manju's Eating Delights's, she used  strawberry jam and vanilla strawberry icecream for making her swiss roll icecream cake. Immediately i know  that am going to make this cake for my lil one's birthday. The weather didnt helped me a lot, icecream while stuffing got melted quickly and started oozing out in between the swiss roll,but its doesnt matter coz i prepared this cake with loads of love specially to my lil darling. Manju's cake will definitely makes you drool. As my lil one asked vanilla and chocolate in his birthday cake, i replaced the strawberry jam with a quick chocolate sauce and finished the cake with vanilla and chocolate icecream.

The way Manju explanation about the preparation and assembling the cake was tremendous and definitely helped me a lot, thanks a ton to Manju for her tips and tricks. We are yet to cut the cake but the final result after freezing the cake tempts us already to enjoy the cake.


For Swiss roll cake:
3/4cup Cake flour
3nos Eggs
1/2cup Sugar
1/2tsp Baking powder
1tsp Vanilla extract
pinch Salt
Nutella or Chocolate sauce
Vanilla icecream
Chocolate icecream
Confectioner's sugar (2tbsp )

Preheat the oven to 400F, line a greased baking sheet over a baking tray.

Sieve together the cake flour and baking powder and keep aside.

Heat water in a vessel, meanwhile take the eggs, sugar,vanilla in a bowl, keep the bowl over the vessel,keep the flame in simmer(the bottom of the bowl shouldnt touch the hot water).

Beat the egg sugar mixture until they turns pale and smooth. Now take off the bowl from the vessel and beat again for few more minutes until the egg-sugar mixture turns like a whipping cream.

Now fold the dry ingredients slowly until they get well combined, dont overmix.

Transfer this batter to the already greased baking sheet and bake for 9-10minutes or a skewer inserted comes out clean.

Meanwhile take a clean towel and dust a tablespoon of confectioner's sugar over it, this is for rolling the cake.

Rolling the cake:

Once the cake gets baked, immediately take them out from the oven and invert the cake to the already prepared sugar dusted towel. Remover the baking sheet and dust it again with the remaining confectioner's sugar.

Keep one end of the towel inside the cake and roll it tightly to make a loaf and keep it on wire rack to cool completely.

Once its gets cool, spread the nutella or chocolate sauce prepared already as you desire and roll the swiss roll again wrapped in a plastic wrap.Keep it in fridge until the spread gets firm.

Assembling:

Keep the both vanilla and chocolate ice cream in counter top for few minutes.

Take a medium sized dome shaped bowl, line it with a plastic wrap, cut the already prepared swiss rolls as medium sized slices, arrange one by one inside the bowl,until the plastic wrap gets covered by the swiss roll.

Now spread the vanilla icecream to half of the bowl and finish the remaining with chocolate icecream, close the chocolate icecream with the remaining swiss roll slices.

Tightly close the bowl with the wrap and keep it in freezer atleast two or three hours before enjoying.

A prefect and definitely a refreshing cake for celebration which suits prefectly for hot summer days..

Swiss Apple Pie

I was planning to make some easy breezy tart or pie using some golden apples sitting sadly in my fruits basket, while searching for a quick,easy and delicious pie, i got hooked with this fantastic,easy pie from Taste Of Home, immediately the same day evening itself i prepared this super delicious, addictive pie, we just loved it..Its quite an easy pie which doesnt need any pastry crust or any special care, just mix all the ingredients and pour in a greased bowl and bake them,your pie is ready to enjoy, easy na...Obviously the final result was tremendous and this pie vanished within few minutes, we loved this pie warm topped with a scoop of  vanilla icecream..Sending this pie to Priya's & Aipi's Bookmarked Recipes and to AWED-Swiss guest hosted by Vanessa,event by DK & Anamika's Drive Me Nuts..

Swiss Apple Pie

2cups Apples (cubed)
1cup All purpose flour
1cup Sugar
1tsp Baking powder
2nos Eggs
1/2cup Walnuts
1tsp Vanilla extract
1/8tsp Salt

In a mixing bowl, whisk the eggs,sugar, vanilla,meanwhile mix the flour,baking powder and salt, add gradually to the wet ingredients until the get well mixed, add the apples,walnuts to the mixture,give a quick stir and pour the batter in a greased round mould..

Bake for 30minutes or until a skewer inserted comes out clean..cool and enjoy with chocolate sauce with a scoop of vanilla icecream..

Swiss Chocolate Fondue

The recipe for ‘Fondue’ came from Switzerland. The name is French but the dish originated in ‘Switzerland’. The Swiss are fond of all fondues but especially of cheese fondue, which is had with crusty bread especially in the winters to keep off the cold. Many explanations was given for why a French name was given for a Swiss dish have been discussed. Various people have come up with different explanations. The chefs have their own glossary which says Fondue means simply ‘to melt’ in French..Seems the Swiss are very poor at naming their dishes and only good at making the finest and best cheese in the world. Initially i want to try swiss cheese fondue, but once i saw the chocolate fondue i really got hooked with this fondue and tried out at home..We had with marshmallows, u can serve very well with any sort of fruits.We just enjoyed this chocolate fondue sterday...Am sending this swiss chocolate fondue to AWED-Swiss guest hosted by Sweatha, event by DK..



2cups Chocolate pieces (chopped roughly)
1/2cup Cream
1tbsp Vanilla Essence

Melt the chocolate pieces along with the cream and vanilla essence in thick bottomed pan over low hear stirring continuously till it comes to a boil and then reduce the flame and keep stirring for another 5 minutes. Then remove the pan from the flame and allow the mixture to cool a bit, then pour it into a fondue pot or ceramic dish and serve.

Serve with any sort of fruit pieces or marshmallows!!!

Rösti -Swiss Potato Pancake

Rösti is a swiss dish which is prepared mainly with potatoes, this dish originated as a common breakfast eaten by the farmers in the Canton of Bern, but today it is eaten all over Switzerland, also in many places...many of the swiss people consider this potato pancake as national dish than considering it as breakfast dish...Rösti is made with potatoes which are grated and depending on the frying technique, possibly mixed with some butter or fried in oil later. The grated potatoes are then shaped into rounds or patties, which come in different sizes usually measuring between 3-12 cm in diameter and 1-2 cm thick. Often the Rösti is simply shaped inside of the frying pan. They are most often shallow fried but can also be baked in the oven. Although the basic Rösti consists of nothing but potato, a number of additional ingredients are sometimes added, such as bacon, onions, cheese, apples or fresh herbs. This is often considered to be a regional touch.When Sweatha announced for AWED-Swiss, i went on searching for some swiss dishes, i just loved this potato pancake much since its quite easy , simple and also cheesy...also am sending this swiss potato pancake to AWED-Swiss guest hosted by Sweatha , event by DK also sending to EFM June- Breakfast and Variety rice series by Srilekha...



5nos Potatoes (big)
1no Onion (chopped)
Salt
Oil
1/4cup Cheese (grated)

Cook the potatoes with enough salt and water until they get half cooked, drain the hot water and put immediately to cold water, peel the skin and grate the potatoes...Heat enough oil and saute the onions with enough salt in simmer until they turns transculent, dont let them burn...add the grated potatoes to the sauteed onion, mix well... now flatten the potatoes as a cake in the pan, cook in low heat for about 15 minutes...until the base get crips, turn on to a plate, springle now the cheese over the uncooked side...drizzle few oil and again add the potato cake cook, until it get well cooked the other side...
