Fijian Honey Cake

My third post for this week's theme is this ultimate bread like honey cake from Fiji. You might have noticed that am exploring Southern Hemisphere for this week's blogging marathon. Yes this week's theme is Explore Southern Hemisphere. After two beautiful dishes, one from Zimbabwe and the another one from Uruguay, here come a fabulous spiced cake. Fiji is a country in South pacific which is an archipelago of more than 300 islands. With Suva as its capital, this country is known as a prefect holiday destination of many. And this country even have some fabulous Hindu temples and recently i crossed a video in Youtube about the Lord Murugan temple in Fiji which was a biggest surprise for a Tamilian like me.

Galette de Rois au Mocha/French King's Cake With Mocha Filling

Epiphany is a Christian festival on the 6th of January which celebrates the arrival of the wise men who came to see Jesus Christ soon after he was born. And this festival falls on first sunday of January. French people celebrates this day with a king cake prepared either with brioche dough or a pastry cake baked with puff pastry sheets and filling. Traditionally the filling calls for a rich frangipane filling prepared with grounded almonds, eggs,sugar and butter.Some of the king cakes goes for apple sauce or for pears or else simply with chocolate spread, now many versions do exists. Eventhough this popular King cake is still available in stores, every year i bake my own version of King cake as my kids love this super flaky cake especially for the trinket in it.

No Maida, No Sugar, No Butter Christmas Fruit Cake

You may wonder how can one bake a rich looking Christmas fruit cake without Maida, sugar and butter. Trust me, even i was skeptical before baking this incredible cake. Its quite an interesting Frutis and nuts loaded Christmas friendly cake to carry with you if you are visiting friends or family. I have prepared fruits and nuts soaked in jaggery syrup before 20 days for baking this Xmassy cake. Yes you heard it rite, this cake is completely sweetened with jaggery. Varieties of dry fruits and nuts are soaked in a thick jaggery syrup is used to flavor up this fruits loaded rich looking cake. Actually my initial idea to make this rich fruit cake was with usual ingredients as much as every year. When i opened the fridge, i noticed that there was no butter, obviously i opted for Olive oil, then comes to idea to make this fruit cake without all purpose flour/maida. Finally i baked this cake with Spelt flour, jaggery syrup and olive oil.

Butterless Whole Wheat Kiwi Upside Down Cake

Kiwi, these fruits are loaded with many vitamins and right now here its peak season of this ultimate fruits. Obviously how can i forget to get them whenever we go to farmer's market. Recently i got a huge bag of farm fresh kiwis from my next door friend who carried all the from South France as her uncle is a farmer who owns some kiwi plants. Seriously, i was overwhelmed by her nice gesture and i want to make something delicious with those kiwis. After making some smoothies and fruit salad, i baked a fabulous upside down cake with the leftover kiwis. As much as like apples, i cant take kiwis raw, and unfortunately kiwi is one of my favourite fruits, hence i baked this cake to enjoy the goodness of this incredible fruits.

Glaced Cherries Pound Cake

Pound cake are everyone's favourite at home coz these cakes are prepared usually with equal weights of 4 main ingredients. Flour, eggs, butter and sugar are the most needed ingredients to bake this incredible cake. Flavored or prepared with fruits, dry fruits this buttery pound cake tastes extremely delicious to please your tastebuds. Pound cakes are best to enjoy for snacks or for desserts after a meal depending upon how they are served. For a dessert, top a slice of pound cake with some scoops of icecreams or else with whipped cream and chopped fruits like strawberries, figs or raspberries etc. Though i have already baked varieties of pound cakes, its been a while i seriously want to bake a pound cake with glaced cherries as my H was asking for this cake. He just love fruits loaded pound cake, obviously i couldnt stop myself to bake this cake just to please him.

Butterless Chocolate Apple Cake

Once fall season starts here in Paris, farmer's markets will gets loaded definitely with varieties of apples, pears, clementines, kiwis etc.  Apples are the prominent Fall fruits here, obviously we make use of it in many bakes especially in cakes. Am running this week's blogging marathon with Make them as cakes as theme, hence this week's posts are going to be some kid's friendly cakes. I love to bake cakes than grinding idly batter, yes dunno why. My mom used to pull me coz of this, i hate grinding idli or dosa batter than preparing cake batter. If any occasions presents, i look for an opportunity to bake a cake to please my cake loving kids at home. Though my space have varieties of cakes, some are yet to bake and post in my space.

Far Breton Tart/Apple Far Breton Tart

Far Breton is a flan type cake from Brittany region of France. Apples, Raisins or Dried prunes are usually used for making this traditional cake, and its quite an easily and simple cake with easy available, pantry friendly ingredients. I am a great fan of this cake and i love to make this cake while my fruit baskets have apples abundantly. Its quite an easy cake to finish some apples quickly than dishing out some apple sauce with them. Kids will definitely enjoy this fabulous cake and its one of best way to sneak apples this way. Am allergic to apples and i cant eat them raw. Obviously i have bake or cook them before having. If i want to have enjoy apples for an aftermeal dessert, i cant think more than baking some baked goodies with this fabulous fruit. Apples are showing their heads in our local farmer's market. Apple is a Fall season fruit for us, and we get varieties of apples in our markets. I love Golden apples very much and they works awesome for making any sort of dishes with them.

Bingka Telur/Indonesian Egg & Coconut Milk Cake

After two different Asian countries, today we ar going to land in Indonesia. Indonesia cuisine is quite as much as like our own Indian cuisine. Yes spicy foods have their own place in their cooking, most of their cooking style sounds very aromatic and flavourful. Trust me they use loads of herbs and spices in their cooking. However this cuisine is also quite an interesting cuisine to explore. I have cooked already few dishes from this cuisine and more to come. Today am sharing an interesting dessert from this cuisine. And this dish is called Bingka Telur which means Egg and Coconut milk cake. This cake is one of the easiest dessert that one can make even if you dont have much experience in cooking. I grabbed this dessert from Anita's Daily Cooking Quest.  In Indonesia, Bingka Telur is baked in a special flower shaped baking pan, but Anita baked her cake with a round cake pan. While i baked this cake in a square pan.

Ryttarkaka/Norwegian Sticky Chocolate and Coconut Cake

If you love chocolate, this cake will definitely please you. And trust me if dont like coconut in your bakes, then this cake will definitely tickle your tastebuds. While i was looking for a different baked goodies from Norwegian cuisine, i was surprised to see this Ryttarkaka, aka sticky chocolate cake with coconut topping. Though i dont have great fans of cake or cookies baked with coconut at home, i was very much tempted to bake this cake. But one thing that pulled me to bake this cake is  the chocolate brownie cake which is the most important base for this Ryttarkaka . Yes this cake calls for a brownie batter which is later topped with coconut topping. Obviously i gathered all the ingredients and baked this fabulous cake few days back at home.

Scandinavian cuisine includes three countries, yes Norway, Denmark and Sweden. And these three countries shares similar cuisine style. The most important meal of Scandinavians is their breakfast as they start their work early in the morning. Though Scandinavian cuisine goes for easy cooking process, most of their dishes are quite popular around the world. Am running this week's blogging marathon with 'Scandinavian Recipes' as theme. Obviously i picked three different dishes from two of those three countries, and my today's post is from Norway. Fa Gao/Chinese Fortune Cake

You might have heard a lot about Fortune cookies, but do you know about Fortune cakes, yes Chinese peoples have their own Fortune cake which is usually prepared during Chinese New year. This Cake is one of simplest cake i have prepared till now. With easy ingredients and simple steaming process, one can prepare this Fortune cake with less efforts. I have bookmarked this Fa Gao from Chinese Sichuan Food long back, almost a year back i think. Since i want to clear some recipes from my Bookmarks i didnt hesitate a second to prepare this Chinese steamed cake to share with my Chinese neighbour for their new year this year.

Mah Lai Goh/Cantonese Steamed Sponge Cake

While i was googling for an interesting steamed dish, i accidentally crossed this Mah Lai Goh aka Steamed spongy cake. Actually Mah Lai means Malay and Goh as means Cake, this Cantonese/ Malaysian steamed cake is definitely a dangerous cake, served along with tea or coffee, you just cant stop munching this steamed cake. This steamed cake is very easy to prepare as well, and the end result is a super spongy, fluffy and very light cake. Many blogs says that this Mah Lai Goh have its origin from Chinese Cantonese cuisine, and this cake is served in many Dim sum restaurants.This brown sugar steamed cake is my recent favourite. Trust me, i seriously loved this steamed spongy cake as it came out extremely light.

Whipped Cream Pound Cake

After an eggless Pistachio pound cake and a gorgeous Marble pound cake, i couldnt stop myself to prepare a super rich pound cake with whipped cream. And this cake is neither eggfree nor butter free, not to forget that this pound cake also goes for whipped cream. Obviously a rich pound cake to try and the texture of this cake will be super moist and dense And everyone at home enjoyed thoroughly this cake. Beating eggs with sugar for a long until they turns creamy makes the magic in this cake. Trust me, one cant stop just with a slice, yes this cake is dangerously addictive and believe me, a loaf of this pound cake gets vanished very much quickly than you can imagine.

Marble Swirl Pound Cake

Most of the time, pound cakes are baked as loaves though bundt cake pan works awesome to bake some ultimate pound cake. Pound cake is a super rich cake usually made with a pound of each of four ingredients: flour, butter,eggs and sugar. You can serve pound cake dusted with powdered sugar, lightly glazed or sometimes with a coat of icing. Wiki says that its believed that the pound cake have their origin from Northern Europe,which dates back to the early 1700's. But a recipe for pound cake is in the first American cookbook which was published in 1796. In France, we call Pound cake as Quatre quarts which means four quarters. Seriously just with 4 ingredients, pound cakes are just prefect to enjoy during anytime of the day.

Eggless Pistachio Cream Pound Cake

I accidentally crossed Pistachio cream when we went last year to Sicily for our summer vacation, obviously i couldnt resist to grab few bottles of this cream. Back home, after sharing with friends and relatives, two bottles of those pistachio cream were sitting in my pantry. Hubby finished a bottle as spread for his breakfast over some grilled bread slices while the another bottle tempted me to try an eggless pound cake with. Without any hesitation, i baked this absolutely flavourful eggless pound cake with those pistachio cream. Actually this Sicilian pistachio cream is used as filling for cannoli, once mixed with smooth ricotta cheese, this cream makes excellent filling to fill a cannoli. However weather is not helping us much hence i couldnt think more than baking a cake with this pistachio cream than whipping some icecream with it.

Mug cake are seriously a life saver if you have some hungry tummies around you especially for snacks or else to please some sweet cravings after a meal. Mug cakes calls for microwave cooking, obviously these mug cakes gets ready very much quickly than the oven friendly cakes. Eggless Potato Chocolate Mini Cake

If you are a follower of my space, you might have noticed that am running this week's blogging marathon with a super interesting theme . My theme for this week's blogging marathon is 'Secret Ingredient'. How interesting na. After making a fabulous Butternut squash chocolate loaf like cake and a soft tofu bread, i couldnt stop myself to bake an another fantastic cake with potatoes. Yes you heard it rite, my today's post calls for mashed potatoes and that is the Secret ingredient of today's baking treat. Mashed potatoes are good replacement of eggs in cakes,if am making eggless cakes i'll replace eggs usually with applesauce or else with yogurt. But trust me, mashed potatoes works wonder to bake some eggless baked treats.

Trust me, even i was so thrilled to make three different beautiful dishes out of three different secret ingredients. My today's post, goes to Butternut Squash. Almost like pumpkin, butternut squash works awesome to make some delicious desserts or cakes with it. I have already dished out couple of dishes out of this incredible vegetable. From Indian to Fusion dishes, you can prepare many different dishes from this vegetable. Once cooked and pureed, you can use the butternut squash puree to make delightful desserts out of it.

Patriotic Tri-Colour Bundt Cake

After preparing some easy breezy Rice krispies treat, i couldnt think more than baking a cake. My today's post is a very easy cake as well. I opted for bundt cake pan, but still you can bake this buttery cake simply as pound cake with a loaf pan as well. You can bake this cake as a marble cake but i still bake as simple tri colour cake just by dropping the coloured cake batter with no-colour cake batter one over one. A surprise cake to serve and enjoy along with your friends. A prefect cake to celebrate the 4th July day as this cake prefect to pack for your picnic or attending a barbecue. Simple to bake, this cake is definitely a stylish one to place as a center piece in your dinner table on the National day.

Mini Dulce de Leche Cheesecake

Single serving cheesecake are always welcome if you are planning for a get together, And my today's post is definitely an incredible mini cheesecake baked with homemade dulce de leche. Dulce de leche, i just love the flavor of this incredible spread, and preparing dulce de leche at home is definitely a tricky job but yet an easiest one. With a can of condensed milk and a pressure cooker is just enough to prepare your own dose of dulce de leche. I have already made many versions of cheesecakes but dulce de leche cheesecake was in my to do list since a long. Finally i baked some Mini dulce de leche cheesecake as i picked I love you Love you Cheesecake as theme. Once i picked this theme, my first choice was Dulce de leche cheesecakes.
