Mathri is a popular North Indian fried snacks usually served with spicy pickle or along with a cup of masala tea or coffee.These mathris exists with different ingredients, from dry fenugreek leaves to sesame seeds, many flavourful, crunchy and delicious mathris do exists. These crackers are prepared easily with basic ingredients which is quite easily available in everyone's pantry. Usually fried, these crackers makes an excellent evening snacks, a crowd pleaser or just as an appetizier depending upon how they are served. You can simply serve this mathris with spicy chutneys,flavoured cream cheese or simply with your favourite drink.

Nankhatai/Wheat Nan Khatai/Indian Nankattai
Nankhatai is butter Indian shortbread cookies have their important place in most of the Diwali sweet list. These cute cookies makes an excellent buttery snacks as well, its quite easy to make and obviously super dangerously addictive. So many versions exists, some goes for all purpose flour, while other makes with a combination of gram flour and all purpose flour and some makes these cookies with wheat flour. The word Nankhatai is from Persian word Nan meaning bread and Khatai from an Afghan word meaning biscuit.Traditional Nankhatai was made with gram flour and maida, the most important flour mixture which is now can be replaced with wheat flour, some add semolina to make this cookies aka biscuits more crunchy.

Eggless Oatmeal Nutella Mug Cake
While am writing the word 'Nutella' itself my mouth is watering, love this spread, though its not recommandable to have this spread often. I bought them rarely that too when i plan to make some crepes at home. Kids just love this spread with crepes, however having this spread once a while will definitely makes you happy. I love mug cakes, they are really very easy to do as these mug cakes goes for microwave cooking. Just with one or two minutes depending upon your microwave oven power you can dish out mug cakes very much quickly. Whenever we feel like having some quick desserts especially a single serving cakes i'll definitely go for mug cakes.

Vegan Banana Oats Bars with Chocolate Chips
I cant imagine my pantry without wholegrains, i will always have rolled oats, millets and brown rice in my pantry. If you are my follower, you may know very well that i love to bake and cook with oats very much. Oats, this incredible wholegrain is very much rich in fibre are already known to help remove cholesterol from the digestive system that would otherwise end up in the bloodstream.A steaming bowl of fresh cooked oatmeal is the perfect way to start off your day, especially if you are trying to prevent or are currently dealing with heart disease or diabetes. Oatmeal’s low glycemic index is beneficial when it comes to reducing the risk of diabetes. This helps the stomach empty its contents slowly, which affects blood sugar levels and has a positive effect on our insulin sensitivity. Obviously Oats have loads of nutritional benefits and dont forget to add them in your menu quite often.

Scones, this tiny cakes or single serving quick breads are just prefect to start a day with a cup of milk. Cheesy Lunch Muffins
Dunno why suddenly my tastebuds are craving for savouries now and i dont feel like making sweets now. Obviously when i have to suggest bakes to Home Baker's Challenge, a monthly baking event,i couldnt stop myself picking few savoury muffins for this month's challenge. After numerous sweet bakes, this month's challenge goes for savoury muffins. I suggested couple of muffins to members, eventhough each muffins goes for different interesting ingredients, i sticked with this super cheesy lunch muffins. This muffins is loaded with vegetables and cheese as well. Quite an easy muffins to bake for a lunch if dont feel like making your lunch. Am sure this lunch muffins is very much enough to satisfy everyone's hungry tummy.

Baked Chocolate Pudding/Baked Brownie Pudding
After a vegan Wacky cake, my culinary experience with this week's theme of blogging marathon goes again with a ooey gooey baked chocolate pudding.Since am running my third week of blogging marathon with desserts as theme i have been posting super delicious desserts from the link given by Srivalli where i picked three different desserts under three different categories. Yes this week's blogging marathon's posts are loaded with chocolates,but wat to do if you ask me to pick a dessert i'll definitely go with the chocolatey ones. I just get struck with chocolate based desserts, and am very much proud to say am a chocoholic person.Coming to today's dessert, its a baked version of chocolate pudding, chocolate pudding can be prepared either by baking or simply without baking either with gelatin or agar agar.I opted for the baked ones and this pudding came out just simply out of the world.

Sweet Potato Streusel Quick Bread
Do you know potato makes excellent replacer for eggs if you are planning to make eggless or vegan bakes. I have tried couple of vegan and eggless bakes with potato obviously sweet potato also makes some excellent bakes. Sweet potatoes are easily available in markets now and i love to grab some kgs of sweet potatoes to cook with, after some chips and a simple curry finally i finished some cooked sweet potatoes for making this quick bread.Since i picked Quick breads for this month's Home Baker's Challenge, a monthly baking event and i suggested some quick breads.

Malaysian Pineapple Tart/Resepi Tart Nenas
Malaysian pineapple tart, this dangerously addictive buttery tarts are in my to do list since a long. My to do list never comes to an end. Everytime, i'll check my to do list, i feel like making all together but imagine who will eat if i prepare all those pastries and breads.However i'll try to dish out atleast few whenever i have nothing to do.Still i dunno when am going to clear my to do list. Ok let me stop blabbering. Coming to today's baked beauties, these cute looking Malaysian pineapple tart are very easy to make at home. When i saw the recipe for the first time, i thought it may take half a day to get ready as we need to prepare the pineapple jam specially for making this tart. But trust me, if you have all the ingredients besides you, you can make this tiny tarts very much quickly than you can imagine. I prepared my pineapple jam with canned pineapple chunks,which was quite easier than making pineapple jam with fresh ones. No peeling,chopping,cleaning etc,so if you are planning to make this pineapple tart, better stick with the canned pineapple chunks.

Five-Strands Braided Challah Bread
Challah bread, i have already tried couple of challah breads but this bread is something i want to make often at home whenever i feel like baking something eggy rich bread.Challah bread, dont need any introduction, this bread can go for upto 12 strands, i have already prepared this 6 strands Braided Challah Bread,this 4 strands Braided challah bread but still i want to make this bread with 5 strands. Finally i baked this super golden crusted 5 strands Braided challah bread for this month's Home Baker's Challenge, a monthly baking event and this baking group is running successfully more than a year.For this month's challenge, we were bit busy with our personnal stuffs obviously i opted for a challenge which made our life easier. This month's challenge is to bake from the challenges already suggested by the hosts during the past months.

Chickpea Crackers with Sesame Seeds
Crackers, this biscuits are easy to bake with simple ingredients, actually crackers can be enjoyed just like that or else topped with cream cheese. Depending upon anyone's tastebuds, you can enjoy this incredible biscuits with many different dips as well. For this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies every month and this event is hosted by a guest host every month. This month am hosting this baking event and i picked crackers as this month's theme. I have picked couple of this biscuits and i tried my hands with Champa's Chickpea crackers. Actually her version was without seeds, but i couldnt resist myself to add black sesame seeds, flaxmeal and loved it to the core.

Vegetarian Pot Pie
Pot pie, this dish is prepared with vegetables or chicken/meat served with a pastry topping, while some pie goes just for a pot without no pastry.Pot pie is usually refers to a type of meat pie with flaky puff pastry crust.Its been ages i had pot pie, finally i prepared a vegetarian pot pie for this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies, the host of this month is Saraswathi of Sara's Kitchen, she suggested both pop overs and pot pies for this month's challenge.Initially i planned to prepare the sweet pot pie which goes for bananas and chocolates, but finally i dropped my plan and simply prepared this mixed vegetable pot pie for our dinner.

Eggless Poppyseeds Dinner Rolls
Eggless poppyseeds dinner rolls, this soft buttery rolls are our most favourite from the bakes, i have baked out during this week.My kids are still in summer vacation and keeping myself busy by making varieties of breads,buns and cakes just to feed them during our late morning breakfast, sometimes for our lazy summer sandwich and most probably for our evening snacks. Acutally i started playing with bread doughs and cake batters since the summer vacation started here, obviously my followers would have already noticed the varieties of bakes i have been baking recently.Since yeast god behaves smart with me,instead of getting store bought breads, am trying my hands in making varieties of breads at home itself.Seriously its not difficult to make breads at home, without any preseratives, bread developers, addictives etc etc the homemade bread are the best when compared to the store bought ones. If time permits, just try your hands in making bread at home.

Eggless Semolina & Coconut Basbousa/Arabian Basbousa/Arabic Coconut Semolina Cake
We are having a long weekend here, obviously i dont want to sit in front of my lappy today. But i couldnt stop myself to write a post today as i want to share my happiness with you all.Yes my article about my hometown and about Pondicherrian foods was published in today's Hindu. Few days back, Annie the journalist of The Hindu send me a mail asking whether i can write an article about my hometown, i dunno how she noticed me and my Pondicherry roots, watelse i need i told immediately yes and she send me couple of questions. Without any delay i replied her and today morning, i was surprised to know when few of my Fb friends from Chennai left private messages appreciating about the article. Then only i checked my inbox, Annie was kind enough to send me the link of the article. I was overwhelmed to see the article and the way Annie has written about me. I have to say a special thanks to her, feel so blessed, obviously she made my day. To celebrate this beautiful mention in a leading Indian newspaper, am posting a sweet today which i prepared few days back. This Arabic eggless semolina and coconut cake aka Coconut basbousa was in my to do list since ages, finally i prepared them at home.

Spinach Fatayer/Fatayer Sabanekh/Spinach Pastry Triangles
Spinach fatayer which is also known as Fatayer sabanekh is quite famous in Middle Eastern countries. This spinach pastry triangles are prefect finger food, they can be eaten as starters or snacks. Its really very easy to make this spinach pastry triangle and its completely guilt free. Yes these triangles are baked one's and they take hardly very less time to get ready. No cooking is needed, just make the dough and the filling is quite enough to prepare this excellent starter. Chopped spinach spiced with oil, pepper powder, salt and sumac with walnuts and chopped onions are needed for making the stuffing. Usual ingredients makes the dough, its like a child play actually.Actually my lil one enjoyed thoroughly doing this fatayer with me, he did everything by himself i just helped him by giving instructions how to fold and how to fill the rolled dough. See how easy these fatayers are.

Red Velvet Cupcakes
Red Velvet cake or cupcakes is a cake with either a dark red, bright red or red brown colour, its can be prepared as layer cake or simply as individual cupcakes topped with cream cheese icing. The red colour of this red velvet cake or cupcakes is often prepared by adding beetroot or red food colouring. For our this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies, the host of this month is Shazzy and she suggested Red Velvet cake,Red Velvet cheesecake and oreo stuffed red velvet crinkles along with vegan version. Obviously i picked red velvet cake and baked them as cupcakes instead of making a cake also i halved the quantities given in the original recipe. Trust me these cuties are dangerously addictive and we loved having with our cup of tea for our evening snacks while my kids enjoyed having these cuppies with their cup of milk. We couldnt resist licking the cream cheese frosting.

Mini Chocolate Cheesecake Cupcakes
Cheesecake, i tasted this high caloric cake for the first time when i landed Paris, before that i never heard about cheesecakes. My younger one just love cheesecakes and he can have it even everyday for his dessert, but obviously am limiting the consommation of this cheese cream stuffed cakes. For our this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies, the host of this month is Siri of The Brave Cook suggested 5 different baked goodies, one among her choice is cheesecake cupcakes with berries, since berries are showing their heads rarely in my farmer's market i opted chocolates for making these beauties.
This cheesecake goes for egg and for baking, its not like the no bake cheesecake which can be prepared very quickly too, if you want to make no bake cheesecake you can check my Mango Cheesecake With Agar agar. Eggless Neapolitan Cupcake
Neapolitan cake is always made by vanilla, chocolate and strawberry cake, yes this cake goes for three layers of cake with different flavour. Neapolitan cake goes for a long process since it goes for three layers of chocolate,vanilla and strawberry cakes, the best alternative for making this delicious cake is baking them as cupcakes. For our this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies, the host of this month is Siri of The Brave Cook. She suggested 5 different baked goodies, one among her choice is Neapolitan cake or neapolitan cupcakes. I immediately chosed cupcakes instead of cake as i dont want to spend more time in baking three layers of cakes.Sending Bake Fest#29 event by Vardhini,hosted by me.
This cupcakes are eggless, butterfree but not vegan which i simply prepared by preparing a cake batter which i divided into three equal portions. I used strawberry jam for strawberry flavoured batter, cocoa powder for chocolate batter and vanilla extract for the vanilla flavoured batter. These eggless cupcakes turned out extremely spongy,a prefect evening snacks to enjoy with your favourite drink. Blonde Brownies/Blondies
After three month complete rest,finally i turned up my oven for baking today. My today's bake goes for Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies every month.Sharanya of Just Not The Cake, the host of January month suggested an interesting theme and the theme for the month is 'American Food Holidays'.

January 16 - National Fig Newton day.
January 21 - National Granola Bar day.
January 22 - National Blonde brownie day .
January 23 - National Pie day .
January 29 - National Corn chip day
Quite interesting na!!
Coming to today's post, i chosed Blonde brownies suggested by Sharanya from 6 wonderful bakes she went for. Happy that i baked this fantastic brownies and everyone at home simply enjoyed these irresistible brownies, trust me they just vanished within few minutes. I just followed the original recipe suggested by Sharanya and didnt changed anything. If you want to make small batch of these blondies just divide the quantity of ingredients as half and just go on.Am sure you will regret if you prepare these blondies in small batches coz they are seriously very addictive and everyone at home will definitely bug you to make again.Thanks Sharanya, for pulling me to make these wonderful blondies.Its 4th sunday of the month and since i belong to a group of friends who blogs on sunday for the event Let's Brunch On Sundays am posting this fantastic blondies.

French Baguette/Mini French Baguette
Baguette is a French bread, which is quite famous all around the world and this bread is symbol of French cuisine and France as well.This bread is a long thin loaf commonly made from a basic bread dough.This baguette is prepared simply with direct addition of yeast and its not prepared with a pre frement or poolish or biga like other pre-frements bread.Baguettes are used for sandwiches, they are often sliced and served with different stuffing. Traditionally baguette are served for breakfast with bread and jam while the kids love with their favourite chocolate spread for their breakfast.
French peoples wont go back to their home without baguette after their work,this bread is one of their main food which they enjoy thoroughly with anything.Even am an ardent fan of this incredible bread and obviously i eagerly waiting to try this bread at home. Finally i got a chance to give a try at home and believe me they turned out extremely as much as prefect like the bakery bought ones. Instead of making a strandard baguette i went for the mini ones.If you want to make the standard baguettes, just go on. This mini French baguette, an another challenge i suggested to the members of Home Baker's Challenge, a monthly baking event where we bake varieties of bakes every month.
