Instant Vegetable Cornmeal Uthappam/Glutenfree Cornmeal Oothappam

Uthappam/Oothappam is a thick pancake which is usually prepared with leftover dosa batter, uthappams are almost like dosa but with toppings. Its one of the known South Indian dish after idlies and dosas. Uthappam is traditionally made with toppings such as tomatoes, onions,chillies,capsicum and coriander leaves and however other ingredients like chopped mixed vegetables, coconut are also used for making this dish. Often served with sambar or coconut chutney, uthappam can be prepared with different variations. Nowadays, many millets are used in making dosa batter,hence you can also dish out some millet based uthappams. However instant versions of uthappams do exists. And my today's recipe is one among those instant versions. One of the easiest dish which can be prepared easily with semolina/rava or else with cornmeal rava.

Instant cornmeal Uthappam,Vegetable cornmeal othappam

Am running this week's blogging marathon with Breakfast staple with different grain as theme. After two different breakfast dishes, here comes one of the easiest breakfast dish which i quickly whisked with cornmeal. Cornmeal works prefect for dishing out some delicious uthappams. With simple preparation and usual cooking process, one can finish their breakfast with less efforts. Though you can add varieties of vegetables for toppings, i opted for carrot, capsicum and tomatoes. How colourful its looks na. We had these thick pancakes with sambar for our breakfast. If you want a satisfying, quite filling breakfast, dont forget to give a try to this dish.

Instant Cornmeal Rava Uthappam

1cup Cornmeal
1/2cup Curd
1cup Mixed vegetables (grated carrot, chopped tomatoes, chopped capsicum)
Salt
Water as per need

Take the cornmeal in a bowl, add the curd, salt and mix well, keep aside for 15minutes.

Now add enough water to the prepared batter to turn the batter as pouring consistency.

Heat a non stick tawa or griddle on medium flame.

Vegetable Cornmeal Othappam

Apply oil, once the tawa is hot, pour a ladle of the batter and spread it as a circle.

Drizzle some oil and sprinkle enough vegetables on the top.

Give a press with a spatule and cook in medium flame with lid closed.

Once the batter gets cooked, flip the uthappam and cook well.

Remove from the pan and serve with chutney or sambar.

I loved this instant Uttapam recipe Priya. Firstly corn meal and the medley of veggies on top. Also, curd for the binding - Loved the recipe! Perfect breakfast when you are back from holiday and can forage some stuff from the refrigerator to cook.

I make vegetable uttapam with fresh grated sweet corn when they are in season. Your recipe with cornmeal can be made whole year round. Lovely share Priya !

Utthpam are my favourite and I always save some batter to make a couple for me :) Never tried with cornmeal though, did you use fine cornmeal or coarse?
